1/2 cup olive oil
1/4 cup white wine vinegar
2 tablespoons soy sauce
1 tablespoon lemon juice
1 tablespoon lime juice
2 garlic cloves, minced
1 tablespoon minced fresh gingerroot
2 tuna steak (8 ounces each)

Steps:

  • In a bowl, combine the first seven ingredients. Pour 1/2 cup marinade into a large resealable plastic bag; add tuna steaks. Seal bag and turn to coat; refrigerate for 2-4 hours. Cover and refrigerate remaining marinade., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill tuna, uncovered, or broil 4 in. from the heat for 5-7 minutes on each side for medium-rare or until slightly pink in the center. Serve with reserved marinade.

2 tsp cornflour
4 quick-cook turkey breast steaks, weighing about 300g/10oz total
1 tbsp sunflower oil
3 oranges , juice of 2 and one peeled and cut into segments
1 tsp grated fresh ginger
1 tsp clear honey
1 pink grapefruit , peeled and cut into segments
1 tbsp fresh snipped chives or chopped parsley
wild or long grain rice and steamed broccoli, to serve

Steps:

  • Sprinkle a teaspoon cornflour onto a plate, then press the turkey steaks into the cornflour to dust them lightly. Heat the oil in a large non-stick frying pan, until it is really hot. Add the turkey and fry for 3-4 minutes, turning once until golden on both sides - cook in batches if need be. Transfer to a plate.
  • Add the orange juice, ginger and honey to the pan. Gently bring to the boil. Mix the remaining cornflour with 1 tbsp cold water and stir into the sauce. Keep stirring on a gentle heat until thickened and syrupy, like a sweet and sour sauce. Season.
  • Return the turkey to the pan. Add the orange and grapefruit segments and heat through gently. Scatter over chives or parsley and serve straight away with rice and broccoli.

1 medium pink grapefruit
1/4 cup lemon juice
1/4 cup lime juice
2 tablespoons honey
1 tablespoon snipped fresh dill or 1 teaspoon dill weed
1 teaspoon crushed red pepper flakes
2 teaspoons minced fresh gingerroot
4 tuna steak or fillets (6 ounces each)

Steps:

  • Peel and section grapefruit over a bowl, reserving juice. Refrigerate half of the grapefruit sections. Add remaining grapefruit to the reserved grapefruit juice. Add the lemon juice, lime juice, honey, dill, red pepper flakes and ginger. Remove 1/4 cup for basting; cover and refrigerate. For the chutney:
1/2 grapefruit, thinly sliced, seeds removed
8 ounces kumquats, sliced, seeds removed
1 shallot, finely chopped
2/3 cup sugar
Pinch of kosher salt
1 tablespoon Champagne vinegar or white wine vinegar
For the steak and assembly:
2 tablespoons coriander seeds
2 tablespoons ground coffee
2 tablespoons kosher salt
4 teaspoons light brown sugar
4 teaspoons unsweetened cocoa powder
1 tablespoon freshly ground black pepper
Vegetable oil (for grilling)
2 hanger steaks, center membrane removed, each cut into 4 pieces

A spice mill or a mortar and pestle

Steps:

  • Make the chutney:
  • Bring grapefruit, kumquats, shallot, sugar, salt, and 1/4 cup water to a simmer in a small saucepan over medium-low heat, stirring occasionally and lowering heat if needed, until citrus is soft and liquid is syrupy, 45-60 minutes. Stir in vinegar and let cool. Cover and chill.
  • For the steak and assembly:
  • Toast coriander seeds in a small skillet over medium heat, tossing occasionally, until fragrant, about 2 minutes. Let cool, then finely grind in spice mill or mortar and pestle. Mix ground coriander, coffee, salt, brown sugar, cocoa powder, and pepper in a small bowl.
  • Prepare a grill for medium-high heat; lightly oil grate. Season steaks generously with rub (you'll have some left over). Grill steaks, turning occasionally, until lightly charred and cooked to desired doneness, 8-10 minutes for medium-rare. Transfer to a cutting board and let rest 10 minutes, then slice against the grain. Serve with citrus chutney.

  • Chutney can be made 1 week ahead. Keep chilled. Rub can be made 1 day ahead. Store airtight at room temperature.

  • Refrigerate for 2 hours. (Careful not to over-marinate the fish- the acidity will cook it if marinated too long!).
  • Cover and refrigerate remaining marinade.
  • Coat grill rack with nonstick cooking spray before starting grill. Grill drained tuna, uncovered, for 2-4 minutes per side. (We like our's pink/rare on the inside) If you prefer yours to be flaky, grill for 5-7 minutes per side.

1 medium lemon
1 medium lime
4 tablespoons honey
1-1/4 teaspoons salt, divided
4 beef flat iron steaks or top sirloin steaks (6 ounces each and 3/4 inch thick)
1/2 cup water
1 cup julienned peeled jicama
1 medium mango, peeled and cubed

Steps:

  • Cut orange, lemon and lime crosswise in half; squeeze juice from fruits. Stir in honey and salt. Pour 1/3 cup marinade into a bowl or shallow dish. Add steaks and turn to coat. Refrigerate at least 3 hours, turning once. Cover and refrigerate remaining marinade., Drain steaks, discarding marinade. Heat a large skillet over medium heat.   • Preparation Broil: 8 minutes, Prep: 10 minutes 1. Thaw fish, if frozen. Rinse fish; pat dry with paper towels. In a small bowl stir together lemon peel, lemon juice, pepper, and garlic. 2. Preheat broiler. Place fish on the greased unheated rack of a broiler pan. Brush with half of the lemon juice mixture. Broil 4 inches from the heat for 5 minutes. Using a wide spatula, carefully turn fish. Brush with the remaining lemon juice mixture. Broil for 3 to 7 minutes more or until fish flakes easily when tested with a fork. 3. Cut the fish into 2 portions. Sprinkle with green onion and serve with orange slices. Makes 2 servings.
