A recipe from the dining cars of the Chesapeake and Ohio Railroad from the 1950's "Use the jam or jelly of your choice!" ***Do not salt eggs before or during cooking. Salt can cause the eggs to become tough tough during cooking, so for best results salt eggs (if desired) only after cooking.

Number Of Ingredients 4

3 eggs
1 tablespoon milk
2 tablespoons jelly or 2 tablespoons jam
butter

Steps:

  • Mix eggs& milk with a fork until blended.
  • In a non-stick omelette pan melt 1 tablespoon butter over medium-high heat, when butter stops foaming pour in eggs, swirling around pan to distribute evenly.
  • Cook, lifting sides of omelette to let uncooked egg flow underneath, until almost set (about 1 minute), spread jelly or jam of choice over half of omelet.
  • Fold plain side of omelette over jelly and cook for an additional 20 seconds.
  • Serve at once.
  • Salt& pepper to taste.

3 eggs, beaten
1 tsp sunflower oil
1 tsp butter

Steps:

  • Season the beaten eggs well with salt and pepper. Heat the oil and butter in a non-stick frying pan over a medium-low heat until the butter has melted and is foaming.
  • Pour the eggs into the pan, tilt the pan ever so slightly from one side to another to allow the eggs to swirl and cover the surface of the pan completely. Let the mixture cook for about 20 seconds then scrape a line through the middle with a spatula.
  • Tilt the pan again to allow it to fill back up with the runny egg. Repeat once or twice more until the egg has just set.
  • At this point you can fill the omelette with whatever you like - some grated cheese, sliced ham, fresh herbs, sautéed mushrooms or smoked salmon all work well. Scatter the filling over the top of the omelette and fold gently in half with the spatula. Slide onto a plate to serve.

1 slice bacon
3 eggs
¼ cup milk
2 teaspoons vegetable oil
½ large tomato, diced
2 thin slices tomato, halved
5 ounces thinly sliced deli turkey
¼ cup shredded Monterey Jack cheese
¼ cup prepared hollandaise sauce
1 pinch dried parsley

Steps:

  • Place bacon into a skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon on a paper towel-lined plate, allow to cool, and crumble the bacon.
  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Whisk eggs and milk in a bowl until smooth.
  • Heat vegetable oil in an omelet pan or skillet over medium heat and pour in egg mixture. Swirl the pan to coat the bottom of the skillet evenly with the eggs. Cook until the omelet is barely set but the edges are not hard, 1 to 2 minutes.
  • Gently flip the omelet over and cook the other side, about 1 more minute.
  • Place omelet onto a broiler-safe baking sheet; top the omelet with crumbled bacon, diced tomato, deli turkey, and Monterey Jack cheese.

3 large eggs
1 tablespoon butter
¼ cup diced smoked ham
2 tablespoons diced onion
2 tablespoons diced green bell pepper
salt and freshly ground black pepper to taste
⅓ cup shredded Cheddar cheese
1 pinch cayenne pepper

Steps:

  • Beat eggs until just combined; do not over-beat.
  • Melt butter in a skillet over high heat. Add ham, onion, and bell pepper. Sprinkle in a nice pinch of salt and a touch of pepper. Cook and stir over medium-high heat until onions start to soften and ham begins to caramelize, about 5 minutes.
  • Reduce heat to medium-low and pour in the eggs. Mix briefly with a spatula while shaking the pan to ensure ingredients are evenly distributed. Quickly run the spatula along the edges of the omelet.
