LOBSTER TAILS WITH CLARIFIED BUTTER



Lobster Tails with Clarified Butter image

4 (each 1/2 to 3/4-pound) lobster tails, thawed if frozen
1/4 cup Clarified Lemon Butter, plus 1 cup, recipe follows
Special Equipment: 4 metal skewers or 4 wooden skewers soaked in water for 30 minutes
3 sticks (1 1/2 cups) unsalted butter, cut into 1/2-inch pieces
3 lemons, zested

Steps:

  • Light the coals in a fire pit 1 hour before cooking or preheat a gas or charcoal grill.
  • Using kitchen shears or a sharp knife, cut through the top shell lengthwise. Cut a slit through the meat lengthwise taking care not to cut through the bottom shell. Gently pull the shells apart. Thread a skewer, starting at the underside base of the tail, along the inside of the bottom shell. Brush the meat with 1/4 cup of the clarified butter. Wrap the lobster tails in heavy-duty aluminum foil. Bake for 12 to 15 minutes or until the lobster meat is opaque.
  • Place the remaining clarified butter in a butter warmer or dipping bowl. Remove the meat from the lobster shells and dip in the Clarified Butter.
  • In a small, heavy bottomed saucepan, heat the butter over medium-low heat. Pour the mixture into a 2-cup glass measuring jug. Let the melted butter stand for 5 minutes. Using a spoon, remove the foam from the top of the butter. Place the lemon zest in small bowl. Pour the clarified butter over the lemon zest and discard the milk solids left in the bottom of the jug.
  • Yield: 1 1/4 cups

Steps:

  • Place the butter in a 2-quart saucepan and set over medium heat. Once the butter has liquefied, decrease the heat to lowest setting then adjust to maintain a low boil. Cook for approximately 45 minutes or until the butter reaches 260 degrees F, is clear, and the foam on top is slightly browned. Strain the clarified butter through 4 layers of cheesecloth set into a hand strainer into a heatproof vessel. Cool completely before refrigerating in an airtight container for up to six months. Can be frozen for up to a year.

Basic Pierogi
Two 3-pound heads green cabbage (outer leaves removed)
8 ounces room-temperature cream cheese
4 tablespoons melted unsalted butter
Coarse salt and freshly ground pepper
2 sticks unsalted butter

Steps:

  • Make the cabbage filling:Quarter and core cabbage. Working in batches, steam cabbage until very tender, 20 to 30 minutes. Drain; let cool. Working in small batches, place steamed cabbage in a thin kitchen towel, and squeeze out as much liquid as possible. Grind cabbage with the fine blade of a meat grinder. Stir in cream cheese and butter. Season with salt and pepper. For each pierogi, use 1 tablespoon plus 2 teaspoons filling.

Continue to cook butter, stirring occasionally, until a thin crust begins to form on surface and milky white solids fall to bottom of pan, about 8 minutes. Continue to cook butter, watching constantly and stirring occasionally to prevent burning, until solids turn light brown and butter deepens to golden and becomes translucent and fragrant, 16 to 18 minutes.

LOBSTER:
2 whole lobster tails, 1 lb. each
1/4 cup butter, melted
1/8 tsp. garlic powder
1/2 tsp. old bay seasoning
a little salt to taste
paprika, lightly dust each
white pepper, lightly dust each
1 lemon cut into half slices or wedges
CLARIFIED BUTTER:
1 stick butter

Steps:

  • 1. Preheat the broiler. Place lobster tails on a baking sheet. With a sharp knife or kitchen shears, carefully cut top side of lobster shells lengthwise. Pull apart shells slightly, and season meat with equal amounts melted butter with garlic, old bay seasoning, paprika, salt, and white pepper. Place cookie sheet or pan on rack second-up from the bottom of your oven. Broil lobster tails until lightly browned and lobster meat is opaque, about 25-30 minutes. Serve with lemon wedges and clarified butter for dunking. Clarified butter: Cut butter into 8-10 pieces. In saucepan or small frying pan, melt butter slowly over low heat. The water in the butter will evaporate, and the milk solids will sink to the bottom of the pan. Froth will rise to the top. Skim froth from surface. Carefully ladle or pour off clear melted butter into another container, leaving the milk solids at the bottom of the saucepan. You can also strain the butter through a double layer of rinsed and squeezed cheesecloth. But I never have that on hand! For a nice presentation, open shell just enough to lift meat out carefully and gently lay lobster meat on top of shell. (All the way or leave very tail-end still attached.)

  • Place the butter in a small, deep saucepan over low heat. As the butter melts, three layers will develop: a bottom layer of milk solids; a middle layer of clear, yellow butter; and a top layer of milky foam. Allow butter to gently simmer for 10 minutes to completely separate the layers. Remove from heat, and let stand for 10 minutes, to allow the foam to solidify at bit. With a spoon, carefully skim off the foam that rises to the surface, and discard. Carefully pour the clear, yellow butter off the milk solids at the bottom of the saucepan, and into a glass jar. Discard the milk solids.

  • The oven needs to be on low heat.
  • Cut the butter into large chunks and put it into an oven proof dish.
