Easy Bisquick Oatmeal Cinnamon Raisin Muffins image

My husband thinks I should open a muffin shop Ha Ha, so I have been playing with different types of muffins. Today I felt like oatmeal raisin muffins.

1 egg
2 c bisquick
3/4 c quick cooking oats
1 Tbsp canola oil
1 tsp cinnamon
1 tsp vanilla extract
1 c raisins
1/3 c sugar
2/3 c milk

Steps:

  • 1. Pre heat oven 400 degrees, line a muffin pan with cupcake liners
  • 2. slightly beat the egg, add all the remaining ingredients, mix until the ingredients are wet, don't over mix.
  • 3. I use an ice cream scoop and scoop the mixture in the cupcake liners, I got 7 muffins out of this batter, depends on how big or small you want the muffins.
  • 4. Place in the oven and bake 18-20 mins, until golden brown. I will let you know how the family likes it when they get up, which will be soon when they smell these....mmmm

2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup white sugar
1 egg
1 cup milk
1/4 cup vegetable oil
1/2 teaspoon cinnamon
65 g raisins

Steps:

  • 1.Preheat oven to 400 degrees F (200 degrees C).
  • 2.Stir together the flour, baking powder, salt, cinnamon and sugar and raisins in a large bowl. Make a well in the center. In a small bowl or 2 cup measuring cup, beat egg with a fork. Stir in milk and oil. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy. Pour the batter into paper lined muffin pan cups.
  • 3. If you're making mini muffins, bake it for at least 12 minutes. If making large muffins, bake it for at least 20-25 minutes.

2 Tbsp cinnamon
4 Tbsp brown sugar
1/4 tsp nutmeg
2 1/2 c whole wheat flour
1/2 c sugar
1 Tbsp baking powder
1/2 tsp salt
1 c milk
1/2 c butter or margarine, melted
1 large egg
2 tsp vanilla extract
1 c raisins

Steps:

  • 1. Preheat oven to 400 degrees and grease 12-cup muffin pan
  • 2. In a large bowl, combine all dry ingredients except the raisins (brown sugar, cinnamon, nutmeg, flour, sugar, baking powder and salt)
  • 3. In another bowl, combine the melted butter with the milk, egg and vanilla until well mixed.
  • 4. Stir the wet ingredients into the dry ingredients until moist. Then fold in the raisins.
  • 5. Place the batter into the muffin pan. Bake for 10-12 minutes or until toothpick test comes out clean.*
  • 6. ***NOTE*** I do not own big muffin pans, like the ones that make those big muffins in resturaunts. Ergo, I guess I'm technically using "cupcake" pans. Real muffin pans I'm sure will take longer than 10 minutes to bake, and possibly you may not get a full 12, but I haven't been able to try that yet. Enjoy!

2/3 cup raisins

Steps:

  • Preheat oven to 350 and prepare muffin tins - grease or use paper lines or use silicone cups.
  • Beat eggs.
  • Mix in water, honey, oil, vanilla.
  • Mix in flax seeds, baking soda, baking powder, cinnamon.
  • Let stand 5 minutes.
  • Fold in raisins.

1 c butter, softened, 2- sticks
1 c brown sugar, firmly packed
1 c white sugar
6 large over ripened bananas, peeled and smashed into chunky bits
3 c self rising flour
2 tsp baking soda
1 1/2 Tbsp vietnamese cinnamon (or use regular cinnamon
1 c unsweetened applesauce
1 Tbsp banana flavor or extract
1 Tbsp vanilla bean paste or extract
1 c golden raisin, (plumped)
1 1/2 c chopped pecans, divided + 1 tablespoon flour
non stick cooking spray

Steps:

