HUNGARIAN CHRISTMAS MASHED POTATOES

I found reference to this recipe at a Budapest Tourist Guide. There it was called 'Mashed potatoes with mustard seeds and deep fried onion'. I couldn't find a recipe but I did sort of find the components at various websites then I combined them & reworked it a bit. The onions need to be very soft & caramelized. This looks like a bowl of sweet potatoes with all that paprika! I would love some feedback!

1 tablespoon black mustard seeds
2 tablespoons butter
3 large onions (coarsely chopped)
2 tablespoons sweet Hungarian paprika
10 potatoes, peeled and quartered
1/2 cup butter (1 stick)
3/4 cup sour cream
1 egg
salt, to taste

Steps:

  • Boil peeled and quartered potatoes in salted water till tender.
  • While potatoes are cooking --.
  • Heat skillet. Add mustard seeds. Cover & shake until the popping slows. Add the butter & when melted, add the onions. Cover and cook over low heat for 15 minutes. Uncover, continue cooking over low heat for until very soft, dark & caramelized. Add the paprika. Stir over lowest heat for a minute or two until the paprika has lost its raw taste. Set aside.
  • Back to the potatoes --.
  • Strain off cooking water & mash. Add 1/2c of the sour cream and blend into potatoes. Add the egg into the potatoes and whip. Add the stick of butter & the remaining sour cream to taste. Stir in the onion mixture. Add salt to taste.

5 lbs potatoes (approximately 9 large)
8 oz. low-fat cream cheese
1 C low-fat sour cream
2 t onion salt
1 t salt
pinch pepper
2 T butter

Steps:

  • Cook and mash potatoes. Add all ingredients except butter and combine. Put into large greased casserole. Dot with butter. Bake, covered, at 350 F for 30 minutes.

This my go-to holiday side recipe whenever I roast a turkey. Wonderfully crispy with just a hint of chicken flavor.

6 large baking potatoes, peeled and cut into thick slices
¼ cup turkey drippings
1 teaspoon paprika
¼ teaspoon salt
1 pinch ground black pepper, or more to taste

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until just barely tender, 10 to 12 minutes. Drain.
  • Preheat the oven to 325 degrees F (165 degrees C).
  • Combine turkey drippings, paprika, salt, and pepper in a 9x13-inch baking dish. Add potatoes and toss to coat.
  • Bake in the preheated oven, turning occasionally, about 40 minutes. Increase temperature to 425 degrees F (220 degrees C) and continue baking until golden, turning occasionally, 10 to 15 minutes.

20 lbs Yukon Gold potatoes cut/diced into 1/2"- 3/4" cubes
2-3 Qts of heavy whipping cream cream to barely cover potatoes. a few sticking out is fine.
2 T salt or more to taste
seems like a lot but better more than to run out.
see note above.

Steps:

  • Place a smaller pot into a larger making sure the smaller does not touch the bottom of the larger (the handles should rest on rim of larger pot), fill larger container so water comes up with in 2" of rim and cubed potatoes in smaller. Basically, you are making a double boiler. In this recipe i used a 12qt in a 24qt, but you can use any sizes as long as the smaller doesnt touch the bottom of the larger. alternately you can place a small cooling rack or trivet on the bottom of the larger to keep it from coming in contact with the bottom. Add heavy whipping cream and salt until just a few potatoes peak through, heat to high until water starts to boil and turn down to med so water simmers briskly but not a rolling boil. (the water NOT the potato / cream mixture). Continue to double boil for 2hrs or potatoes are tender(size of dice determines cooking time) Potato cream mixture should be about 175-180* during cooking. Stir every 15 min or so potatoes stay evenly heated and cook until potatoes are tender and a pairing knife pierces cubes with no resistance. taste test to desired mouth feel after a couple hours Salt to taste. Optional Garnish with chopped parsley or chives. These can be held for some time off heat and reheated again over low ( preferably in dbl boiler) until warmed through.

Traditional marzipan potatoes can be made easily in the home, for gift-giving from the kitchen, or for visitors. They are made from ground almonds and powdered sugar. Although there are recipes which call for raw egg whites, I am giving you a recipe without them, to avoid problems associated with raw eggs. Marzipankartoffeln are traditionally given to friends in little bags or placed on the "Adventsteller" (plate of goodies set out at Christmastime). Small batch, makes 2-3 dozen marzipan potatoes (less than 1 inch diameter each).

1 1/3 c. ground almonds (125 grams)
1 1/8 c. powdered sugar (125 grams)
3 T. rosewater or orange petal water (traditional flavorings) OR cointreau, or similar liqueur
A few drops of bitter almond aroma OR 1 tsp. vanilla
4 T. cocoa powder
1 tsp. cinnamon

Steps:

  • Advance Preparation: You can buy ground almonds as almond flour or almond meal. Last I checked, it cost about $16 US per pound. You can also blanch 2 cups of raw almonds, slip their skins and grind them yourself in a food processor. Depending on your patience and the food processor, your product might be slightly coarser than the purchased almond meal. It doesn't stick together quite as well, but you can still make it work.
  • If you want to keep the fiber in your candy, do not blanch the almonds. With the cocoa coating, the traditional white marzipan color doesn't matter as much.
  • Making the potatoes: Mix all ingredients in the food processor or by hand until well blended and sticky. Add additional liquids a little at a time until the dough clumps together. Remove from food processor.
  • Using one tablespoon or less of the marzipan, form small potato-like balls. Some people form perfectly smooth, round balls instead of potato shapes.
  • Mix the cocoa powder and cinnamon together in a bowl. Roll the balls in the cocoa and cinnamon and set apart on parchment paper to dry.
  • Note: If you want the potatoes to be very traditional, use 1 egg white with the above recipe, and reduce the rosewater/liqueur.
