CINNAMON COFFEE CAKE
What's not to like about this cake with a rich cinnamon swirl, and an irresistible crumb topping. Best brunch idea ever!

Steps:
- Preheat oven to 350 degrees F. Spray a 9x9 pan with non stick baking spray.
- In a large bowl, cream butter and white sugar. Stir in vanilla, egg, baking powder, and salt.
- Alternate stirring in flour and milk until just combined. Do not over mix.
- Pour half of batter into prepared pan.
- In a small bowl, combine the butter, flour, brown sugar, and cinnamon.
- Pour into the batter in pan, and swirl with a knife. Pour remaining batter on top.
- In the same small bowl using 2 forks, butter, flour, brown sugar, and cinnamon until mixture resembles coarse crumbs.
- Sprinkle topping on top of batter, and press in lightly.
- Bake for 40-45 minutes, or until a tooth pick inserted in the center comes out clean.

- In a large bowl, cream butter and 2 cups sugar until light fluffy. Add 1 egg at a time, beating well after each addition. Beat in vanilla. Combine flour, baking soda and salt; add alternately with sour cream, beating just enough after each addition to keep batter smooth. , Spoon a third of batter into a greased 10-in. tube pan. Combine cinnamon, nuts and remaining sugar; sprinkle a third over batter in pan. Repeat layers 2 more times. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack to cool completely.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan. Sift together the flour, baking powder, baking soda and salt. Set aside.
- In a large bowl, cream together the shortening and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the sour cream and vanilla. Beat in the flour mixture, just until incorporated. Pour half of batter into prepared pan. In a small bowl, combine brown sugar and cinnamon. Sprinkle half of mixture over batter. Add remainder of batter and sprinkle with rest of topping. With the tip of a knife, swirl lightly through the batter.
- Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

- In a large bowl, dissolve yeast in warm water. Add milk, 1/2 cup sugar, eggs, butter, salt and 3 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough. , Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover; let rise in a warm place until doubled, about 1 hour., Mix cinnamon and remaining sugar. Punch down dough. Turn onto a lightly floured surface; divide in half. Roll each portion into an 18x8-in. rectangle; sprinkle each with about 1/4 cup cinnamon sugar to within 1/2 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seam to seal. Place in 2 greased 9x5-in. loaf pans, seam side down., Cover with kitchen towels; let rise in a warm place until doubled, about 1-1/2 hours. - Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish; set aside.
- Prepare cinnamon layer by stirring brown sugar, flour, and cinnamon together in a small bowl until well combined; set aside.
- Prepare streusel topping by combining brown sugar, flour, cinnamon, and salt in a small bowl. Add butter and stir with a fork until mixture is crumbly; set aside.
- Prepare cake by whisking together flour, baking powder, and salt in a medium bowl.
- Beat sugar and butter in a stand mixer fitted with the paddle attachment on medium speed until fluffy, about 3 minutes. Scrape the sides of the bowl, then turn the mixer on low speed and beat in eggs until well blended. Gradually mix in flour mixture and milk. Add sour cream and vanilla and beat for 30 seconds.

AllRecipes rocks my world and so does coffee cake...I am a sucker for a good coffee cake...this is using a cake mix, and I like the whole butterscotch pudding idea.

- 1. Preheat oven to 350F. Grease a 9x13 inch baking pan, or a 10" bundt pan.
- 2. In a medium bowl, stir together cake mix, puddings, add the eggs, oil and water, mix well til blended. In another bowl, stir together the brown sugar, cinnamon, and nuts, Pour half of the of the batter into a pan, spread evenly. Sprinkle with half of the nut mixture. Cover with the rest of the batter, and sprinkle with the rest of the nut mixture.
- 3. Bake for 20 minutes in preheated oven, then turn the oven down to 325F and bake for an additional 35-40 minutes.
