4 lb fingerling potatoes or other small boiling potatoes
4 tablespoons cider vinegar
3 fresh jalapeño chiles, seeds and ribs removed from 2 of them
2 cups fresh cilantro sprigs, coarsely chopped
1 1/2 shallots, coarsely chopped
1 garlic clove, coarsely chopped
1/4 cup extra-virgin olive oil

Steps:

  • Cover potatoes with salted cold water by 1 inch, then simmer until just tender, 10 to 15 minutes. (Potatoes will continue to cook after draining; do not overcook or they will break apart.)
  • Drain potatoes and rinse under cold water until slightly cooled. Halve lengthwise and while still warm gently toss with 1 tablespoon vinegar. Cool potatoes to room temperature, then season with salt and pepper.
  • While potatoes cook, coarsely chop jalapeños and pulse in a food processor with cilantro, shallots, garlic, oil, and remaining 3 tablespoons vinegar until finely chopped.
  • Toss potatoes with salsa.

2 1/2 pounds russet potatoes (3 medium-large potatoes), peeled and cubed
Coarse salt
4 tablespoons extra-virgin olive oil (EVOO)
4 1 1/2-inch-thick boneless center-cut pork chops
Freshly ground black pepper
1 large red onion, finely chopped
1 heaping tablespoon chili powder (a heaping palmful)
1/2 tablespoon ground cumin (half a palmful)
3 garlic cloves, chopped
2 tablespoons dark brown sugar
2 cups chicken stock or broth
2 tablespoons cold unsalted butter
1/3 cup mayonnaise
1/2 cup fresh cilantro leaves (a couple of handfuls), chopped
2 tablespoons red wine vinegar (eyeball it)
3 celery ribs, finely chopped
2 red bell peppers, cored, seeded, and chopped

Steps:

  • Preheat the oven to 375°F.
  • Place the potatoes in a sauce pot and cover with water. Place over high heat and bring up to a boil, add some salt, and simmer for 10 to 12 minutes, or until just tender. Drain the potatoes and spread out onto a rimmed cookie sheet to cool quickly, about 10 minutes.
  • While the potatoes are working, preheat a large skillet over medium-high heat with 2 tablespoons of the EVOO (twice around the pan). Season the pork chops liberally with salt and pepper. Place the chops in the skillet and sear for about 2 minutes on each side to caramelize. Transfer the chops to a rimmed cookie sheet and place in the oven to finish off, 7 or 8 minutes, until the meat is firm to the touch, but not tough. Remove from the oven and let the chops rest, covered with a piece of aluminum foil, for a few minutes.
  • While the chops bake, return the skillet to the heat and add the remaining 2 tablespoons of EVOO, three quarters of the chopped onions, the chili powder, cumin, two thirds of the chopped garlic, the brown sugar, salt, and pepper. Cook the mixture, stirring frequently, for 2 to 3 minutes. Add the chicken stock and simmer until reduced by half. Once reduced, turn off the heat and whisk in the cold butter.
  • While the sweet chili-onion sauce is cooking, in a large bowl, combine the mayonnaise, cilantro, the remaining chopped onions, the remaining chopped garlic, the red wine vinegar, salt, and pepper. Add to the dressing the chopped celery and red bell peppers. When you are ready to serve, add the cooled potatoes. Stir the potatoes to combine, and check the seasoning.
  • Pour the sweet chili-onion sauce over the rested pork chops; serve the creamy cilantro potato salad alongside.

My neighbor served this at a baby shower and everyone wanted a copy of the recipe. This was addictive and had a unique, fresh taste. Don't leave out the bacon at the end..it is an essential ingredient, as is the chopped cilantro and lime juice.

3 lbs red potatoes, unpeeled
2 teaspoons salt, divided
1 cup mayonnaise (real mayo)
1 (4 1/2 ounce) can chopped green chilies
1/3 cup fresh cilantro, chopped, plus more for garnish
3 green onions, chopped
2 tablespoons fresh lime juice (about 1-2 limes, depending on size of your limes)
1 fresh garlic clove, minced
1/2 teaspoon black pepper
4 slices maple bacon, cooked and crumbled

Steps:

  • Cook potatoes in boiling water to cover along with 1 tsp of the salt until fork tender, about 15 minutes or so (will vary based on size of potatoes).
  • Drain and cool.
  • Cut potatoes into bite sized chunks.
  • Stir together the mayonnaise, chilies, chopped cilantro, green onions, lime juice, garlic, black pepper, and remaining 1 teaspoons salt in a large bowl.
  • Add potatoes and toss to coat.
  • Cover and chill at least 4 hours.
  • Just before serving, stir in bacon crumbles and garnish with additional fresh cilantro.

