2 lbs cabbage, chopped
1 large bell pepper, chopped
1 onion, chopped
2 carrots, sliced
3 stalks celery, chopped
1 large cucumber, chopped
1/2 cup sugar
1/2 cup vinegar
1/2 cup salad oil
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Mis together oil, vinegar, sugar, salt and pepper. Set aside.
  • Mix together vegetables.
  • Pour dressing over vegetables and mix.
  • Store in refrigerator overnight.
  • Keeps 1 week.

Also often referred to as "Health Salad", Claremont salad is a blend of sliced veggies, soaked in a vinaigrette dressing. It is perfect as a side dish but is good enough to be eaten for a meal.

Number Of Ingredients 12

1 head of cabbage, sliced thinly
1 large cucumber, sliced thinly
1 green pepper, sliced thinly
2 large carrots, sliced thinly
4 stalks of celery, sliced thinly
1 vidalia onion, sliced thinly
2 cups white or apple cider vinegar
1/2 cup olive oil
3/4 cup granulated sugar
3 cloves garlic, pureed
1/4 cup kosher salt
1 tsp black pepper

Steps:

  • Prepare a large container with a lid.
  • Quarter the cabbage and remove the core. Slice cabbage into thin strips. Place into the container.
  • Slice the onion, green pepper, carrots and celery into thin strips. Add into the container.
  • Peel the cucumber. Slice in half, lengthwise and chop into half circles. Add into the container.
  • In a medium bowl, mince the garlic, add a bit of salt and mash until it's a puree.
  • Add vinegar, oil, sugar, salt and pepper and whisk until combined.
  • Pour dressing over the vegetables, stir and cover. Refrigerate for at least 24 hours, stirring a few times throughout the day.

1 medium head cabbage, shredded
2 cucumbers, thinly sliced
3 carrots, thinly sliced
1 sweet onion, Vidalia or Bermuda, thinly sliced
3/4 cup distilled white vinegar
3/4 cup white sugar
1/2 cup vegetable oil
4 tablespoons water
3 teaspoons salt

Steps:

  • Combine the cabbage, cucumbers, carrots and onion in a large bowl.
  • In a small bowl, whisk together the vinegar, sugar, oil, water and salt. Pour over the cabbage mixture, toss to coat and refrigerate for at least 12 hours. Drain excess liquid before serving.

There was a diner in Verona New Jersey that had this salad. I finally found the recipe & wanted to pass it along to others. I am always looking for new salad dishes.

2 Tbsp sugar
3 Tbsp vinegar
2 Tbsp vegetable oil
1 Tbsp water
1 tsp salt
1 cucumber, sliced
1 carrot, sliced
1 green pepper, sliced
1 bermuda onion, sliced
3/4 head of cabbage, shredded

Steps:

  • 1. Shake the sugar, vinegar, oil, water & salt together in large jar.
  • 2. Pour mixture over the vegetables. Leave at room temperature for about 2 hours.
  • 3. Put in refrigerator overnight.

Number Of Ingredients 11

3 pounds cabbage, shredded. You can use white/green or red (The shredding can be done in a food processor or by hand.)
2 carrots, sliced into disks about 1/4-inch thick
2 green peppers, cut into bite-size pieces
2 cucumbers, peeled and sliced
2 large vidalia onions, sliced (If vidalia onions are not available, use regular ones.)
4 teaspoons sugar dissolved in 1/4 cup warm water (Can substitute 4 packages of sweet and low.
Incidentally, it's just as tasty with the sweet and low.)
3/4 cup of white vinegar
1/2 cup of canola oil
About 1-1/2 teaspoons salt, garlic powder, celery salt, and pepper to taste
Marinate the above ingredients in the refrigerator. This salad can last for many weeks in the refrigerator

Steps:

  • The preparation takes a while as you're first cleaning and then cutting the vegetables. If you have a food processor, it cuts the time considerably to prepare this delicious salad.