  • 1. Vietnamese cinnamon has a greater oil content, and very potent in flavor, if unavailable use regular. Fill muffin tins with muffin paper liners, then spray with nonstick cooking spray and set aside. PREHEAT OVEN TO 375 DEGREES F. These are some of the ingredients I used in this tasty recipe.
  • 2. Add softened butter to a large bowl, then beat with a hand or stand mixer until creamy. Gradually add in both sugars a little at a time, beating well after each addition has been added. Repeat until all has been added.
  • 3. Now add in eggs one at a time beating well after each is added. and mixture is creamy and smooth. Add raisins to a small microwaveable bowl, cover with water & a lid or saran wrap, microwave for 5 minutes, then remove and allow to sit and steep for about 5 minutes, then drain completely and set aside till needed.
  • 4. Add in Banana flavor and vanilla bean paste.Beat until it is incorporated into batter.
  • 5. Using a medium bowl add in the flour, cinnamon and baking soda, then stir until it is well blended. Now gradually add flour mixture to butter mixture, beating well after each addition has been added. Once about half of flour has been added, add in the applesauce and beat until mixed together.
  • 6. Now add 1 tablespoon of flour to the one cup of chopped pecans, tossing to coat pecans, this prevents them from sinking to the bottom of the muffins and nuts remain evenly distributed throughout each muffin. Reserving the remaining half cup to add on top of each muffin.
  • 7. Now remove beater and switch to a large spoon, add smashed bananas, plump raisins, and the one cup of floured chopped pecans. Then stir with spoon until completely mixed together.
  • 8. Now spoon batter into prepared muffin cups filling about 2/3 full. Top each muffin with extra chopped nuts if desired. Place in preheated 375 degree F. oven and bake for 18-20 minutes.
  • 9. Remove from oven, allow to cool about 5-10 minutes then place on a wire rack or platter and allow to cool completely.
  • 10. Serve plain with butter, at room temperature or as desired. Can you see the large chunks of Banana in the muffin, and how moist they are. THESE ARE THE BEST BANANA MUFFINS EVER, ESPECIALLY USING THE VIETNAMESE CINNAMON.
  • 11. This is what the Vietnamese Cinnamon looks like, I wish there was smell a vision, so you could smell the aroma. You may want to cut this recipe in half, but I was sharing with 2 different neighbors, so it worked for me or you may want to freeze some to have later.

This is a delicious low carb muffin recipe that can easily be changed to other yummy versions, simply by changing the flavors, such as lemon poppy-seed or orange and dark chocolate chip. This recipe makes four muffins but you can halve it to make 2, or double it to make 8. Very easy. I make my own almond flour from raw nuts in a coffee grinder dedicated to food items, but you can also buy it already ground such as Bob's Red Mill brand.

2 1/4 c self rising flour
1/3 c sugar
1 1/2 tsp cinnamon
1/4 c raisins, moist, preferably soaked in juice or rum
1 large egg, beaten
2/3 c milk
1/3 c cooking oil
1/4 c honey
1 tsp vanilla extract

  • 1. Preheat oven to 375 degrees.
  • 2. Grease a regular sized 12 muffin tin.
  • 3. In a large bowl, measure the flour, sugar and cinnamon. Mix well with a fork.
  • 4. Measure the raisins and set aside.
  • 5. In a separate bowl, measure all the remaining ingredients and mix well.
  • 6. Add the raisins and liquid ingredients to the bowl with the dry ingredients and mix with a rubber spatula/spoon just until mixed. Do not over mix.
  • 7. Fill the 12 muffin cups half full. Make sure the batter is evenly portioned.
  • 8. Bake at 375 degrees for about 18 minutes. Test with a pick.
  • 9. Remove from the oven a cool in the pan on a rack for several minutes, then remove from pan and continue cooling on the rack. Use a knife to assist in the release. Serve warm with butter. Jam or honey are optional.

  • Preheat oven to 400.

  • Make topping in small bowl; set aside.
  • In large bowl mix together flour, baking powder, salt, and cinnamon, set aside.
  • In another bowl cream the butter and brown sugar until light and fluffy, about 3 minutes.
