Banana, walnut, and chocolate are always an amazing combination of ingredients, no matter what the delivery system, but it really doesn't get any better than in this ganache-frosted cupcake. A close second would be a chocolate-dipped frozen banana, rolled in walnuts, which is also a great treat, although much more awkward to eat in public. Feel free to omit the frosting and just enjoy these as muffins.

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
3 ripe bananas
2 tablespoons milk
¼ teaspoon vanilla extract
½ cup butter, softened
1 cup white sugar
2 large eggs
1 cup chopped walnuts
1 cup dark chocolate chunks
1 cup very hot, but not boiling cream
1 cup dark chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C) and line a 12-cup muffin tin with liners.
  • Whisk flour, baking powder, baking soda, and salt together in a bowl.
  • Mash bananas with milk and vanilla extract until smooth.
  • Mix butter and sugar together with a spatula until creamy. Whisk in eggs, 1 at a time, then whisk in the banana mixture. Add walnuts, chocolate, and the flour mixture. Mix batter with a spatula until no dry spots remain.
  • Fill muffin cups to the top with batter, then distribute excess batter as needed. Tap pan against the counter to expel any air bubbles.
  • Bake in the preheated oven until tops are lightly browned, about 25 minutes. Let cupcakes cool to room temperature, at least 20 minutes.

1 c sugar
2 eggs
1/2 c milk
2-3 ripe bananas, mashed
2 c all purpose flour (or for whole wheat, use whole wheat white flour)
1 tsp baking soda
1/2 tsp salt
2/3 c dark chocolate chips
2/3 c chopped walnuts

Steps:

  • 1. Cream shortening; gradually add sugar, beating at medium speed of electric mixer until light and fluffy.
  • 2. Add eggs, one at a time, beating well after each addition.
  • 3. Stir in mashed bananas, milk and vanilla.
  • 4. Combine flour, soda and salt; add to creamed mixture, mixing well.
  • 5. Stir in chocolate chips and walnuts.
  • 6. Spoon batter into a greased and floured 9 inch loaf pan. Bake at 350 for 55-60 minutes.
  • 7. Cool in pans for 5-10 minutes. Remove to wire wrack and cook completely.

2 cups (480 grams) whole milk
1 tablespoon (22.5 grams) vanilla bean paste
1/4 teaspoon (1 gram) kosher salt
1/2 cup plus 1 tablespoon (120 grams) sugar
1/4 cup plus 2 tablespoons (60 grams) cornstarch
5 large egg yolks (90 grams)
4 tablespoons (55 grams) unsalted butter, cut into 1-inch cubes

  • For the tart crust: Pulse the walnuts and sugar in a food processor until they are finely ground, about 6 pulses. Meanwhile, whisk the sugar, cornstarch and egg yolks in a medium bowl until smooth and combined. Whisking constantly, ladle half the hot milk into the egg yolk mixture, one ladle at a time. Continue until all the hot milk has been whisked in and the egg mixture is now warm.

  • For the assembly: Spread the fudge sauce over the cooled tart shell and top with an even layer of thinly sliced bananas (using about half). 2 stick butter, melted
11 oz whole grain peanut butter cheerios
1/4 tsp salt
2 large bananas, cut into 1/4 inch slices
2 c semi-sweet chocolate chips
14 oz sweetened condensed milk
1 tsp vanilla extract
1 c cashew pieces, finely chopped

Steps:

  • 1. Heat oven to 350 degrees F. (325 if using a convection oven)
  • 2. Place the cereal into the bowl of a food processor and pulse until it turns to crumbs. Pour melted butter over the crumbs and pulse to combine.
  • 3. Reserve approximately 1/2 cup of crumbs and press the remaining crumbs into the bottom of a 13 x 9 inch baking pan. Bake the crust for 8 minutes and remove from oven. Let cool slightly (about 5 minutes).

3 frozen bananas
2 cups milk
2 tablespoons cocoa powder
3 tablespoons peanut butter
1 cup ice
1 cup oats
1 banana
2 tablespoons peanuts
2 tablespoons shredded coconut
5 tablespoons granola
2 tablespoons chocolate chips
2 tablespoons almond

Steps:

  • Blend together the frozen bananas, cocoa powder, milk, peanut butter. Add
  • ice gradually and continue to blend until you reach desired texture.
  • Pour the smoothie mixture into two bowls and top with granola, coconut, almonds, chocolate chips, peanuts and banana. Enjoy!

