CLASSIC SUGAR COOKIES

Classic Sugar Cookies image

As you might expect from Betty Crocker, these are the classic version of a sugar cookie-the kind your grandma or even great-grandma would recognize. These cookies are the originals that provided a sweet, universally lovable starting point for generations of bakers to riff on, and we stand by them just as they are. With a tender, short texture that comes from a good buttery base, they break with just the right balance of bend and snap. And the taste? When we recently baked up a few batches for pre-Christmas testing, person after person in the Test Kitchens said, "Now THAT is a sugar cookie." While flavor and texture are arguably the key criteria on which cookies should be judged, when it comes to sugar cookies, there's another important factor: how easy they are to decorate. It's crucial that sugar cookie dough can be easily turned into cookies that are equal parts decorative and delicious. During our most recent testing of this recipe, we also noticed that there were no instructions for a glaze in this recipe. Not wanting to leave you-or your cookies-high and dry, we tested a few glazes. The one we landed on is simple and made with common pantry staples, but the magic is in the ratio of ingredients-we ensured that it results in a glaze that's easily tintable, covers smoothly and dries firmly so that you can stack the finished cookies without fear of smudging them. However you chose to decorate them, dress these classic sugar cookies up in holiday style and they'll be the star of every Christmas gathering.

ROLL OUT CLASSIC BUTTER - SUGAR COOKIES (CHRISTMAS OR HOLIDAYS)

Roll out Classic Butter - Sugar Cookies (Christmas or Holidays) image

I am so surprised that this recipe hasn't been posted yet! I've seen this recipe in so many books that it's a classic. This is easiest when made with a stand mixer. The recipe doubles nicely, in fact I rarely make a single batch. Make sure to use either parchment paper or better yet a Silpat or other silicone baking mat. You can roll them out the traditional way without the parchment but the method I use is much less mess and results in more tender cookies because no additional flour is added that could toughen them. There is no need to wash the mats between batches or change the parchment until you are done. If you own a Dobord this is the recipe to use it with. These are great glazed or not, decorated or not. If you are making 3D cookies or any shape that you don't want to spread too much you can leave out the baking powder. The yield is approximate as it really depends on the size of the cookies.

Time 2h20m

Yield 3 dozen

Number Of Ingredients 11

1 cup unsalted butter
1 cup granulated sugar
1 large egg
1 teaspoon baking powder
1 teaspoon vanilla extract
3 cups all-purpose flour
1 lb confectioners' sugar
1/2 cup milk
1/2 cup light corn syrup
1 teaspoon clear extract (your choice -I usually use clear vanilla or lemon)
gel food coloring or paste food coloring

Steps:

  • Preheat oven to 350°F.
  • Line some cookie sheets with either silicone baking mats or parchment paper.
  • In a large bowl, cream the butter and sugar with a mixer paddle attachment for two minutes. Stop and scrape the bowl.
  • Cream the mixture for an additional minute.
  • Beat in the egg and vanilla extract. Beat until well combined.
  • Sift together baking powder and flour. Add the flour mixture 1 cup at a time to the creamed butter and sugar mixture. Mix thoroughly after each addition. Blend in the last cup of flour by hand. The dough will be stiff.
  • Divide the dough into two balls. Wrap with plastic wrap and refrigerate for at least one hour.
  • Roll out one ball of dough between two sheets of parchment paper to about 1/4 inch thick. Remove the top sheet of parchment paper and run a floured metal spatula under the dough to loosen it a bit.
  • Cut cookies with cookie cutters of your choice. Dip them in flour before each use.
  • Carefully place the cut out cookies onto prepared cookie sheets.
  • If you own a Dobord adjust to 1/4 inch. Line Dobord bottom plate with parchment paper. Cut another sheet of parchment paper and roll out dough between that and the lined bottom. Cut out cookies with cookie cutters dipped in flour before each use.
  • Bake cookies for 8 to 10 minutes or until they just start to brown. Let the cookies rest on the cookie sheet for 5 to 10 minutes before removing them to a cooling rack. Cool completely before glazing. Repeat process with second ball of dough.
  • For Glaze (if using): In a mixing bowl thoroughly mix the sugar and the milk. The mixture should be very soft and have a heavy cream texture before you add the corn syrup. Add the corn syrup and mix just until combined. Mix in the extract and food coloring if you are planning on using only one color. If using many colors, divide up the glaze in to as many bowls as you need. Color each one using gel or paste food coloring (mix in a small bit at a time using a toothpick until you get the color you want). Use a small pastry brush to glaze the cookies. Paint the entire tops of the cookies with a thin layer of glaze and place back on the cooling racks to dry. Depending on temperature and humidity it will take between 6 and 12 hours for the glaze to dry completely.

CLASSIC OLD-FASHIONED SUGAR COOKIES

Classic Old-Fashioned Sugar Cookies image

Handed down from my great-grandmother Ferdig, this classic sugar cookie recipe is rich in flavor and can be cut thick for softer cookies or rolled paper-thin for crispy cookies. They freeze very well and I've never found a recipe I like better ... but then I am a little biased. Prep time does not include time to chill cookie dough.

