2 lbs beef chuck blade steaks, 1 1/2 inch thick
1/3 cup vegetable oil
1/3 cup wine vinegar
2 garlic cloves, chopped
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon rosemary
1/4 teaspoon fresh ground pepper
hickory chips

Steps:

  • Place meat in plastic bag and set in large bowl. Combine remaining ingredients, except chips; and pour into bag over meat. Close bag tightly around meat. Place in refrigerator and marinate 6 to 8 hours or overnight.
  • Build a medium fire in a covered bbq. Arrange coals at back and sides of firebox. Place a 12 x 10 inch drip pan made of heavy duty foil in center of firebox under grill and fill with water. Sprinkle some of the dampened chips over coals. Remove meat from marinade, reserving marinade.
  • Place meat on grill over drip pan. Close hood and cook to medium doneness (25 minutes on each side) brushing occasionally with marinade on each side.
  • Add more hickory chips every 20 minutes.
  • Season meat to taste with salt and pepper if desired.

1/4 ts Black pepper

1/3 c Flour
1 1/2 lb Round steak cut in serving

Steps:

  • Tenderize steak by pounding with a meat mallet on each side. Mix flour and pepper and dredge steak in mixture. Heat oil in heavy pan until hot and add steak. Cover and fry over medium heat about 15 minutes. Remove cover and cook steaks until browned on all sides. Remove steaks and salt to taste at once. Drain all but 4 tablespoons fat and crispies. To make cream gravy stir in 4 tablespoons flour, ? teaspoon salt and ? teaspoon black pepper. Stir until a smooth paste forms. Add 2 cups milk (or 1 cup canned milk and 1 cup of water*). These are great! They are kind of like a pork tenderloin sandwich, but made with a beef patty instead of pork. You can use precooked breaded beef patties or precooked breaded chicken-fried steak patties in this as well. Look for them in the freezer section (heat and eat).

1 (3 -4 ounce) pre-cooked breaded beef schnitzel
1 large hamburger bun
2 slices ripe tomatoes
2 pieces iceberg lettuce
1 tablespoon mayonnaise

Steps:

  • Heat beef patty by pan frying in shallow oil or baking in oven at 350F 10-12 minutes or until crispy, whichever is directed for your patty or whichever you prefer.
  • Assemble ingredients on warmed or toasted bun and serve with chips, fries, onion rings, etc.
