1-1/2 cups dried apricots
2 cups sweetened shredded coconut
2/3 cup sweetened condensed milk
Confectioners' sugar

Steps:

  • Place apricots in a food processor; cover and pulse until chopped. Transfer to a large bowl; add coconut and milk. Shape into 1-in. balls; roll in sugar. , Place on a baking sheet. Refrigerate until firm. Store in an airtight container in the freezer or refrigerator.

1-1/4 cups sweetened shredded coconut
1 cup dried apricots, finely chopped
2/3 cup chopped pecans
1/2 cup fat-free sweetened condensed milk
1/2 cup confectioners' sugar

Steps:

  • In a small bowl, combine coconut, apricots and pecans. Add condensed milk; mix well (mixture will be sticky)., Shape into 1-1/4-in. balls and roll in confectioners' sugar. Store in an airtight container in the refrigerator.

Number Of Ingredients 6

2 cups dried apricots
1 cup sweetened shredded coconut
1 tablespoon grated lemon zest
1 tablespoon grated orange zest
1/4 cup sugar, divided
1 to 2 teaspoons orange juice, optional

Steps:

  • In a food processor, combine the apricots, coconut, lemon zest and orange zest. Cover and process for 1-2 minutes or until blended. Sprinkle work surface with 1 tablespoon of sugar. Knead apricot mixture until smooth about 15-20 times. Add orange juice if necessary to moisten mixture. Shape into 1-in. balls and roll in remaining sugar. Store in an airtight container.

1 - 8 oz dried apricots, finely chopped
1 c sweetened flaked coconut
1/4 c sweetened condensed milk
finely grated coconut or finely chopped pecans, for rolling

Steps:

  • 1. In a food processor chop apricots and coconut until thoroughly combined. Add the 1/4 cup sweetened condensed milk; process until combined. Pour the mixture into a dish; refrigerate until firm (about 30-45 minutes). Place wax paper on a baking sheet; set aside. Place additional coconut or finely chopped pecans in a shallow bowl. Shape apricot mixture into balls (about 1-inch in diameter). Roll in coconut; place on wax paper. Refrigerate until firm. Store in an airtight container in the refrigerator. I double the recipe and have substituted dried cranberries for the apricots, also very good.