DH & I were the lucky recipients of a lrg amt of fresh salmon recently. 18 lbs went to be smoked & the rest is in our freezer, so I've been on a mission to expand my salmon horizons. The Alaska Seafood Marketing Institute has been my best source & they didn't disappoint me w/this truly special potato salad that ranks right behind "my mama's best" for me. They described it as a side-dish, but I've used it more as a hearty 1-dish salad meal & just served it w/crusty bread & a variety of veggie/salad items at its side (sliced tomato & cucumber, olives, hard-boiled eggs, etc). Times were estimated & do not include time spent cooking the potatoes. This is a must try! Enjoy! (Edited to Add: To halve this recipe, use 1/2 can salmon & the rest of the ingredients halve easily. Then w/the unused canned salmon, make salmon patties to accompany the salad.)

One 2 to 2 1/2-pound head cauliflower, cut into bite-size florets (about 4 cups)
1/4 cup melted ghee
3 tablespoons curry powder
1 tablespoon plus 2 teaspoons salt, plus more to taste
1 1/2 pounds unpeeled assorted baby potatoes, such as white-skinned, red-skinned and purple, quartered
2 tablespoons white wine vinegar
1 cup fresh or frozen and thawed peas
1/4 cup finely chopped fresh cilantro
1/4 cup finely chopped fresh mint leaves
2 tablespoons fresh minced ginger
2 cloves garlic, minced
1 small white onion, finely diced
Cilantro Emulsion, recipe follows
Freshly ground pepper, to taste
1 egg
1 teaspoon salt, plus more to taste
1/4 cup chopped fresh cilantro leaves
1/4 cup lemon juice
1 tablespoon fresh minced ginger
1 clove garlic, minced
1/4 teaspoon white pepper
1 cup olive oil

Steps:

  • Preheat the oven to 450 degrees F.
  • Toss the cauliflower with the ghee, curry powder and 2 teaspoons of the salt, and then transfer to a foil-lined baking sheet. Roast until just tender and slightly charred, stirring occasionally, about 20 minutes.
  • Place the potatoes in a large pot and cover with 3 inches of cold water. Stir in the remaining 1 tablespoon salt and bring to a boil. Reduce the heat to medium and simmer until the potatoes are tender, about 10 minutes. Drain and transfer to a large rimmed baking sheet, drizzle with the white wine vinegar and let cool slightly.
  • Combine the potatoes and cauliflower in a large bowl. Toss with the peas, cilantro, mint, ginger, garlic, onions and Cilantro Emulsion until thoroughly combined. Season with more salt and pepper, if needed, and serve.
  • For Cilantro Emulsion: Bring 1 quart water to a boil with the salt in a small saucepan. Add the egg (still in the shell) and simmer over moderately high heat, 5 minutes.
  • Transfer the egg to a bowl of cold water using a slotted spoon and let stand 3 to 4 minutes. Crack the egg all over and gently peel under warm running water, keeping it whole.
  • Combine the poached egg with the cilantro, lemon juice, ginger and garlic in a blender. With the blender running, slowly begin drizzling in the olive oil until emulsified. Season with the white pepper and more salt, if needed.

  • Whisk vinegar and garlic in small bowl. Gradually whisk in olive oil. Season vinaigrette to taste with salt and pepper.
  • Prepare barbecue (medium-high heat). Place corn, chiles, and bell peppers on grill. Cover and grill until corn kernels are tender and chiles and bell peppers are blackened on all sides, turning frequently, about 5 minutes for corn and 12 minutes for chiles and bell peppers. Transfer vegetables to 2 baking pans. Cover chiles and bell peppers; let stand until cool. Cut corn kernels off cobs; transfer to medium bowl. 2 lbs waxy salad potatoes
kosher salt
1/2 cup extra virgin olive oil
1/2 teaspoon finely grated lemon zest
3 tablespoons fresh lemon juice

1/2 cup lightly packed chopped fresh cilantro leaves
2 green onions, thinly sliced (white and green parts, Or 1 shallot minced)

Steps:

  • Scrub the potatoes and put into a large pot of salted water. Bring to a boil and lower to simmer. Cook, partially covered, until the potatoes are tender when pierced with a fork,a bout 25 minutes. Drain and let cool slightly.
  • While the potatoes are still warm, slice them about 1/4 inch thick (there's no need to peel, but discard any pieces of skin that come off on their own).
  • Put half the potatoes in a large serving bowl. In a small bowl whisk the oil, lemon zest, lemon juice, 1 tsp salt and several grinds of pepper. Drizzle on half the dressing. Add the remaining potatoes to the bowl, drizzle on the rest of the dressing and toss gently with a large rubber spatula to combine well.

