CRISP CHICKEN WINGS WITH CHILI-LIME BUTTER



Crisp Chicken Wings with Chili-Lime Butter image

4 pounds chicken wings
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
8 tablespoons (1 stick) unsalted butter, softened
1 big, fat rounded tablespoon Thai red curry paste
1/4 cup honey
1/4 cup soy sauce
1 lime, halved
Chopped cilantro leaves, for garnish

Steps:

  • Preheat the oven to 425 degrees F.
  • Rinse the wings under cool water and pat dry. Put them in a bowl, drizzle with olive oil and season well with salt and pepper. Toss to coat with the seasoning. Then spread the wings out on a baking sheet and roast about 25 minutes until the skin gets crisp and brown, and the meat is tender.
  • While you wait, throw the butter, red curry paste honey and soy sauce into a blender. Season with salt and puree. Scrape into a big bowl. When the wings come out of the oven put add to the bowl with the curry butter. Squeeze the juice of the lime over the wings. Give it a toss and you're done. Garnish with cilantro.

Steps:

1 cup BBQ sauce
½ cup honey

  • Preheat oven to 425°F (220°C).

2 lb chicken wings, rinsed and patted dry
¼ cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder

⅔ cup water
peanut or vegetable oil, for frying
½ cup buffalo sauce

1 package small chicken wings, fresh, non-frozen
½ cup cornmeal
½ cup regular unseasoned breadcrumbs
¼ cup all purpose flour
1 tablespoon salt
2 teaspoons pepper
1 ½ tablespoons adobo
2 teaspoons chili powder
1 teaspoon paprika
1 teaspoon cayenne pepper
1 ½ teaspoons sugar
1 teaspoon bbq seasoning
1 teaspoon garlic powder
2 butter cubes, 1 in (2.5 cm)
¼ cup buffalo sauce

Steps:

  • Combine all dry ingredients into a cohesive dry mixture and toss all chicken pieces into the mixture, until each wing & drum is well-coated.
  • Preheat your oven to 200°F.
  • Place a baking rack on a large rectangular sheet pan and place each individual piece of chicken approx. a half-inch apart from one another, making sure not to crowd the wings.
  • Place chicken wings into the oven for 30 minutes.
  • After 30 minutes, raise the oven temperature to 400°F and let the chicken wings cook for another 30-35 Minutes until golden-brown.
  • Add two cubes of butter to ¼ cup buffalo sauce in a saucepan and heat on medium heat for ~5 minutes until you get a cohesive mixture.
  • Remove wings from the oven and brush each with a light to medium coating of sauce.

2 cups brown sugar
1 cup yellow mustard
¼ cup soy sauce
5 pounds chicken wings, cut into thirds and tips discarded

Steps:

  • Mix brown sugar, mustard, and soy sauce together in a bowl. Measure 1/4 cup marinade for basting and transfer to a small bowl; cover and refrigerate.
  • Place wings in a large resealable bag. Pour remaining marinade over wings, coating well. Seal and marinate wings at least 2 hours and up to overnight.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Remove chicken wings from resealable bag and transfer to a baking sheet. Discard marinade.
