SOFT COCOA COOKIES



Soft Cocoa Cookies image

These soft cookies are almost like little cakes. I like to make them very small, but you can make them larger if you wish. Very good with chocolate icing on top. Note: This is one of the recipes I adopted in the Great 'Zaar Ophan Adoption of 2005. I hope you enjoy it.

Number Of Ingredients 9

1/2 cup butter or 1/2 cup margarine
1 cup brown sugar, packed
1/2 cup cocoa
1 large egg
2/3 cup milk
1/4 teaspoon salt
1 1/2 cups flour
3 teaspoons baking powder
1 teaspoon vanilla

Steps:

  • Cream butter and brown sugar;add egg.
  • Sift dry ingredients and add to butter/sugar mixture alternately with milk.
  • Add vanilla.
  • Drop by spoonfuls on ungreased cookie sheet.
  • Bake 8-12 minutes at 400°F; do not overbake.
  • Ice with chocolate icing, if desired.

A soft chocolate cookie. Adapted from The Pioneer Lady's Country Christmas. You may get more than 3 dozen; it depends on how big you make them. I usually leave out the cinnamon. You may also use less salt.

5 cups all-purpose flour, sifted
1 tablespoon baking powder
1 teaspoon salt
1 cup unsalted butter, at room temperature
1 3/4 cups light brown sugar, packed
3 eggs, beaten
1 cup unsweetened cocoa powder
1/3 cup boiling water, approximately
1 cup milk
1 teaspoon cinnamon (optional)
5 tablespoons butter
1/4 cup milk, approximately
1 tablespoon boiling water, approximately
6 tablespoons unsweetened cocoa powder
1 teaspoon vanilla
1 cup powdered sugar

Steps:

  • Preheat oven to 375°F.
  • Sift dry ingredients together and set aside.
  • Cream butter and sugar together.
  • Add enough boiling water to cocoa to make a paste.
  • Beat into butter mixture.
  • Stir in milk, cinnamon and vanilla.
  • Add flour mixture and stir to make a stiff dough.
  • Roll out and cut out cookies.
  • Place 2" apart on greased cookie sheet.
  • Bake at 375° until lightly browned, about 10-15 minutes.
  • Cool completely.
  • For the glaze, combine butter and milk in top of double boiler and heat just until butter melts.
  • Add enough boiling water to cocoa to make a paste.
  • Stir cocoa mixture into butter mixture.
  • Add vanilla, then powdered sugar.
  • If glaze is too thick, add a little more milk.
  • Frost cookies when cool.

COOKIES
1/4 c shortening
1/4 c butter (softened)
1 c sugar
1 egg
3/4 c buttermilk or sour milk
1 tsp vanilla
1 3/4 c flour
1/2 tsp baking soda
1/2 tsp salt
1/2 c cocoa, unsweetened
BROWNED BUTTER GLAZE
1/4 c butter
1 c confectioners sugar, sifted
1/2 tsp vanilla
1-2 Tbsp hot water

Steps:

  • 1. FOR COOKIES: - Mix thoroughly shortening, butter, egg, and sugar. Stir in milk. Sift dry ingredients together, then stir into wet ingredients. - Chill dough at least one hour. Preheat oven to 400 degrees. Drop rounded teaspoonfuls about 2" apart on lightly greased (or parchment covered) cookie sheets. Bake until almost no imprint remains when lightly touched, about 8-10 minutes. Frost when cool.
  • 2. FOR GLAZE: - Melt butter until golden brown. Blend in sifted confectioners sugar and vanilla. Stir in hot water to make a good spreading consistency.

8 (1 ounce) envelopes instant hot cocoa mix
½ cup butter, softened
2 eggs
2 cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
1 cup confectioners' sugar
2 tablespoons milk
5 large marshmallows
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine hot cocoa mix, 1/2 cup butter, and eggs in a large bowl; beat with an electric mixer until creamy. Add flour, baking powder, and salt gradually; mix well. Drop teaspoonfuls of the dough onto ungreased baking sheets.
  • Bake in the preheated oven until edges are dry, about 8 minutes. Let cool on the baking sheets for 5 minutes. Transfer to wire racks to cool completely.
  • Mix confectioners' sugar and milk together in a small bowl.
  • Combine marshmallows and 1 tablespoon butter in a microwave-safe bowl. Microwave until marshmallows melt, about 30 seconds. Stir into confectioners' sugar mixture with a fork until smooth.
  • Drizzle marshmallow glaze over cooled cookies. Let stand until set, about 15 minutes.
