2 medium Bartlett pears (or other ripe but firm pears, diced)
2 medium apples (a fresh, crisp variety like honeycrisp, cripps, or pink lady is best, diced)
1 cup red grapes (halved)
1/3 cup Greek yogurt (can substitute your favorite plain or vanilla non-dairy yogurt - see notes)
2 teaspoons freshly grated lemon zest (from 1 medium lemon)
1 tablespoon fresh lemon juice (from the zested lemon)
2 tablespoons pure maple syrup (can substitute honey)
1/2 teaspoon pure vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoons ground nutmeg
1/3 cup pecans* (chopped)

Steps:

  • Place pears, apples, and grapes in a large bowl. Toss gently to combine. Set aside.
  • To a small bowl, add the yogurt, lemon zest, lemon juice, maple syrup, vanilla, cinnamon, and nutmeg. Use a wire whisk to blend well.
  • Drizzle dressing over the fruit. Toss gently until fruit is coated. Scoop into bowls and sprinkle with pecans. Serve immediately.

½ cup water
3 1-inch strips of lemon zest
1 cinnamon stick
2 tablespoons lemon juice
4 mango, pitted, peeled, and cut into chunks
4 white peaches, pitted and cut into bite-sized pieces
2 Granny Smith apples - peeled, cored, and sliced
4 (6 ounce) containers fresh raspberries
¼ cup finely chopped fresh mint
2 tablespoons lemon juice

Steps:

  • Place the sugar, water, lemon zest, cinnamon, and 2 tablespoons of lemon juice into a small saucepan. Bring to a boil; reduce heat to medium-low and simmer 10 minutes. Strain the syrup through a mesh strainer; refrigerate until cold.
  • Place the mango, peaches, apple, raspberries, mint, and 2 tablespoons of lemon juice into a mixing bowl. Pour the chilled syrup overtop and gently stir to combine.

2 medium apples, finely chopped
2 medium nectarines or peaches, finely chopped
2 cups chopped fresh strawberries
1 cup fresh blueberries
2 tablespoons lemon juice
Dash salt
CHIPS:
1/2 cup sugar
2 tablespoons ground cinnamon
10 flour tortillas (8 inches)
Oil for frying

Steps:

  • In a large bowl, combine the first 6 ingredients. Refrigerate until serving., In a small bowl, mix sugar and cinnamon. Cut each tortilla into 8 wedges. In an electric skillet, heat 1 in. of oil to 375°. Fry chips, several at a time, 2-3 minutes on each side or until golden brown. Drain on paper towels., Transfer chips to a large bowl; sprinkle with sugar mixture and gently toss to coat. Serve with salsa.

1 cup packed fresh basil leaves
3 sprigs fresh spearmint or mint
1 cinnamon stick (3 inches)
2 cups fresh raspberries or blackberries
1 cup cubed cantaloupe
1 cup cubed honeydew
1 cup fresh blueberries
1 medium apple, sliced

Steps:

  • In a small saucepan, bring the sugar and water to a boil. Remove from the heat. Stir in the basil, spearmint and cinnamon stick. 2 apples
1 (15 ounce) can mandarin oranges, drained
1 tablespoon honey
1/2-1 teaspoon cinnamon
1/2 cup pineapple juice

3 egg whites
1 1/2 tablespoons sugar

  • Preheat the oven to 450.
  • Slice the bananas and chop the apples.
  • Combine all the fruit in a large oven-proof bowl or casserole.

  • Beat to stiff peaks.

¼ cup honey
1 teaspoon chopped fresh rosemary
¼ teaspoon cinnamon

Steps:

  • Prepare cinnamon crisps by preheating oven to 375 deg. Place wonton wrappers on a cookie sheet and brush with oil, then sprinkle with cinnamon sugar. Cut each wrapper into ½ inch strips. Bake for 7-8 minutes, until light brown. In small bowl, mix together yogurt, honey, rosemary and cinnamon. Set aside. Toss together frisee and watercress and place in large salad bowl or on platter. Gently mix about half of yogurt dressing with greens. Spread fruit over greens. Drizzle with remaining dressing and top with cinnamon crispy sticks.
