Delicious and fluffy Belgium waffles for Christmas morning, plated up they look just like a tasty Christmas tree.

2 eggs, separated
½ cup sunflower oil
1 teaspoon vanilla extract
1 ¾ cup whole fat milk
2 cups flour (all purpose or plain flour)
2 tablespoons sugar
4 teaspoons baking powder
¼ teaspoon salt
1 teaspoon green gel food coloring
1 cup icing (powdered) sugar
½ teaspoon vanilla extract
2 to 3 tablespoons whole milk
Rainbow sprinkles for decoration

Steps:

  • 1. Preheat the waffle iron. See above how we manage this on Christmas morning. 2. Add the egg yolks to a large bowl and place the egg whites in a separate bowl. Add the oil, vanilla, and green food coloring to the bowl with the egg yolks. Whisk to combine. 3. Then add the milk, flour, sugar, baking powder, and salt to the yolk mix. Whisk until just combined. 4. Beat the egg whites until light and frothy. Pour into the batter and fold in until just combined. 5. Spray the waffle iron with nonstick cooking spray and pour the batter on the bottom plate. Cook for 4 to 5 minutes, until the waffle iron stops steaming. Continue cooking until all the batter has been used. 6. While the waffles are cooking, make the glaze by whisking together the powdered sugar, vanilla, and milk until smooth and well combined. 7. Cut the waffles into quarters and stack three quarters on the plate to resemble a tree. Drizzle glaze over the top of the waffles and decorate with sprinkles.

2 cups all-purpose flour
3/4 cup sugar
3-1/2 teaspoons baking powder
2 large eggs, separated
1-1/2 cups whole milk
1 cup butter, melted
1 teaspoon vanilla extract
Sliced fresh strawberries or syrup

Steps:

  • In a bowl, combine flour, sugar and baking powder. In another bowl, lightly beat egg yolks. Add milk, butter and vanilla; mix well. Stir into dry ingredients just until combined. 1/2 cup raisins
1/2 cup dark rum
2 cups pure maple syrup
2 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup packed brown sugar
1/2 cup chopped pecans
3 eggs, separated
2 -2 1/2 cups buttermilk
6 tablespoons unsalted butter, melted
2 very ripe bananas, peeled,and pureed

Steps:

  • Soak the raisins in rum for 30 minutes.
  • In a small saucepan bring to a simmer the maple syrup.
  • Add raisins and rum.
  • Stir and keep warm.
  • Sift together the flour, baking powder, baking soda, salt and brown sugar into a large bowl.
  • In another bowl beat the egg yolks.
  • Add buttermilk, butter and banana puree.
  • Stir in the dry ingredients just until moistened.
  • In a separate mixing bowl whip the egg whites until stiff peaks form.
  • Fold egg whites into batter.
  • Pour onto a hot waffle iron and cook until golden brown, about 4-5 minutes, Serve with warm rum-raisin syrup.

1 (.25 ounce) package active dry yeast
¼ cup warm milk (110 degrees F/45 degrees C)
3 egg yolks
2 ¾ cups warm milk (110 degrees F/45 degrees C)
¾ cup butter, melted and cooled to lukewarm
½ cup white sugar
1 ½ teaspoons salt
2 teaspoons vanilla extract
4 cups all-purpose flour
3 egg whites

Steps:

  • In a small bowl, dissolve yeast in 1/4 cup warm milk. Let stand until creamy, about 10 minutes.
  • In a large bowl, whisk together the egg yolks, 1/4 cup of the warm milk and the melted butter. Stir in the yeast mixture, sugar, salt and vanilla. Stir in the remaining 2 1/2 cups milk alternately with the flour, ending with the flour. Beat the egg whites until they form soft peaks; fold into the batter. Cover the bowl tightly with plastic wrap. Let rise in a warm place until doubled in volume, about 1 hour.
  • Preheat the waffle iron. Brush with oil and spoon about 1/2 cup (or as recommended by manufacturer) onto center of iron. Close the lid and bake until it stops steaming and the waffle is golden brown. Serve immediately or keep warm in 200 degree oven.
