Steps:
- In a saucepan over medium heat combine the shortening, milk and white sugar. Stirring constantly bring mixture to a boil and continue to boil and stir for 2 minutes. Remove from heat and add cocoa, coconut and oatmeal. Stir mixture well.
- Drop teaspoon sized drops onto a wax paper lined cookie sheet. Place cookies in the refrigerator to set then into an airtight container to store.

- Stir 2 cups water, milk, and oats together in a large saucepan; bring to a boil. Reduce heat to medium-low and cook oats at a simmer until softened and beginning to thicken, about 15 minutes.

- 1. For the oatmeal: in a medium saucepan, bring the water (or milk) and salt to a boil. Stir in oats. Cook about 1 minute, stirring occasionally.
- 2. Serve with brown sugar and/or fruit of your choice.
- 3. For the cocoa: In a saucepan, mix cocoa, sugar and salt; add water. Bring to boiling, stirring constantly. Boil 1 minute. Stir in milk; heat to boiling point (do NOT boil). Add vanilla; beat with rotary beater just before serving. Float two large marshmallows on top of each serving. Makes about 4 servings.
COCOA OATMEAL WITH DATES
Now that the word is out that chocolate is good for you (BUT only if not mixed with milk) why not have it for breakfast? This makes a nice change of pace from plain oatmeal. Karl did not think this was sweet enough, but when he sprinkled a little brown sugar over he was happy. Serve with ricemilk or soymilk to get the full advantage of those cocoa flavinoids.

- Finely chop the dates.
- Mix them with the oats, the cocoa and the salt in a 1.2 l microwaveble bowl.
- Stir in the water.
- Microwave on medium heat, 3 or 4 minutes at a time, stirring between each time.
- Towards the end of cooking, cook for only a minute or two at a time.
- When all the water has been absorbed and the oatmeal has a good consistency, it is done.
- Serve with soymilk or ricemilk, and a little brown sugar if desired.

- Preheat oven to 350. Lightly grease or line cookie sheets with parchment paper. Beat butter in medium bowl with electric mixer at medium speed until light and fluffy. Add sugar and brown sugar; beat until well blended. Add egg and vanilla; beat just until combined. Add flour, cocoa, and baking powder; beat at low speed just until blended. (Dough will be sticky.) Stir in oats, chocolate chips, and nuts.
- Shape tablespoonfuls of dough into 1 inch balls. Place 2 inches apart on prepared cookie sheets. Slightly flatten each ball with back of spoon. Bake 8 minutes or until set. Cool on cookie sheets 5 minutes. Remove to wire racks; cool completely.

- Preheat oven to 350. Grease, spray with baking spray or line 18 wells in a muffin tin. In a large bowl, whisk together the spices, baking powder, cocoa nibs, baking soda, flour and oatmeal. - 1. In a heavy saucepan stir together sugar and cocoa powder. Stir in milk. Add margarine or butter and corn syrup. Bring to boiling, stirring occasionally. Boil vigorously for 3 minutes. Stir peanut butter into mixture in saucepan till smooth. Then stir in rolled oats till well combined. Return mixture to boiling. Remove from heat. - In small bowl, pour boiling water over oats; let stand 15 minutes. Heat oven to 350. Grease and flour 13x9x2 inch baking pan. In large mixer bowl, cream butter, sugar, brown sugar, and eggs until light and fluffy. Blend in oat mixture. Combine flour, cocoa, baking powder, baking soda, and cinnamon; add to creamed mixture, mixing well.
- Stir in apple and nuts. Pour batter into prepared pan. Bake 30-35 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack; drizzle Vanilla Glaze over top in decorative design.
- For Vanilla Glaze: In small bowl, beat all ingredients with spoon or wire whisk until smooth.
