2 (10 ounce) packages frozen chopped spinach
1 (6 ounce) package chicken Stove Top stuffing mix
1 cup grated parmesan cheese
6 eggs, lightly beaten
3/4 cup butter, melted
salt, & pepper to taste

Steps:

  • Cook spinach according to instructions, drain in a sieve, use back of a wooden spoon to press the spinach against the sieve to get as much moisture as possible out In a bowl combine the spinach, stuffing mix,cheese, eggs, butter, salt& pepper Mix thoroughly& roll into small balls 3/4 to 1" size.
  • Place on a cookie sheet& freeze.
  • When frozen place in a plastic zip lock bag.
  • To serve place frozen balls on a cookie sheet and bake at 350F 10-15 minutes or until lightly browned If you are doing them fresh or thawed only bake for 7-10 minutes.
  • Serve hot.

20 oz frozen chopped spinach (defrosted, drained)
2 cups gluten free breadcrumbs
1 cups Parmesan cheese (grated)
1/2 cup unsalted butter (melted)
1 bunch green onions (chopped)
3 large eggs
1 cup white cheddar (shredded)
1/2 tsp salt
1/2 tsp black pepper
1 tsp garlic powder

Steps:

  • Preheat oven to 350°F.
  • In a large bowl mix together spinach, breadcrumbs, Parmesan, butter, green onions, eggs, cheddar, salt, pepper, and garlic.
  • Form into balls and place on a large greased baking sheet.
  • Bake for 20-25 minutes, or until spinach balls are golden brown and cooked through.

olive oil cooking spray (such as PAM®)
1 (16 ounce) package frozen chopped spinach, thawed and drained
1 cup finely chopped onion, or more to taste
5 tablespoons olive oil
1 teaspoon olive oil
2 large eggs, beaten
1 (16 ounce) package frozen kale, thawed and drained
1 cup dry seasoned bread crumbs
¼ cup grated Parmesan cheese, or more to taste
½ teaspoon sea salt
½ teaspoon garlic powder
½ teaspoon ground thyme
½ teaspoon dried rubbed sage
½ teaspoon dried rosemary
½ teaspoon dried oregano
2 pinches ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray or line with parchment paper.
  • Combine spinach, onion, 5 tablespoons plus 1 teaspoon olive oil, and eggs together in a large bowl. Add kale, bread crumbs, Parmesan cheese, sea salt, garlic powder, thyme, sage, rosemary, oregano, and black pepper; mix thoroughly using your hands.

½ cup grated Parmesan cheese
2 teaspoons garlic powder
½ teaspoon ground black pepper
1 teaspoon Italian seasoning
½ cup melted butter
3 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

Simple, quick and can be made ahead and frozen! Sometimes I add cooked crumbled bacon to them for a little something different.

2 packages chopped spinach, drained
4 eggs
2 cups breadcrumbs
1 large onion, chopped
1 cup grated swiss cheese
1/2 cup grated parmesan cheese
1/2 teaspoon garlic
1/2 teaspoon salt
1/2 teaspoon thyme

Steps:

  • Mix ingredients together. Chill 1 hour. Form into balls and bake at 350 degrees for 15 to 20 minutes.
  • Notes:
  • You can skip the garlic and thyme if you use Italian bread crumbs.
  • Be sure to squeeze as much liquid out of the spinach as you can or they will fall apart. You can use a strainer and push it against the sides with you hands or a piece of cheesecloth and twist it tightly.
  • I usually use the Kraft parmesan in the green can, but it works great with the fresh grated as well.
