Chunky Chicken and Corn Chili with Spicy Citrus Salsa over Rice Recipe - (4/5) image

3 tablespoon vegetable oil, plus more for drizzling
1 1/2 cup white rice
Salt and black pepper
5 1/2 cup chicken stock
2 pound chicken tenders, cut into bite-size pieces
1 large onion, chopped
4 large garlic cloves, chopped
1 jalapeno pepper, seeded and finely chopped
1 red bell pepper, chopped
1 1/2 tablespoon chili powder
1/2 tablespoon ground cumin
2 tablespoon all-purpose flour
10 ounce box frozen corn kernels
2 oranges
Zest and juice of 1 lime
1/4 cup fresh cilantro leaves, coarsely chopped
1/2 cup fresh flat-leaf parsley, coarsely chopped

Steps:

  • - To make the rice, heat a medium pot with a tight-fitting lid over medium-high heat. - Add 1 tablespoon of the vegetable oil, once around the pan, then add the rice; stir to coat the rice in the oil and toast lightly, for about 1 minute. - Season with salt and pepper, than add 2 1/2 cups of the chicken stock and bring to a bubble. - Cover the pot, reduce the heat to a simmer, and cook for 15 to 18 minutes, until the rice is tender. - To make the chili, preheat a medium soup pot over medium-high heat with the remaining 2 tablespoons of oil. - Add the chunked up chicken pieces and season with the salt and pepper. - Brown the chikcen on all sides for about 3 to 4 minutes. - Remove the chicken from the pot to a plate and reserve. - Add a little drizzle of oil to the pot and add the onions, garlic, three fourths of the chopped jalapeno, and the bell peppers. - Season with the chili powder, cumin, salt and pepper and cook for about 3 minutes, stirring frequently. - Dust the vegetables liberally with the flour and continue to cook for 1 minute. - Stir in the remaining 3 cups of the chicken stock to the vegetables, bring up to a bubble, and then stir in the corn and add the chicken back to the pot. - Turn the heat down to medium low and summer gently for 10 minutes. - While the chili is simmering, make the spicy citrus salsa. - With a paring knife, cut the peel and pith from the oranges. - Cut the peeled oranges into disks and then cut the disks into quarters. - Toss the oranges in a small mixing bowl with the remaining jalapeno, the lime zest, a little salt and pepper and about 1 tablespoon of the chopped cilantro. - Stir to combine. - Once the chili has simmered for 10 minutes, turn off the heat and add the lime juice, the remaining cilantro, and the chopped parsley. - Taste and check for seasoning and add more salt and pepper if needed. - If you want a little more heat, add a couple of dashes of hot sauce. - Fluff the tender rice with a fork and then divide it among 4 serving bowls. - Top each portion of rice with some of the chili and garnish with a heaping spoonful of the spicy citrus salsa.

2 cans (14 1/2 ounces each) diced tomatoes with green chilies, undrained
1 can (15 ounces) tomato sauce
1 envelope (1 1/4 ounces) mild chili seasoning mix
2 cans (15 1/2 ounces each) hominy, drained
Sour cream, if desired
Cilantro, if desired

Steps:

  • Place chicken in 3 1/2- to 4-quart slow cooker. Mix tomatoes, tomato sauce and chili seasoning; pour over chicken.
  • Cover and cook on low heat setting 7 to 9 hours or until juice of chicken is no longer pink when centers of thickest pieces are cut.
  • Stir to break up chicken. Stir in hominy. Cover and cook on low heat setting 15 minutes until heated through. Serve chili with sour cream and cilantro.

1 (15 ounce) can light kidney beans, drained, rinsed
1 1/2 cups mild thick & chunky salsa
1 (16 ounce) can no-salt-added tomato sauce
2 tablespoons chili powder
1 1/2 lbs boneless skinless chicken thighs, cut into bite-size pieces
1 onion, chopped
1 cup frozen corn
1 cup kraft finely shredded four-cheese Mexican blend cheese

Steps:

  • COMBINE beans, salsa, tomato sauce and chili powder in slow cooker. Top with chicken, onions and corn. (Do not stir.) Cover with lid.
  • COOK on LOW 6 to 8 hours (or on HIGH 4 to 5 hours).
  • STIR just before serving. Serve topped with cheese.

Chili is my favorite comfort food and, in my family, we always serve it with "Recipe #199381". I saw this recipe on 30 Minute Meals this morning and although it is a basic chili recipe, it includes an interesting addition...serving the chili with herbed polenta. I haven't made this yet so I welcome your reviews and comments. :)

1 tablespoon extra virgin olive oil
3/4 lb chorizo sausage, chopped
2 lbs ground chicken
3 tablespoons chili powder
1 tablespoon cumin
1 onion, chopped
3 garlic cloves, finely chopped
1 red bell pepper, chopped
1 (15 ounce) can kidney beans, drained
1 (12 ounce) bottle beer
1 (28 ounce) can diced tomatoes (fire roasted)
salt
6 cups chicken stock
2 cups quick-cooking polenta
2 tablespoons butter
2 scallions, finely chopped
2 tablespoons thyme leaves, chopped

Steps:

  • Heat a large, deep skillet over medium-high heat with 1 T olive oil.
  • Add chorizo and render its fat, 2 minutes.
  • Push the chorizo off to the sides of the skillet and add ground chicken. Brown and crumble the chicken, cooking 5-6 minutes. Season the chicken with chili powder and cumin while it cooks.
  • Combine the onion, garlic, peppers and beans to meats and cook another 5-6 minutes.
  • Stir the beer into the chili and reduce the liquid a minute then add the tomatoes and heat though. Season the chili with salt, to taste, and reduce heat to low.
  • Bring 6 cups stock to a boil in a medium pot, stir in polenta and keep stirring until the polenta masses and thickens to a porridge, 2-3 minutes.
  • Stir in butter, scallions and thyme and season with salt, to taste.
  • Fill bowls halfway with polenta and make a well in the center. Fill up bowls with chili and serve.

