These fritters are absolutely delicious! Plus, they are super easy to prepare.

Number Of Ingredients 12

1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 cup brown sugar
3 bananas (mashed)
2 eggs
2 tablespoons butter or margarine (melted)
2 teaspoons vanilla flavoring
1/4 cup milk
1 cup oil
Confectionery sugar

Steps:

  • Whisk together the dry ingredients in a bowl. (Flour, baking powder, cinnamon, sugar, and salt) Add eggs, butter, vanilla, milk and bananas and mix well with a spoon.
  • Heat the oil in a skillet. Drop mixture into hot oil (I use an ice cream scoop full for each fritter). Brown on both sides. Remove and drain on paper towels. Sprinkle with confectionery sugar.

½ cup milk
2 bananas, mashed
2 cups all-purpose flour
½ teaspoon salt
3 teaspoons baking powder
2 eggs, beaten
1 tablespoon margarine, melted
1 quart vegetable oil for frying
½ cup confectioners' sugar

Steps:

  • In a mixing bowl, combine the milk and bananas. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine.
  • Heat the oil in a large skillet to 365 degrees F (180 degrees C).
  • Carefully place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Dust the fritters with confectioners' sugar and serve while warm.

2 ripe bananas, peeled
1 cup pancake mix
½ teaspoon cinnamon
¾ cup milk
oil, for frying
powdered sugar, to serve

Steps:

  • In a mixing bowl, use a fork to smash the bananas.
  • Add in pancake mix, cinnamon and milk. Whisk together until combined.
  • Fry in oil. About 1 tablespoon per fritter.
  • Cook for about 2-3 minutes until they are golden brown and cooked through the middle.
  • Sprinkle powdered sugar.

I was craving apple fritters but wasn't able to get to the donut shop. So I looked around to find on hand ingredients to satisfy my craving. I didn't have apples, but I had some very nice ripe bananas. That's when I came up with these. You won't be disappointed!

2 ripe bananas
2 tablespoons milk
2 eggs
1 tablespoon margarine, melted
1 cup all-purpose flour
3 tablespoons white sugar
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon ground cinnamon
1 pinch ground nutmeg
1 quart oil for frying
1 cup confectioners' sugar for dusting

Steps:

  • In a large bowl, mash the bananas. Mix in milk, eggs and margarine until smooth. In a separate bowl, combine flour, sugar, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into banana mixture.
  • Heat oil in a deep fryer or heavy bottomed pan to 375 degrees F (190 degrees C). Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, 2 to 8 minutes. Drain on paper towels and dust with confectioners' sugar.

6 ripe bananas
2 eggs, beaten
3/4 cup all-purpose flour
3 tablespoons vegetable oil

Steps:

  • In a large bowl, mash the bananas and blend in the eggs. Stir in the flour. Heat the oil in a large skillet over medium-high heat until hot. Drop spoonfuls (2 to 3 inches in diameter) of the batter into the hot oil. Reduce the heat to medium. When bubbles begin to appear, turn and cook the other side until golden brown. Repeat the process until all the batter is used up, keeping the cooked fritters in a warm oven. Serve them with maple syrup or honey.

1 tablespoon butter, melted
1 beaten egg
1/2 cup beer
1/2 cup flour
salt, to taste
1 egg white, beaten stiff but not dry
fat (for frying)
4 bananas
cinnamon sugar
goslings black seal rum (optional) or a similar good quality rum, heated (optional)

Steps:

  • Heat fat (to about 360F).
  • In a bowl, blend butter, beten egg, beer, flour, and salt until smooth.
  • Fold in egg white. Cut bananas in 1 1/2-inch lengths, dip each in batter and fry in deep fat.
  • When light golden, remove and roll immediately in cinnamon sugar.
  • Serve hot, as they are, or with a dash of rum.
  • (Make cinnamon-sugar using 1 part cinnamon to 3 parts sugar.
