When I make this recipe I put lots and lots of Parmesan cheese in it and I do not put it under the broiler. I even make it the night before serving. Excellent. This is from a wonderful restaurant in Fullerton, California who gives out the recipe on postcards. Everyone asks for the recipe when I bring it to dinners.

1 lb frozen kernel corn
12 ounces whipping cream
1 1/2 tablespoons melted butter
1 1/2 tablespoons flour
1/2 teaspoon salt
2 tablespoons sugar
1 pinch white pepper
3 tablespoons parmesan cheese

Steps:

  • Combine corn, cream, salt, sugar and white pepper in a pot and bring to a boil.
  • Simmer 5 minutes.
  • Make a roux from butter and flour, add to corn, mix well and remove from heat.
  • Transfer corn mixture to casserole.
  • Sprinkle with Parmesan cheese and brown under broiler.

4 cups frozen corn kernels
3 cups whipping cream
salt
1 pinch white pepper
3 tablespoons sugar
4 tablespoons melted butter
4 tablespoons flour
1/3-1/2 cup grated parmesan cheese

Steps:

  • Combine the corn, cream, salt, sugar and white pepper; bring to a boil.
  • Boil for 5 minutes.
  • In a saucepan melt butter.
  • Add in flour and whisk for 1 minute.
  • Add in the corn mixture; mix well to combine.
  • Set oven to broil.
  • Place the corn in a casserole dish and sprinkle with grated Parmesan cheese.
  • Broil under heat until browned.

8 ears corn, husks and silk removed
4 tablespoons unsalted butter
1 onion, finely chopped (1 cup)
1 1/2 cups heavy cream
1 teaspoon sugar
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground pepper

Steps:

  • Remove kernels: Stand a cob of corn on a kitchen-towel-lined baking sheet. With a sharp knife, slice downward to remove kernels. Repeat with remaining ears. With the edge of a soup spoon, scrape downward to remove pulp.
  • In a large skillet, melt butter over medium heat. Add onion and cook, stirring frequently, until softened, 2 to 3 minutes. Add corn kernels, pulp, and 1 cup water. Bring to a boil. Reduce to a simmer; cover, and cook, stirring occasionally until corn is very tender, 20 to 25 minutes.
  • Add cream and sugar; simmer, uncovered, until cream has thickened, 4 to 6 minutes. Season with salt and pepper. Serve.

2-1/2 cups crushed butter-flavored crackers
1/2 cup butter, melted
1/2 cup grated Parmesan cheese
1 can (28 ounces) crushed tomatoes
1 can (15-1/4 ounces) whole kernel corn, drained
2 cups shredded sharp cheddar cheese, divided
1 medium green pepper, chopped
4 green onions, chopped
6 bacon strips, cooked and crumbled
2 tablespoons sugar
1 teaspoon garlic salt
1 teaspoon pepper
1 cup heavy whipping cream

Steps:

  • In a small bowl, mix crushed crackers and butter until blended; press half of the mixture onto the bottom of a greased 13x9-in. baking dish. Stir Parmesan cheese into remaining cracker mixture; set aside., In a large bowl, mix the tomatoes, corn, 1 cup cheddar cheese, green pepper, green onions, bacon, sugar, garlic salt and pepper; carefully spoon over crust. Sprinkle with remaining cheddar cheese; drizzle with cream. Top with reserved cracker mixture., Bake, uncovered, at 350° for 30 minutes, then broil on high for 5 minutes until top is bubbly and golden brown.
