Great to top a salad made with fresh baby greens, apples, candied toasted walnuts and a soft mild cheese. This recipe is a combo of a bunch of recipes - this one works the best for the above ingredients for my taste. I use unfiltered apple cider vinegar and fresh honey from the bee keeper from the farmers market but you can use any cider vinegar and honey that you have on hand.

GOLDEN BEET SALAD WITH CIDER VINEGAR DRESSING
This colorful golden beet salad is certain to win over even the staunchest beet skeptic. It comes from Sara Forte, a self-taught vegetarian chef who writes the Sprouted Kitchen blog. This beet salad was born of necessity when Ms. Forte's C.S.A. basket began overflowing with beets. "In California, beets are pretty easy to grow year-round, so I have them all the time," she said. "I've gotten kind of tired of roasting a big pan of vegetables, so I've been trying to find a different way to reinvent them."

Steps:
- Preheat oven to 425 degrees.
- Rinse the beets and cut off the greens, saving them for another use. Rub the beets with the olive oil, wrap in foil and place on a baking sheet (in case they leak). Bake until you can pierce through the middle of each beet with a knife, about 1 hour. Remove from the oven and let cool.
- While the beets are cooking, gently bring the vinegar to a boil in a small saucepan over medium heat until it is reduced by a third. Remove from the heat and let cool.
- When the beets are cool, use a paring knife to remove the skins, which should peel off easily. Cut each beet into thin slices using a sharp knife. Sprinkle them with salt and toss them in the reduced vinegar.
- Toss the mâche with the walnut oil and a few grinds of pepper. Top the mâche with the beets, walnut pieces and cheese. Use a spoon to drizzle the remaining vinegar on top, as desired. Serve immediately.

My husband loves apple cider vinegar, and he really loves this salad dressing! So do I! If you don't have honey on hand, just substitute with sugar. We like it on the tart side, but you can always adjust by decreasing the vinegar.

QUICK CIDER VINEGAR DRESSING
This is a salad dressing I came up with while following Dr. Simeons HCG Protocol. It is "legal" meaning it complies with all aspects of VLCD for those following the protocol. Anyone on this plan knows the VLCD phase is restrictive and can get boring - so spices are our friends! Great on spinach, lettuce, cucumbers, tomatoes, onions - you name it. Add your protein and away you go! You can really vary your flavor depending on the combination of spices you use - this is a basic grouping...I add/adjust depending on the flavors I crave when. I love this with grilled shrimp to make my salad...on cucumbers .... with grilled chicken. Even with lettuce and a grilled burger (4% Laura's lean beef in a lettuce wrap) and a side salad.

- Cook bacon until crisp. Drain, reserving 1-2 tablespoons grease. Crumgle bacon and set aside.
- Separate egg whites from yolks. In small bowl, mash yolks with fork and add mustard, vinegar and sugar. Mix well and set aside. Chop egg whites and set aside.
- Cut or tear spinach into large salad bowl. Toss with egg yolk dressing. Add bacon grease and toss again. Top with egg whites, almonds, onions, sliced mushrooms and bacon. Give a final toss.
- Serve immediately! Delicious! Not good refrigerated, because the spinach wilts, and gets "mushy".
