BUTTERCREAM
Steps:
- In small saucepan, combine sugar with 1/3 cup water, and cream of tartar. Stir to wet sugar. Cover and bring to a simmer over medium heat. Simmer, covered, without stirring, for about 1 minute to dissolve sugar. Uncover and wash down the sides of the saucepan with a wet pastry brush. Cook until syrup registers 242 degrees (the upper end of the soft-ball stage) on a candy thermometer. Or cook until you can blow a bubble (resembling a soap bubble) by dipping a slotted spoon into the syrup, holding it up, and blowing gently but steadily through it.
- Meanwhile, in a heatproof, stovetop-safe bowl (a stainless steel electric mixer bowl is ideal, otherwise a stainless steel bowl suitable for using with a hand held electric mixer) beat eggs until pale and thick; set aside. Just before syrup reaches 242 degrees, begin beating eggs again on medium speed. When the syrup is ready, remove it from the heat and pour it in a thin steady stream over the eggs, beating constantly. To avoid splashing hot syrup on yourself or all around the sides of the bowl, pour it next to the beaters. Stop beating and place mixture on the stove over medium heat. Cook, stirring constantly with a whisk (to avoid scrambling the eggs) until mixture registers at least 160 degrees on insta-read thermometer, about 3-4 minutes. Remove from heat and continue beating with an electric mixer until mixture cools to room temperature.
- Divide butter into 1-tablespoon sized lumps. Add butter, a few pieces at a time, continuing to beat until mixture is smooth and spreadable.
ALMOND TUILES
Steps:
- Whisk the almond flour, salt and baking soda in a bowl. Beat the butter and sugar in a separate bowl with a mixer until light and fluffy. Beat in the egg and vanilla until smooth, then mix in the dry ingredients. Refrigerate the dough until firm, about 30 minutes.
- Preheat the oven to 350 degrees F. Line 2 baking sheets with silicone mats or parchment paper. Drop heaping teaspoonfuls of dough about 3 inches apart on the prepared sheets. Bake until golden and crisp, about 8 minutes.
- Let the cookies cool about 2 minutes on the baking sheets. One at a time, gently lift each cookie with an offset spatula. Immediately wrap it around the handle of a wooden spoon to curl. Once it sets, slide the cookie off the handle and let cool on a rack. Repeat with the remaining dough, allowing the baking sheets to cool between batches. (Don't make too many cookies at once; they need to be shaped while still warm.) Serve with sorbet.
TUILES
A tuile is a crisp, thin cookie that adds a bit of sweetness and crunch to servings of ice cream, sorbet, mousse and other creamy desserts. These plain tuiles are good, but tuiles are also commonly flavored with cocoa, orange, espresso and other flavors. Tuiles are pliable when just baked and still warm, so you can shape them into the traditional curved shape.

Steps:
- In an electric mixer fitted with the paddle attachment, beat the butter at medium speed until creamy, about 30 seconds. Add the confectioners' sugar and flour and mix until combined. Add the egg whites one at a time, beating after each addition just until well blended, about 1 minute in all. Refrigerate the batter for 30 minutes.
- Preheat the oven to 350 degrees F. Have a rolling pin at hand. Spray a baking sheet with nonstick cooking spray or line it with parchment paper.
- Spoon 2 teaspoons of the batter onto the baking sheet and with a small, offset metal spatula, spread it evenly into a 3-inch circle. Repeat to form more tuiles, baking only 6 to 8 at a time. Refrigerate the remaining batter while you bake the tuiles.
- Bake the tuiles for 4 to 6 minutes, until lightly browned around the edges. Remove from the oven and immediately shape the tuiles, lifting up each one with a metal spatula and draping it over the rolling pin so it curves, just until set. Repeat with the remaining batter. Store the tuiles in a cool dry place in an airtight container for up to 1 week.
PARMESAN TUILES
Steps:
- Place a 12-inch non-stick pan over medium-high heat. Sprinkle 1 tablespoon of the Parmesan on the bottom of the pan. When the cheese starts to bubble and turn golden brown remove melted cheese from pan. Place cheese disc on rolling pin and press down. Let cool 4 to 5 minutes.
LEMON PEEL TUILES
Steps:
- Put oven rack in middle position and preheat oven to 350°F. Line a large baking sheet with nonstick liner.
- Grind sugar and zest in a food processor, pulsing 4 or 5 times, until combined well, then transfer to a bowl. Add butter and vanilla and beat with an electric mixer at medium speed until pale and fluffy, 3 to 5 minutes. Reduce speed to low, then add egg whites and mix until just combined, about 30 seconds. Add flour and mix until just combined, about 30 seconds.
- Transfer batter to pastry bag and pipe 12 (3-inch-long) lines, about 1 inch apart, on baking sheet. (Be careful not to squeeze bag too hard - lines should only be 1/4 inch wide.)
- Bake tuiles until edges begin to brown, 7 to 9 minutes. Let tuiles stand on baking sheet 20 seconds (just long enough to allow them to firm up slightly), then transfer with offset spatula to rolling pin (stabilized on a cooling rack), draping them diagonally and wiping spatula clean before transferring next cookie. (If cookies become too crisp to drape, put them back in oven for a few seconds to soften.) Make more tuiles in same manner, using a cool baking sheet and wiping nonstick liner clean with paper towels between batches.
PECAN LACE SANDWICH COOKIES WITH ORANGE BUTTERCREAM

- For cookies:
- Position rack in center of oven and preheat to 350°F. Line 2 baking sheets with parchment paper. Stir butter, sugar, and corn syrup in heavy medium saucepan over low heat until melted and smooth. Bring to boil over medium-high heat, stirring constantly. Remove from heat. Stir in flour. Add nuts and vanilla; stir to combine.
- Drop dough by teaspoonfuls onto prepared baking sheets, spacing 2 inches apart. Bake cookies, 1 sheet at a time, until bubbling and lightly browned, about 11 minutes. Cool on sheets 10 minutes. Transfer to rack; cool completely.
- For filling:
- Whisk all ingredients in medium bowl until smooth. Spread 1 teaspoon filling onto bottom of 1 cookie. Top with second cookie, bottom side down, pressing lightly to adhere. Repeat with remaining cookies. (Can be made 2 days ahead. Store between sheets of waxed paper in airtight container at room temperature.)
