SPICY CHINESE FIVE-SPICE RUBBED CHICKEN WINGS WITH CREAMY CILANTRO DIPPING SAUCE

Spicy Chinese Five-Spice Rubbed Chicken Wings with Creamy Cilantro Dipping Sauce image

As much as I love the classic, tangy wings, I have to say these are right up there with them. These couldn't get much easier either. All I do is rub the wings all over with a hot Chinese five spice rub and bake them in a really hot oven.

Provided by Dave Lieberman

Categories     appetizer

Time 45m

Yield 40 wings

Number Of Ingredients 11

40 chicken wing pieces or 20 whole chicken wings
2 tablespoons Chinese five- spice powder
3 teaspoons cayenne pepper
Kosher salt and freshly ground black pepper
Creamy Cilantro Dipping Sauce, recipe follows
1/3 cup chopped fresh cilantro leaves
1/4 cup light sour cream
1/4 cup mayonnaise
1/4 cup yogurt
1/2 lemon, juiced
Kosher salt and freshly ground black pepper

Steps:

  • Preheat your oven to 500 degrees F.
  • If you have whole chicken wings, cut off wingtips and cut the wings in half at the joint. Discard wingtips or freeze to make stock at a later time.
  • Place the wings in a large bowl. Sprinkle five-spice powder and cayenne on the wings, add a few pinches of salt and about 15 grinds of black pepper. Rub the mixture into all the wings until no more loose rub remains. Wash your hands.
  • Line the wing pieces up on a baking sheet so the side of the wing that has the most skin is facing up. Roast until cooked through, browned and crispy, about 25 minutes. Serve hot with Creamy Cilantro Dipping Sauce.
  • Combine ingredients in mixing bowl. Whisk ingredients to incorporate them fully and season with salt and pepper, to taste.

Chipotle Dry-Rub Shrimp With Cilantro Dipping Sauce image

My mom clipped this recipe from a June 2000 edition of the Houston Chronicle. It's originally from a cookbook called "Off the Eaten Path: Inspired Recipes for Adventurous Cooks". This is a great, zesty grilled shrimp dish!

CHIPOTLE CHICKEN SKEWERS WITH CREAMY CILANTRO DIPPING SAUCE

Chipotle Chicken Skewers With Creamy Cilantro Dipping Sauce image

This is from Cook's Illustrated (America's Test Kitchen) The Best Light Recipe. It's shockingly good. The sauce is also fantastic on fish tacos. EDIT: THIS RECIPE IS AN APPETIZER. It will not magically turn 2lbs of chicken into a full meal for 10 people. You may serve it as a main course, but please adjust your expectations or multiply the measurements. You will need thirty 6- or 8-inch bamboo (or wooden) skewers for this recipe. The cooking time will depend on the strength and type of your broiler. Under-the-oven drawer-style broilers tend to take a few minutes longer than in-oven-style broilers. A small clove of minced garlic (about 1/2 teaspoon) can be substituted for the garlic powder in the sauce, if desired.

Provided by Melissa and her Pan

Categories     Chicken

Time 55m

Yield 30 Skewers, 10 serving(s)

Number Of Ingredients 18

2 lbs boneless skinless chicken breasts (about 5 medium breasts)
1/4 cup light brown sugar, packed
2 tablespoons fresh cilantro leaves, minced
1 chipotle chile in adobo, minced
2 teaspoons adobo sauce
1 1/2 teaspoons salt
1/2 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon ground black pepper
nonstick cooking spray
3/4 cup low-fat sour cream
1/4 cup reduced-fat mayonnaise
1/4 cup lime juice, from 2 to 3 limes
1/8 teaspoon garlic powder
2 tablespoons cilantro leaves, minced
2 scallions, minced
1/2 teaspoon salt
1/8 teaspoon ground black pepper

Steps:

  • FOR THE CHICKEN: Slice the chicken breasts across the grain into 1/2-inch-thick strips (you should have about 30 strips). In a large bowl, toss the chicken with the brown sugar, cilantro, chipotle, adobo sauce, salt, chili powder, garlic powder, and pepper. Cover tightly with plastic wrap and refrigerate until the flavors meld, about 30 minutes. (The chicken, covered, can be refrigerated for up to 1 day before cooking.).
  • FOR THE DIPPING SAUCE: In a bowl, stir all the ingredients together. Cover with plastic wrap and let stand at room temperature until the flavors meld, about 30 minutes. (The dipping sauce can be covered and refrigerated for up to 2 days. Season with additional lime juice, salt, and pepper to taste before serving.).
  • Meanwhile, adjust an oven rack to the top position and heat the broiler. Line a broiler pan bottom with foil and top with a slotted broiler pan top; spray the broiler pan top with nonstick cooking spray. Weave each piece of chicken onto individual bamboo skewers; lay half of the skewers on the broiler pan top and cover the skewer ends with foil, making sure not to cover the chicken. Broil until the meat is lightly browned and cooked through, 5 to 8 minutes, flipping the skewers over halfway through. Transfer the skewers to a serving platter and serve immediately with half the dipping sauce. Repeat, broiling the remaining skewers and serving with the remaining dipping sauce.

