1-1/2 pounds bulk spicy pork sausage
1 medium green pepper, chopped
1 medium onion, chopped
1 can (31 ounces) pork and beans
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (15-1/2 ounces) black-eyed peas, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) chickpeas, rinsed and drained
1-1/2 cups ketchup
3/4 cup packed brown sugar
2 teaspoons ground mustard

Steps:

  • In a large skillet, cook and crumble sausage over medium heat until no longer pink; drain. Add green pepper and onion; saute until tender. Drain. Add remaining ingredients., Pour into a greased 13x9-in. baking dish. Cover and bake at 325° for 1 hour. Uncover; bake 20-30 minutes longer or until bubbly.

1 lb dried navy beans or 1 lb pinto beans
6 cups water
1/4 lb salt pork, diced
1 large onion, chopped
1 clove garlic, minced
1 large green bell pepper, chopped
1 1/2 lbs chuck steaks, cubed
1 1/2 teaspoons salt
1/2 teaspoon oregano, crumbled
1/4 teaspoon red pepper
1/4 teaspoon ground cumin
8 ounces tomato sauce

Steps:

  • Pick over beans and rinse well.
  • Combine beans and water in a large kettle.
  • Bring to boiling; cover; cook 2 minutes.
  • Remove from heat and let stand 1 hour then pour into crockpot.
  • Brown salt pork in a large skillet.
  • Remove with a slotted spoon to crockpot.
  • Sauté onion, garlic and green pepper in pan drippings; remove with slotted spoon to crockpot.
  • Brown beef, a few pieces at a time in pan drippings; remove to crockpot with slotted spoon.
  • Stir in salt, oregano, red pepper, cumin and tomato sauce.
  • Add more water, if necessary to bring liquid level above beans.
  • Cook on LOW for 10 hours or on HIGH for 6 hours, or until beans are tender.

1 lb lean or extra-lean ground beef
1/2 c chopped onion
1/2 c chopped green bell pepper
1 can(s) (15 oz) baked beans, undrained
1 can(s) (15 oz) dark red kidney beans, drained, rinsed
1 can(s) (15 oz.) black beans, drained, rinsed
1 can(s) (8 oz) tomato sauce
1/3 c barbecue sauce
1/2 tsp salt

Steps:

  • 1. Preheat oven to 375F. Combine ground beef, onion and bell pepper in a large skillet. Cook over medium-high heat, stirring frequently, until beef is browned and crumbly, about 8 minutes; drain.
  • 2. Combine cooked beef mixture, baked beans, kidney beans, black beans, tomato sauce, barbecue sauce and salt in a 3-quart glass, casserole dish.
  • 3. Cover dish. Bake 30 minutes. Uncover dish; bake until mixture is bubbly and slightly thickened, 15-20 minutes longer.

Another of my husband's favorites. I got this recipe out of a cookbook called "Dining with Pioneers". It's apparently a collection of recipes by a group from Tennessee. This one was submitted by someone named Mae Hallum from Memphis.

1/2 lb bacon
3 lbs ground beef
3 cups chopped onions
1 cup chopped celery
2 beef bouillon cubes
2/3 cup water, boiling
1 1/2 tablespoons garlic, minced
1 1/2 cups catsup
3 tablespoons mustard
1/2 teaspoon salt
1/2 teaspoon pepper
2 (29 ounce) cans baked beans with molasses

Steps:

  • In a Dutch oven or other large, heavy, oven proof pot fry bacon until crisp and set aside.
  • Drain fat.
  • In the same pan, cook ground beef, onion and celery until meat in brown and the onion and celery are tender.
  • Meanwhile, dissolve bouillon cubes in boiling water.
  • Add bouillon to meat mixture with the remaining ingredients and mix well.
  • Cover and bake 1 hour and 15 minutes in a 375 degree oven until hot and bubbly.
  • Crumble bacon over beans and serve.
  • This makes a LOT of beans. I usually halve the recipe.

This is a recipe that has been in my family for years. It's a great combination of sweet and spicy! If you like your beans saucy, you can double the sauce mixture.

½ pound bacon, cut into small pieces
1 onion, cut into small pieces
2 (15 ounce) cans kidney beans, rinsed and drained
½ cup ketchup
½ teaspoon dry mustard
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 dash hot pepper sauce (such as Tabasco®)
1 pinch salt
1 pinch ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large pot over medium-high heat. Cook and stir bacon and onion in pot until the onion is tender, 7 to 10 minutes; add ketchup, dry mustard, brown sugar, Worcestershire sauce, hot pepper sauce, salt, and black pepper.
  • Reduce heat to low and cook bean mixture at a simmer until hot, about 10 minutes; pour into a large casserole dish.
  • Bake in preheated oven until bubbling on top, 10 to 15 minutes.

This is a recipe that my Mom fixed for all of us at home. This is from her old Betty Crocker cookbook circa 1971.

1/2 lb bacon
3 lb ground beef
3 c finely chopped onion
1 c finely chopped celery
2 beef bouillon, cubes
2/3 c boiling water
1 1/2 clove garlic, minced
1 1/2 c ketchup
3 Tbsp prepared yellow mustard
1 1/2 tsp salt
1/2 tsp pepper
2 can(s) (29 oz. each) molasses style baked beans

Steps:

  • 1. Heat oven to 375 degrees.
  • 2. In Dutch oven, fry bacon until crisp; set aside. Drain fat from pan.
  • 3. In same pan, cook and stir ground beef, onion and celery until meat is brown and onion and celery are tender. (Drain excess fat if needed).
  • 4. Dissolve bouillon cubes in boiling water; stir bouillon and remaining ingredients into meat mixture.
  • 5. Cover; bake 1 hour 15 minutes or until hot and bubbly. Crumble bacon; sprinkle over beans.
