Steps:
- Mix the first three ingredients together.
- Once mixed then add milk.
- Take the mixture and knead it on a firm surface.
- Take 1 tablespoon and roll it into a ball.
- Roll the ball into the cinnamon.
- Bake at 450 degrees for 10 minutes.

SUGAR FREE CINNAMON NUT BALLS
Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Sift dry ingredients, set aside. Beat margarine, sugar, egg, and vanilla. Add the flour mixture.
- Refrigerate dough for one hour.
- Powder hands lightly with flour and make ball about the size of a small egg, by using 1 tablespoon dough. Mix cinnamon and nuts together and roll balls in the spice mixture. Place on greased cookie sheet, 2 inches apart. Bake 12 to 15 minutes. Remove from pan soon as they come from oven.

- Blend 1/2 cup walnuts, dates, cinnamon, and cardamom together in a blender until almost smooth. Roll mixture into little balls. Place finely chopped walnuts in a shallow bowl and roll balls in walnuts to coat. Store balls in refrigerator.

Steps:
- Preheat oven to 300*F.
- In a small bowl, combine the sugar and cinnamon; set aside.
- In a medium bowl, combine the flour, baking soda, and salt; mix well with a wire whisk and set aside.
- In a large bowl, using an electric mixer on medium speed, blend the sugars.
- Add the butter and mix to form a grainy paste.
- Scrape down the sides of the bowl, then add the eggs and vanilla; mix until light and fluffy.
- Add the flour mixture and blend at low speed just until combined. Do not overmix.
- Shape dough into 1" balls and roll each in the cinnamon-sugar mixture.
- Place 2" inches apart on ungreased cookie sheets and bake 18-20 minutes.
- Using a spatula, immediately transfer cookies to a cool, flat surface.

- Butter the sides of a heavy saucepan; add the first five ingredients. Cook and stir over medium-high heat until sugar is dissolved. Cook, without stirring, until a candy thermometer reads 238° (soft-ball stage). Remove from the heat. Cool, without stirring, until mixture reaches 110°. , Transfer to a large bowl; add the cinnamon, vanilla and salt. Beat until light-colored and stiff enough to knead, about 2 minutes. CINNAMON WALNUT BALLS
Steps:
- Preheat oven 350 degrees. Spread the walnuts on a baking sheet and toast in the oven, tossing occasionally until fragrant, 6-8 minutes, let cool. In a food processor , process the walnuts until finely ground. In a large bowl, whisk together walnuts, flour, cinnamon and salt, set aside. using an electric mixer, beat the butter, 1/3 cup sugar on medium high until light and fluffy, 2-3 minutes. Beat in the vanilla. Reduce mixer speed to low and gradually add the flour mixture, mixing until just combined. Do not over mix.
- Shape the dough into 1-inch balls and place 2 inches apart on baking sheet. Bake 12-14 minutes, until just beginning to brown. Let cool slightly on baking sheet, then transfer to wire rack. Place the remaining 1/3 cup powdered sugar on a platter. Roll cookies in sugar to coat, then dust with cinnamon. Makes about 36 cookies.