SPICY CHINESE FIVE SPICE-RUBBED CHICKEN WINGS WITH CREAMY CILANTRO DIPPING SAUCE

Spicy Chinese Five Spice-Rubbed Chicken Wings with Creamy Cilantro Dipping Sauce image

This is one of those recipies that I've used enough that I've forgotten where the original inspiration came from-and that I actually hardly ever measure everything for...It's great for a gathering of friends for almost any occasion-say watching a game, or even a good movie...It also makes a great appetizer(I would recommend...

Provided by Philip Hoel

Categories     Poultry Appetizers

Time 45m

Number Of Ingredients 13

FOR THE WINGS
20 whole chicken wings
2 Tbsp chinese five-spice powder
1 Tbsp cayenne pepper
kosher salt and pepper
creamy cilantro dipping sauce(to follow)
CREAMY CILANTRO DIPPING SAUCE
1/3 c chopped cilantro leaves(plus some for garnish)
1/4 c sour cream
1/4 c mayonnaise(do not use miricle whip-way too sweet)
1/4 c plain yogurt(optional but adds a nice tang)
juice of 1/2 lemon
salt and pepper to taste

Steps:

  • 1. FOR THE WINGS
  • 2. Pre-heat oven to 500 degrees, line a baking sheet with parchment.
  • 3. Remove the tips from the chicken wings(save for making stock-if you wish-or discard)and cut the wings in half at the joint. Place the wings in a bowl.
  • 4. Sprinkle 5 spice powder, and cayenne over wings, add salt and pepper.(be generous with the pepper) Rub this mixture all over the wings until no powder remains
  • 5. Place the wings on parchment lined baking sheet with the most skin up. Bake for about 25 minutes-or until cooked through browned and crispy-meanwhile make the sauce
  • 6. NOTE: This spice mixture also makes a very good Chinese inspired rub for a whole roast chicken-just maintain the ratio of 2 parts five spice to 1 part cayenne
  • 7. FOR THE SAUCE
  • 8. Combine all sauce ingredients through the lemon juice-add salt and pepper to taste
  • 9. NOTE: I should mention that I like my wings very spicy-you might prefer a lessor amount-but the sauce goes a long way in taming the heat
  • 10. NOTE: This recipe can be easily doubled-just use two baking sheets, and rotate baking sheets half way through the baking time.

1 cup rice flour
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon turmeric
4 cloves garlic
3 ounces fresh ginger, peeled and thinly sliced (a 1 1/2 to 2-inch piece ginger root)
3 tablespoons chili paste (blended hot chili peppers, garlic, oil and salt)
1/2 cup chopped cilantro with stems
1 cup soy sauce
Juice and pulp from 2 freshly squeezed limes

Steps:

  • Toast mung beans lightly in a pan. Transfer to a bowl and soak in water to soften.;
  • For the cilantro lime dipping sauce:
  • Add the garlic cloves, fresh ginger, chili paste, cilantro, soy sauce, lime juice and pulp, water, and sugar, 1 ingredient at a time through the feed opening of a running blender. Allow "sauce" to rest for 10 minutes before tasting and adjusting seasoning with salt and pepper, as needed. Pour into individual dipping bowls.

Serve each chicken breast with a small bowl of the dipping sauce alongside. Gewürztraminer will provide a nice contrast to these strong, spicy flavors.

Yield 2 servings

Number Of Ingredients 14

1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/8 teaspoon salt
1/2 pound chicken-breast tenders
1/4 cup cilantro sprigs
2 tablespoons parsley sprigs
2 tablespoons blanched, slivered almonds
1/2 clove garlic
1/2 serrano chile pepper, seeded (wear plastic gloves when handling)
1/16 teaspoon salt
1 tablespoon lime juice
1 tablespoon extra virgin olive oil
1 tablespoon water
Sprig cilantro, for garnish

Steps:

  • Coat a grill rack or broiler-pan rack with cooking spray. Preheat the grill or broiler. In a cup, combine the chili powder, cumin, and salt. Cut two 1/2-inch-deep slashes in each side of the chicken tenders. Rub the spice mixture over the chicken, pressing it into the slits. Place the chicken in a baking pan and coat completely with cooking spray. Let stand for 10 minutes. In a food processor, combine the cilantro, parsley, almonds, garlic, chile pepper, and salt. Process until chopped. While the processor is running, add the lime juice and oil through the feed tube, stopping the machine once or twice to scrape down the sides of the container until the sauce is smooth. Pour the sauce into a bowl. Stir in the water, cover, and chill until ready to serve. Place the chicken on the prepared rack and grill or broil 6 inches from the heat, turning several times, for 15 minutes, or until a thermometer inserted in the thickest portion registers 170°F and the juices run clear. Serve with the sauce and garnish with the cilantro.
