Are you tired of the same old choices in salad dressing? This is my new favorite! If you're like me and love Feta on almost anything, give this recipe a try.

Number Of Ingredients 9

5 oz feta cheese, crumbled
1/4 c buttermilk, half and half or milk
1/2 c sour cream
1/2 c mayonnaise
2 Tbsp white wine vinegar (not white vinegar)
2 clove garlic, chopped
1 green onion, chopped
1 tsp fresh dill or 1/4 tsp. dried
salt and pepper to taste (remember feta is salty)

Steps:

  • 1. Mash feta cheese and your milk choice with a fork until it resembles cottage cheese. Add remaining ingredients and mix well.
  • 2. Add salt and freshly ground pepper to taste.
  • 3. Serve over fresh mixed greens with cucumbers, tomatoes, red onion rings and kalamata or ripe olives.

This tangy creamy feta dressing is excellent over any combination of heirloom tomatoes, bell peppers, cukes, olives, fresh herbs, and (yes) more feta.

Yield Makes about 1¾ cups

Number Of Ingredients 9

½ cup mayonnaise, best quality such as Hellmann's or Duke's
½ cup sour cream
6 ounces feta cheese, crumbled
2 tablespoons milk (skim, low fat or whole)
1 clove garlic, roughly chopped
2 tablespoons chopped fresh dill
¼ teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon freshly ground black pepper

Steps:

  • Combine all of the ingredients in a food processor fitted with the steel blade. Process until well-blended and creamy. Taste and adjust seasoning, if necessary. Serve immediately or chill until ready to serve.
  • Make Ahead: This dressing will keep nicely in the refrigerator for up to 4 days. However, it will thicken up quite a bit in the fridge; before serving, whisk well then add a bit of milk, little by little, to thin to desired consistency.

A stellar summer salad. This recipe came from "Cooking Light" magazine SEPT 2007 edition. Its wonderful, light and low in calories.

Number Of Ingredients 10

4 cups water
3/4 lb wax bean, trimmed
3/4 lb green beans, trimmed
2 cups tomatoes, chopped
1 tablespoon sherry wine vinegar
2 teaspoons extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/2 cup fresh basil, thinly sliced
1/2 cup feta cheese, crumbled

Steps:

  • Bring 4 cups water to a boil in a medium saucepan. Cook the beans in boiling water for 5 minutes or until crisp-tender. Drain and rinse with cold water; drain.
  • Combine tomato and next 4 ingredients (through pepper) in a bowl. Divide beans evenly among 8 plates. Top each serving with 1/4 cup tomato mixture. Sprinkle each serving with 1 tablespoon slices basil and 1 tablespoon cheese.
  • You may also just mix and toss everything together.

I found this recipe years ago, but made it for the first time recently because it was on an index card I decided NOT to toss. This dressing was a HUGE hit at dinner.

1 cup plain yogurt
1 cup feta cheese
1 tablespoon olive oil
1 tablespoon fresh basil
2 teaspoons balsamic vinegar
1/4 teaspoon salt
1/4 teaspoon white pepper
1 garlic clove (optional)

Steps:

  • Combine yogurt, cheese and oil. Mix well.
  • Stir in basil, vinegar, salt and pepper.
  • Chill.
  • Alternatively-Put every thing in the blender and let 'er rip.

This makes a creamy, rich salad dressing that is also great as a dip. I found it at the Treasure Cave Cheese website.

5 ounces feta cheese
1/4 cup buttermilk or 1/4 cup milk
1/2 cup sour cream
1/2 cup mayonnaise
2 tablespoons white wine vinegar
2 cloves garlic, finely minced
1 green onion, finely chopped
1 teaspoon chopped fresh dill (or 1/4 tsp. dried)
1 teaspoon dried oregano
salt and pepper

Steps:

  • With a fork, mash the cheese and buttermilk together until it resembled the consistency of cottage cheese.
  • Add the remaining ingredients and blend well.
  • Add salt and pepper to taste.
  • Let sit, covered, in the refrigerator at least a few hours to blend flavors.
  • If it's too thick, just add a little milk until it's the texture you desire.
  • This is sooo good on a salad with fresh greens, tomatoes, cucumbers, slices of red onions, and kalamata or ripe olives.
