1 ⅓ cups packed brown sugar
½ cup butter, softened
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
½ teaspoon ground cloves
2 cups shredded zucchini
1 cup chopped walnuts
1 (16 ounce) package cream cheese frosting
¼ teaspoon ground cloves

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking pan.
  • Mix brown sugar, butter, eggs, and vanilla extract together in a bowl. Stir in flour, baking soda, cinnamon, and cloves. Stir in zucchini and walnuts. Spread batter into the prepared baking pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes. Allow to cool completely before frosting, about 1 hour.
  • Mix frosting with cloves in a bowl. Spread over the zucchini bars.

3 eggs
1-1/2 cups sugar
1/2 cup canola oil
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/4 teaspoon salt
2 cups shredded zucchini
1 cup chopped dates
1/2 cup chopped walnuts
CARAMEL CREAM CHEESE FROSTING:
10 caramels
1 tablespoon water
3 ounces reduced-fat cream cheese
2-1/2 cups confectioners' sugar
1/8 teaspoon salt

Steps:

  • In a bowl, beat the eggs, sugar, oil, applesauce and vanilla. Combine the dry ingredients; add to the egg mixture and mix well. Stir in zucchini, dates and walnuts. Spread into a 13x9-in. baking pan coated with cooking spray. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., In a saucepan, heat caramels and water over low heat until caramels are melted, stirring occasionally. In a bowl, beat cream cheese and confectioners' sugar until smooth. Add caramel mixture and salt; mix well. Spread over cooled bars.

1 1/2 cups granulated sugar
1 cup vegetable oil
3 eggs
2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
2 cups shredded zucchini (about 2 medium)
1 1/2 cups chopped pecans
48 pecan halves, if desired
6 tablespoons butter (do not use margarine)
6 cups powdered sugar
1 teaspoon vanilla
8 to 10 tablespoons milk

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 15x10x1-inch pan with shortening or spray with cooking spray.
  • In large bowl, beat granulated sugar, oil and eggs with electric mixer on medium speed, or mix with spoon. Stir in flour, baking powder, salt and cinnamon. Stir in zucchini and pecans. Spread in pan.
  • Bake 30 to 40 minutes or until toothpick inserted in center comes out clean and top is golden brown. Cool completely, about 1 hour.
  • Meanwhile, in 4-quart saucepan, heat butter over medium heat until light golden brown; remove from heat. Stir in powdered sugar, vanilla and milk until smooth and spreadable. Spread Browned Butter Frosting on cooled bars. For bars, cut into 8 rows by 6 rows. Top each bar with pecan half.

3/4 c butter, softened
1/2 c sugar
1/2 c brown sugar
2 eggs
1 tsp vanilla
1 3/4 c flour
2 tsp baking powder
1 tsp cinnamon
2 c zucchini, grated
2 c powdered sugar (this is the frosting)
1 tsp cinnamon
2 Tbsp butter, melted
1 tsp vanilla
2 Tbsp milk

Steps:

  • 1. Cream 3/4 cup butter, 1/2 cup sugar, and 1/2 cup brown sugar. Add eggs and 1 tsp. vanilla. Mix in flour, 1 tsp. cinnamon and baking powder. Blend in zucchini.
  • 2. Pour into greased jelly roll pan and bake at 350 degrees for 25 - 30 minutes. While baking, prepare the frosting.
  • 3. Frosting: Mix the 2 cups powdered sugar, cinnamon, melted butter, vanilla, and milk. Mix until creamy. Add additional milk, if necessary, to get desired consistency. Cool zucchini bars and frost. Cut into squares. ENJOY!!!

  • Stir in zucchini, coconut, and nuts.
