1/2 cup dry bread crumbs
3/4 teaspoon salt
1/2 cup orange juice
2 tablespoons reduced-sodium soy sauce
1 tablespoon butter, melted
1 tablespoon olive oil
1/2 teaspoon lemon juice
4 orange roughy fillets (6 ounces each)

Steps:

  • In a shallow bowl, combine bread crumbs and salt. In another shallow bowl, combine the orange juice, soy sauce, butter, oil and lemon juice. Dip the fillets into orange juice mixture, then coat with crumb mixture. , Place in a 13-in. x 9-in. baking dish coated with cooking spray. Bake, uncovered, at 450° for 15-18 minutes or until fish flakes easily with a fork.

2 lbs orange roughy
2 tablespoons butter
1 large onion, sliced
1/2 cup orange juice
1 tablespoon lemon juice
1 teaspoon garlic salt
1 1/2 teaspoons lemon pepper seasoning
1 tablespoon parsley flakes

Steps:

  • Preheat oven to 450 degrees.
  • Place fish in a 13 x 9 inch baking dish.
  • In a separate pan, cook onion in butter until tender.
  • Spread onion mixture on fish.
  • Pour orange and lemon juice over all.
  • Season with garlic salt, lemon pepper, and parsley.
  • Bake, uncovered, for 15 to 20 minutes or until fish flakes easily with a fork.
  • If the fish is crowded in the baking dish, you might want to cover it for a few minutes at the beginning of the baking.

1 1/2 lbs orange roughy, 1/2-inch to 3/4-inch thick
1 1/4 cups orange juice
1/2 cup water
1/3 cup dry white wine
6 teaspoons butter or 6 teaspoons margarine, melted
4 teaspoons fresh cilantro, chopped
salt and pepper

Steps:

  • Cut fish into 4-6 serving-size pieces.
  • Combine orange juice, water and wine in large skillet. Bring to boil.
  • Add fish pieces and return to a boil,then reduce heat to simmer.
  • Simmer 7 or 8 minutes or until fish flakes easily when tested with a fork. Transfer fish to warm serving platter.
  • Mix melted butter and cilantro. Drizzle over fish. Add salt and pepper to taste.
  • Garnish platter with orange, lime and lemon slices.

My mom gave me this recipe and it is very easy to prepare. The citrus sauce makes it a refreshing and flavorful dish. Buy 1/2 inch thick orange roughy filets.

1 pound orange roughy fillets
½ cup milk
¼ teaspoon salt
⅓ cup all-purpose flour
1 ½ tablespoons olive oil
1 tablespoon minced garlic
3 tablespoons fresh lime juice
2 tablespoons lemon juice
1 tablespoon orange juice
1 tablespoon chopped fresh parsley
2 tablespoons thinly sliced green onion
1 tablespoon butter

Steps:

  • Soak fish in milk 10 minutes. Remove, sprinkle with salt and dredge in flour.
  • Heat 2 tablespoons oil in a frying pan over medium-high heat. Cook fish until it is golden on one side, about 3 minutes. Cook second side until golden and cooked through, about 3 to 4 more minutes. Remove fish to a serving platter.
  • Wipe frying pan clean. Reduce heat to low, add remaining oil and cook garlic 30 seconds. Add lime juice, lemon juice, orange juice, parsley, and green onions. Add butter, swirl in skillet until just creamy. Pour sauce over fish and serve.

4 orange roughy fillets (each fillet should weight about 4 ounces)
1 tablespoon jamaican jerk spice, plus
1 teaspoon jamaican jerk spice
1 teaspoon olive oil
4 tablespoons orange marmalade
3 tablespoons water
2 tablespoons lemon juice
1/4 teaspoon cracked pepper
