CINNAMON APPLE PIE CAKE

1 1/4 cups (2 1/2 sticks) unsalted butter, softened, plus more for pan
1 1/2 cups packed light-brown sugar
3 tablespoons Calvados apple brandy
Salt
3 whole cinnamon sticks
6 medium Braeburn or McIntosh apples (about 2 1/2 pounds), peeled, cored, and cut into 1/4-inch-thick rings
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
3/4 teaspoon ground cinnamon
1 1/2 cups granulated sugar
3 large eggs
1 1/2 teaspoons pure vanilla extract
1/2 cup sour cream

Steps:

  • Preheat oven to 375 degrees. Butter a 12-by-1-inch round pizza pan. Line bottom with parchment paper, and butter parchment; set aside. Put 1/2 cup butter, the brown sugar, brandy, and a pinch of salt into the bowl of an electric mixer fitted with the paddle attachment; mix on medium-high speed until pale and fluffy, 2 to 3 minutes. Spread mixture into prepared pan. Place cinnamon sticks on top. Layer with apple rings. Use your hands to press apples gently into mixture; set aside. Sift flour, baking soda, baking powder, 3/4 teaspoon salt, and the ground cinnamon into a medium bowl; set aside.
  • Put remaining 3/4 cup butter and the granulated sugar into the clean bowl of an electric mixer fitted with the clean paddle attachment; mix on medium-high speed until pale and fluffy. Mix in eggs, 1 at a time, and vanilla. Reduce speed to low. Add flour mixture in 2 batches, alternating with the sour cream. Spread batter evenly over apples.
  • Bake until cake is golden brown and a cake tester inserted into center comes out clean, about 45 minutes. Let cool on a wire rack 15 minutes. Invert onto a serving plate.

I love apple pie! But I've never found one with enough apples in it. I think this one will have enough. It's packed!

6-8 granny smith apples, peeled and sliced
1 1/2 Tbsp cinnamon sugar
3 large eggs
1 1/2 c super fine white sugar (see tip below)
1 1/2 c vegetable or canola oil
3 tsp vanilla extract
1 1/2 c all purpose flour
more cinnamon sugar to sprinkle on top (same as above)

Steps:

  • 1. Preheat the oven to 350 degrees F. Spray a 9 1/2 to 10-inch springform pan with nonstick spray. Line the bottom with a round of parchment paper and then spray again.
  • 2. Layer the apple slices in the pan until they come about 2/3 of the way up the side. (I went a little higher than that and it worked out fine). Sprinkle the cinnamon-sugar over the apples.
  • 3. Prepare the batter by beating the eggs and sugar until light and fluffy. Add the oil and the vanilla and beat well, then stir in the flour. Pour the batter on top of the apples, and sprinkle with additional cinnamon-sugar. Tap the pan on the counter a few times to allow the batter to sink down and around the apples.
  • 4. Bake for 1 hour and 20 minutes, or until a skewer inserted into the center of the cake comes out clean. Cool *completely* in the pan. If you try to remove the cake from the pan while it is still warm, it will tend to break apart. I refrigerated my cake before slicing, and that worked out well. Serve slices with ice cream (warm individual slices in the microwave, if desired).
  • 5. Tip: You want "caster sugar" for this recipe: It is a finer grind than table sugar, but not as fine as powdered. Look for "Baker's Sugar" at the store, or simply put regular white sugar in your food processor and give it a few whirls to create superfine sugar.