2 lbs new potatoes, quartered
10 cloves fresh garlic
olive oil
salt and pepper
3/4 cup mayonnaise
1 tablespoon creole mustard
1 lemon, juice of
1/4 cup fresh cilantro leaves, washed and dried
4 hard-boiled eggs, sliced
1/2 small red onion, thinly sliced

Steps:

  • Preheat the oven to 400 degrees.
  • In a mixing bowl, toss the potatoes and garlic with a drizzle of olive oil.
  • Toss well.
  • Season with salt and pepper.
  • Place on a baking sheet and roast for 15 minutes, or until fork tender.
  • Remove from the oven and cool completely.
  • Using a mini food processor, combine the mayonnaise, mustard and lemon juice.
  • Process until smooth.
  • Season with salt and pepper.
  • Add the cilantro and continue to process until incorporated.
  • In a mixing bowl, toss the roasted potatoes and garlic, cilantro mayonnaise, sliced eggs, and red onions.
  • Mix well.

  • Remove from the refrigerator and mix the salad.

2-1/2 lbs. red potatoes, cooked and quartered, with skin left on Salt and pepper, to taste

  • Place mayonnaise, cilantro, garlic, onion and celery into a large mixing bowl; combine well. Add Alaska salmon and potatoes; gently mix all ingredients together to coat. Taste, adding salt and pepper as necessary. Chill for 1 to 3 hours for best results. Garnish with fresh cilantro and serve.

Salt
8 ounces sugar snap peas, trimmed
About 1 cup sour cream
1/4 cup finely chopped chives
2 tablespoons extra-virgin olive oil
1 large jalapeno, seeded and finely diced
Zest and juice of 1 lemon
Black pepper
4 radishes, thinly sliced
4 scallions, whites and greens, sliced on the bias
1 large bunch cilantro, leaves only
A few fresh oregano sprigs, leaves stripped
1 clove garlic, grated or minced
1 small shallot, coarsely chopped
2 tablespoons sherry vinegar
Juice of 1 lime
1/4 cup extra-virgin olive oil
Salt and black pepper
1 tablespoon light brown sugar
1 tablespoon ancho chile powder or a chili powder blend, such as Gebhardt's
1 tablespoon instant espresso powder or fine ground coffee
1 teaspoon granulated garlic
1 teaspoon granulated onion
Salt and black pepper
4 pieces hanger steak, at room temperature
Olive oil, for drizzling
1/2 bottle (6 ounces) beer

Steps:

  • For the potato salad: Cover the potatoes with cold water in a large pot and bring to boil. Salt the water and cook until the potatoes are just tender, 10 to 15 minutes. Drain, then add back to pot and lightly crush the potatoes with a wooden spoon or potato masher just to crack them.
  • Meanwhile, bring a medium pot of salted water to a simmer. Add the snap peas and cook until bright green, about 1 minute. Drain and then shock in a large bowl of ice water. Remove and slice on the bias. Set aside.
  • Combine the sour cream, chives, olive oil, jalapeno, lemon juice and salt and pepper to taste in a large bowl. Add the potatoes, snap peas, radishes and scallions and toss to combine. Refrigerate until ready to serve.
  • For the chimichurri: Add the cilantro, oregano, garlic and shallot to a food processor and pulse to combine. Add the vinegar and lime juice. Stream in the olive oil while pulsing, until the sauce comes together. Season with salt and pepper and set aside until ready to serve.
  • For the steak: Heat a large cast-iron skillet over medium-high heat. While the skillet is heating, mix together the brown sugar, chile powder, espresso powder, granulated garlic, granulated onion and some salt and pepper in a small bowl.
  • Season the steaks with the rub, drizzle with olive oil and add to the hot skillet. Cook until medium, about 4 minutes per side. Remove the steaks and let rest for at least 5 minutes.
  • Add the beer to the skillet, reduce by about three-quarters and then remove from the heat.
  • Slice the steaks against the grain. Serve the beer sauce on the steak and the chimichurri and potato salad alongside.

Steps:

  • Working in 2 batches, boil potatoes in large pot until tender. Transfer to large bowl. Meanwhile, mix mustard and vinegar in medium bowl. Gradually whisk in oil. Mix in capers. Pour dressing over warm potatoes. Cool. Mix in bell peppers, onions and cilantro. Season with salt and pepper. (Can be made 1 day ahead, Cover, chill.)

1 1/2 lb white potatoes (4 medium), each cut in half
1/3 cup olive or vegetable oil
2 tablespoons chopped fresh cilantro
3 tablespoons white wine vinegar
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/8 teaspoon ground red pepper (cayenne)
1/2 medium cucumber, seeded, coarsely chopped
1/2 medium green bell pepper, coarsely chopped
4 medium green onions, sliced (1/4 cup)
1 medium tomato, seeded, coarsely chopped (3/4 cup)
Chopped fresh cilantro, if desired

Steps:

  • In 3-quart saucepan, heat 1 inch water (salted if desired) to boiling. Add potatoes. Cover and heat to boiling; reduce heat. Simmer covered 20 to 25 minutes or until tender.
  • While potatoes are cooking, in tightly covered container, shake all dressing ingredients until blended. Drain potatoes; cool slightly. Remove skins if desired. Cut potatoes into cubes (about 4 cups).
  • In large bowl, pour dressing over warm potatoes. Add cucumber, bell pepper, onions and tomato; toss to mix. Serve immediately, or cover and refrigerate 1 to 2 hours until chilled. Stir gently before serving. Garnish with cilantro.