This is a great way to use ripe bananas and it is an easy to make cake that incorporates all of the flavors of the "Chunky Monkey" icecream that many of us love. This makes a very moist tender healthy and yummy cake! You can use greek yogurt or plain if you cannot find greek.

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup vegetable oil
1 cup sugar
2 large eggs
4 large bananas, ripe and mashed
2/3 cup fat free Greek yogurt
1 teaspoon vanilla extract
4 ounces bittersweet chocolate chips, dark chocolate
1 cup walnuts, chopped, toasted (optional)
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 375 degrees F.
  • Grease 9 inch square cake pan.
  • Stir together flours, salt, baking soda, cinnamon, and baking powder.
  • Beat together oil, sugar, and eggs and vanilla until pale and fluffy.
  • Beat in bananas, and yogurt (mixture will look curdled).
  • With mixer at low spead add flour mixture until just mixed.
  • Toss the chocolate chips and walnuts in a tablespoon of flour to coat and then add to bater and fold in gently, do not overmix.
  • Spread batter evenly into pan and bakeuntil cake is golden and a wooden pick inserted into center of cake comes out clean, 40-45 minutes.
  • Cool cake on rack for 30 minutes and then turn cake out onto rack and cool completely, right side up.
  • Cake can be store for 2-3 days at room temperature.
  • This cake goes great with a dark chocolate frosting!

1 c sugar
1/2 c brown sugar
1/3 c sour cream
4 oz cream cheese softened
2 eggs
4 ripe bananas
2 tsp vanilla
2 c flour
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp salt
1 c chopped pecans,or walnut's 1 cup of toasted pecans
BROWN BUTTER FROSTING
1/2 c butter
4 c confection sugar
2 tsp vanilla extract
2-4 Tbsp milk
1/4 c toasted whole pecans for garnish

Steps:

  • 1. Toasted pecans in oven on a baking sheet until toasted about 10 minutes. Heat oven 375 degrees. Line 10x15 jelly roll pan or 13x9 pan with parchment paper. or butter the pans. I use parchment paper.If you use 9x13 pan the bars will be thicker like cake.
  • 2. Blend the sugar,sour cream,cream cheese,and eggs together until smooth.
  • 3. blend in bananas,and vanilla until incorporated.
  • 4. add flour,baking soda,salt with spoon. Mix well!!! add pecans and stir until blended.
  • 5. put in to pan and bake for about 30 minutes at 375 degrees or until pick comes out clean.
  • 6. Time to make your frosting. You can frost cake while warm. It actually works better. If frosting is thick add a bit more milk to it,
  • 7. melt butter in sauce pan until golden brown.remove from heat. add confection sugar,vanilla and milk and stir until blended well. If frosting is thick add more milk until you get a smooth frosting.
  • 8. now frost cake while it is warm.if you use the 9x13 pan for the cake use less of the frosting. cool and cut in to bars. I eat one while warm! LOL Enjoy with a cup of coffee or tea.

CHUNKY MONKEY PANCAKES

This recipe's got the whole banana and it's all wrapped up.

Your favorite pancake batter
1/2 cup chocolate chips
1 cup chopped walnuts
2 bananas, peeled
Ground cinnamon
2 tablespoons unsalted butter
Whipped cream, for serving
Confectioners' sugar, for serving

Steps:

  • 1. On a greased griddle or large skillet, ladle about 1/4 cup batter to make a large pancake, about 9 inches in diameter. Once bubbles start to appear on the surface, sprinkle half of the chocolate chips and walnuts on top of the pancake. Flip the pancake when golden brown, and cook until set. Transfer to a plate. Repeat to make another pancake.
  • 2. While the pancakes cook, sprinkle 1/2 teaspoon cinnamon or to taste over the whole bananas.
  • Melt the butter in a small frying pan over medium heat. When the foam subsides, place the bananas in the pan and saute, turning, until tender.
  • 3. Wrap each banana in a chocolate chip pancake. Garnish with whipped cream and confectioners' sugar.