Provided by Park Rangerette

Categories     Dessert

Time 18m

Yield 2 dozen, 6 serving(s)

Number Of Ingredients 7

1 teaspoon baking soda
2 teaspoons cream of tartar
3 cups flour
1 cup butter, softened at room temperature
1 cup sugar
2 eggs
2 teaspoons vanilla

Steps:

  • Combine baking soda, cream of tartar and flour mixing well. With your hands, knead in softened butter.
  • In a small bowl, beat eggs and mix well with sugar and vanilla.
  • Pour egg mixture into flour mixture and again using your hands, mix this really well.
  • Chill dough. It will be quite hard when it is completely chilled. Using a table knife, cut off chunks to roll out on a well-flour surface to desired thickness - thin cookies will get crispy when baked, thicker cookies will puff and stay soft. Cut into desired shapes.
  • Bake in a 350 degree oven until the edges begin to brown; be careful not to overcook if you want them to stay soft after cooling!
  • After completely cooled, decorate the cookies. These will freeze really well!

Using a 3-inch circular cookie cutter, cut cookies out of dough and place on ungreased baking sheets. Roll up dough scraps and add back to dough ball. Pull off another 1/3 of dough and repeat process until all dough is used - recipe will make approximately 45 cookies.
  • Sprinkle cookies with colored sugar and bake until edges just start to turn golden, about 10 to 12 minutes. Remove cookies to wire racks and cool completely. Yields 1 cookie per serving.

CLASSIC SUGAR COOKIES

Classic Sugar Cookies image

There's a special day during the holiday season when we close down the studio, turn on the music, and make dozens of holiday cookies. We used to make these with our daughters, put them in cellophane bags and deliver them to the people we care about. The recipe makes very delicate cookies you can decorate simply and elegantly (as we like to do). People will look forward to them all year long.

Special Equipment:
cookie cutters (if making roll-and-cut cookies)

Steps:

  • In a medium bowl, whisk flour and salt together. Place butter and sugar in the bowl of a stand mixer and beat on high speed until well combined, about 3 minutes. Add egg and vanilla and beat until just combined. Reduce speed to low and gradually add the flour mixture; mix until just combined.
  • For roll-and-cut cookies:
  • Form dough into two equal-sized balls and flatten into discs. Wrap both in plastic and chill at least 1 hour.
  • Position oven racks in the upper and lower thirds of the oven and preheat to 350°F. Prepare a well-floured surface and a well-floured rolling pin. Working with one disc at a time, roll dough to 1/4 inch thick. Cut out as many cookies as possible with cutters (if dough becomes too soft, return to refrigerator and chill until firm). Arrange cookies 1 inch apart on 2 ungreased baking sheets and chill 15 minutes. Gather scraps, form into a small disc, and chill until firm.
  • Bake cookies until golden brown at edges (rotating baking sheets and switching position on racks halfway through), 15 to 20 minutes. Transfer to cooling racks to cool completely.
  • Roll out the second disc of dough and scraps (reroll scraps only once) and bake on cooled baking sheets. Transfer to racks to cool completely. Decorate, if desired.
  • For slice-and-bake cookies:
  • Halve dough and form into two logs, 1 1/2 inches in diameter. Wrap logs in plastic and roll to form a more uniform round shape. Chill at least 2 hours.
  • Position oven racks in the upper and lower thirds of the oven and preheat to 350°F. Slice cookies into 1/4-inch-thick rounds and arrange 1 inch apart on ungreased baking sheets. Bake cookies until golden brown at edges (rotating baking sheets and switching position on racks halfway through), 15 to 20 minutes. Transfer to cooling racks to cool completely. Decorate, if desired.

CLASSIC SUGAR COOKIES

Classic Sugar Cookies image

These are the familiar cookies, with crispy edges and a slightly soft middle. Superfine sugar gives them their crunchiness. The small amount of baking powder ensures that they puff just a little without spreading too much and losing their shape.

Time 3h55m

Yield about 30 cookies

Number Of Ingredients 12

2 1/2 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon fine salt
3/4 cup superfine sugar
1 1/2 sticks (3/4 cup) unsalted butter, cut into small pieces, at room temperature
1 large egg, lightly beaten
1 teaspoon pure vanilla extract
4 cups confectioners' sugar
1/4 cup meringue powder
Food coloring, optional
Decorating sugar, for topping, optional
Sprinkles, for topping, optional

Steps:

  • For the cookies: Whisk together the flour, baking powder and salt in a small bowl.
  • Beat the superfine sugar and butter with an electric mixer on medium speed in a large bowl until light and fluffy, about 5 minutes; beat in the egg, then the vanilla. Add the flour mixture and mix on medium-low speed until completely incorporated. Divide the dough in half, pat into 2 discs about 1/4 inch thick, wrap in plastic wrap and refrigerate until firm, about 1 hour.
  • Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Let the dough sit at room temperature for a few minutes to make rolling easier. Roll out 1 disc of dough at a time between 2 pieces of parchment paper until 1/8 inch thick. Cut out shapes with cookie cutters and arrange about 2 inches apart on the prepared baking sheets.
  • Bake until the cookies are golden brown on the bottom, 10 to 12 minutes. Let the cookies cool on the baking sheets until firm enough to transfer to a wire rack; let cool completely.
  • Gently gather any scraps of dough into a ball and press into a disc; wrap in plastic wrap and refrigerate the disc until firm enough to roll, about 1 hour. Cut out as many cookies as possible and bake.
  • For the royal icing: Beat the confectioners' sugar, meringue powder and 1/3 cup water with an electric mixer on medium-high speed in a large bowl until stiff peaks form. Beat in the food coloring if using. (The icing can be stored in an airtight container at room temperature for up to 2 days.)
  • Decorate the cookies with the icing; top with decorating sugar and sprinkles if using.