3 pounds New B potatoes
1 pound applewood smoked bacon
1 pint Hellmans mayo
1 stalk cellery
2 bunches cilantro
2 medium purple onions
kosher salt
black pepper

Steps:

  • Quater potatoes and roast at 400 degrees for 30-45 minutes. While roasting chop bacon into small bite size pieces and saute until golden brown. Chop cilantro fine dice purple onions and skin and dice celery, add mayo salt and pepper to tate. When potatoes are done mix all ingredients together in large bowl.

3 pounds red potatoes, with skins
2 cups mayonnaise
3 tablespoons sour cream
Juice of ½ lemon (use a juicer and a lemon at room temp to get a good amount of juice)
1 ¼ teaspoon Old Bay Seasoning
3 tablespoons fresh cilantro, chopped

Steps:

  • Do not peel potatoes. Cut potatoes into 1 inch pieces. Put them in a large pot and add cold water, until the potatoes are just covered. Cover the pot with a lid, and bring to a boil over medium heat. Over medium heat, this can take about 20-25 minutes. While potatoes are boiling: In a large bowl, whisk together the mayonnaise and sour cream, until well blended. Add the Old Bay Seasoning and mix well. Add the lemon juice, and mix quickly and thoroughly, so the mixture doesn't curdle. Set the mayonnaise mixture aside. As soon as water boils, remove the lid and reduce heat to a gentle simmer. Simmer the potatoes until they are very soft, about 15-20 more minutes. Drain potatoes and let them cool for several minutes, then add them to the mayonnaise mixture, and mix well. Add the chopped Cilantro and mix. Serve warm, or chill in the refrigerator.

SALMON & CILANTRO POTATO SALAD

DH & I were the lucky recipients of a lrg amt of fresh salmon recently. 18 lbs went to be smoked & the rest is in our freezer, so I've been on a mission to expand my salmon horizons. The Alaska Seafood Marketing Institute has been my best source & they didn't disappoint me w/this truly special potato salad that ranks right behind "my mama's best" for me. They described it as a side-dish, but I've used it more as a hearty 1-dish salad meal & just served it w/crusty bread & a variety of veggie/salad items at its side (sliced tomato & cucumber, olives, hard-boiled eggs, etc). Times were estimated & do not include time spent cooking the potatoes. This is a must try! Enjoy! (Edited to Add: To halve this recipe, use 1/2 can salmon & the rest of the ingredients halve easily. Then w/the unused canned salmon, make salmon patties to accompany the salad.)

1/4 cup fresh cilantro (chopped)
1 teaspoon garlic (minced)
1 1/2 cups fat-free mayonnaise

• 3 pounds baby potatoes, skin on and quartered lengthwise
• 2-3 cloves garlic, minced
• ¼ teaspoon crushed red pepper flakes, or to taste
• 3 ribs celery, diced
• 4-5 green onions, diced
• 1 red bell pepper, diced
• Cherry tomatoes, halved
• 6 slices bacon, cooked and crumbled
For the pesto dressing:
• 1 cup fresh cilantro
• 1 clove garlic
• ¼ cup raw almonds
• Juice of a small lime
• ¼ to 1/3 cup olive oil
• 2 tablespoons roasted green chilies
• 1 avocado
• ¾ cup plain, nonfat Greek yogurt
• ¼ cup mayonnaise
• A few dashes of hot sauce, to taste
• Freshly ground black pepper and sea salt, to taste

Steps:

  • Toss the quartered potatoes with a few tablespoons of olive oil (to coat), 2-3 cloves of minced garlic, crushed red pepper flakes and salt and pepper to taste. Roast in a preheated, 400-degree oven for about 25-30 minutes, until they start to lightly brown and are just tender. Allow to cool completely. To make the pesto, combine the cilantro, garlic, almonds, lime juice, olive oil, green chilies, and avocado in a food processor or blender. Pulse the mixture until smooth. In a small mixing bowl, combine the Greek yogurt, mayonnaise, hot sauce, salt and pepper. Stir in the pesto mixture until combined. In a large bowl, add the cooled potatoes, celery, green onion and red bell pepper. Fold in the dressing gently. Refrigerate at least two hours, allowing flavors to meld. To serve, top with cherry tomatoes and crumbled bacon. Enjoy.
