Steps:
- Melt butter in a large skillet over medium heat; add brown sugar and next 4 ingredients. Stir well.
- Add pecans, stirring well to coat. Remove from heat.
- Spread coated pecans on a lightly greased 15" x 10" x 1" jellyroll pan.
- Bake at 325° for 14 to 15 minutes, stirring every 5 minutes. Cool completely. Break nuts apart.

- Whip egg white until frothy.
- Add water, sugar and cinnamon.
- In a 13x9" cake pan, melt the margarine or butter.
- Pour pecans in egg mixture, stir well, then pour into pan.
- Bake at 250 for 1 to 1 1/2 hours, stirring every 15 minutes.

CINNAMON AND SUGAR PECANS

- Preheat oven to 300 degrees.
- Whisk the egg white in a cup. Pour the egg whites over the nuts, stirring until the nuts are coated with egg white.
- In a small bowl, stir the cinnamon, vanilla, sugar, and salt together. Add the cinnamon sugar mixture to the nuts, a little a time, while stirring.
- Spread the coated nuts on an ungreased baking sheet. Bake for 20 minutes without stirring. Use a spatula to remove the nuts from the hot baking sheet immediately. Allow to cool thoroughly before storing in tightly closed container. Store in a cool place.

I made these for my dad last Christnas because he loves pecans and they smelled amazing in the oven and were very addictive, everyone loved them.

- 1. Preheat oven to 225F. In a small bowl, mix together the sugar, cinnamon, and salt then set aside. In a medium-sized mixing bowl, whisk together the egg white and vanilla until foamy (about 2 minutes). Add the pecans and mix until they are coated evenly in batches, add the sugar mixture and evenly coat the pecans. Transfer to a parchment paper lined sheet in a single layer. Bake for 1 hour, stirring every 15 minutes and redistributing into a single layer.
- 2. Let cool completely (30-40 minutes). Store in an airtight container.

Fall time reminds me of Pecans, my favorite nut. Our family orginally came from a small town famous for their large harvest of Pecan. This is a great treat or appetizer for the fall season. You may want to make a double recipe as it goes really fast. Enjoy!

- 2. Mix egg white and pecans until nuts are completely coated
- 3. Mix well sugar and cinnamon and sprinkle over pecans
- 4. Stir until nuts are evenly coated wtih sugar/cinnamon mixture and then spread on ungreased baking sheet.
- 5. Bake for 30 minutes and then remove to a dish to cool and enjoy!