1 (15-ounce) can red beans, drained
1 bottle beer

6 cups chicken stock
2 cups quick cooking polenta

Steps:

1 (10 ounce) can rotel (2 if you want more heat)
1 (14 1/2 ounce) can diced tomatoes, undrained
1 medium yellow onion, chopped
1 (1 ounce) package chili seasoning mix
2 (15 ounce) cans ranch style beans
1/2-1 cup shredded monterey jack and cheddar cheese blend
chives (to garnish)
sour cream, if desired

Steps:

  • Place chicken thighs (mine were frozen) in bottom of 5 quart slow cooker.
  • Mix rotel, diced tomatoes and chili seasoning. Pour over chicken.
  • Place chopped onions over tomato mixture.
  • Pour both cans of ranch beans on top.
  • Cook on low until chicken is tender.
  • Shred chicken and return to pot for remainder of cooking time.
  • Garnish with chives, shredded cheese and sour cream if desired.

1 1/4 lbs canned black beans, with liquid

1/2 lb canned beer or 1/2 lb subtitute chicken stock
3 tablespoons olive oil
1 teaspoon olive oil
3/4 red bell pepper, diced
3/4 sweet onion, chopped
4 tablespoons sliced black olives
2/3 cup frozen corn kernels
2 garlic cloves, minced
1 teaspoon cumin seed
2 teaspoons chili powder
3/4 teaspoon dried oregano
1 1/4 teaspoons cilantro leaves, minced
1/3 cup cheddar cheese, grated
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a heavy bottomed pot, heat 1 tsp olive oil.
  • add chicken and saute until no longer pink, about 4 minutes each side.
  • remove chicken from pot, wipe pot dry.
  • heat remaining oil and saute onion, garlic, bell pepper and cumin seeds for 5 minutes,stiriing often.
  • stir in chili powder, oregano, tomatoes, tomato sauce, beer, salt and pepper.
  • add chicken back to pot.
  • cover and simmer on low heat for 20 minutes.

  • stir in cilantro.

2 lbs boneless skinless chicken breasts, diced
1 large yellow skinned Spanish onion, chopped
1 -2 serrano pepper, pepper(s) seeded and minced
4 garlic cloves, minced
2 tablespoons ground cumin
5 dashes cayenne pepper sauce (i.e. Tabasco, Red Hot)
1/3 cup chopped fresh cilantro
1 (14 ounce) can fat-free low-sodium chicken broth
2 (15 ounce) cans white kidney beans, drained
coarse salt
shredded cheddar cheese, and crushed tortilla chips for topping

Steps:

  • Heat oil in pot over medium high heat.
  • Add chicken and cook for five minutes or until white; keep chicken moving.
  • Add minced onion & hot pepper(s), garlic, seasonings, and cilantro.

2 large yellow onions
5 poblanos
2 pounds chicken
4 tablespoons butter
3 3/4 teaspoons kosher salt
2 tablespoons chili powder
1 1/4 cups water
28 ounces whole peeled tomatoes

Steps:

  • Dice 1 onion as finely as possible. Chop the other in larger, ½-inch or so chunks. Dice 2 poblanos as finely as possible. Chop the remaining 3 in larger, ½-inch or so chunks. We'll come back to these soon.
  • Chop chicken into 1-inch chunks. (Boneless, skinless chicken thighs can be sort of wonky and misshapen, so don't worry about perfect cubes-just try to get them as even as possible.)
  • Add 2 tablespoons butter to a large, wide pot and set over medium-high heat. When the butter has melted and the pan is very hot, add the chicken. Sprinkle with 3/4 teaspoon kosher salt and let cook undisturbed for about 5 minutes, until the bottoms are beginning to brown.
  • Give the chicken a toss with a wooden spoon, then add the chili powder. Stir to coat and cook for about 30 seconds, just to toast the chili powder.
  • Lower the heat to medium and add the finely diced onion and poblanos to the pan. Season with 1 teaspoon kosher salt and stir. Cook, stirring occasionally and adding small splashes of water as needed to prevent any scorching, for about 10 minutes, or until the vegetables have softened.
  • Add the rest of the vegetables to the pan and season with another 1 teaspoon salt. Cook in the same way (stirring and watering as needed), for about 10 minutes, or until the vegetables have softened.
  • Add 1 ¼ cups water to the pan, then the can of tomatoes and their juices, crushing each tomato in your fist before you drop it in. Stir in the remaining 2 tablespoons butter and 1 teaspoon salt. Bring to a boil and cook, stirring occasionally, for 10 to 15 minutes, until the consistency is as thick as you like it.
  • Serve hot with whatever toppings you want.
