I certainly cannot take credit for this recipe but it is a Christmas classic. There are lots of little things to personalize this recipe. I have suggested using red and green bell peppers because they are Christmas colors! I also use grated cheese and spread it over the Canadian bacon instead of cheese slices. I have used regular bacon in this recipe, but I find that it overpowers the rest of the flavors. Make this tasty breakfast dish the night before and just pop it in the oven on Christmas morning; let it cook while you open gifts and sip your rum-spiked coffee!

16 slices bread, crusts removed - divided
16 slices Canadian bacon
16 slices sharp Cheddar cheese
6 large eggs
½ teaspoon salt
½ teaspoon ground black pepper
1 teaspoon dry mustard
¼ cup minced onion
2 tablespoons diced green bell pepper
2 tablespoons diced red bell pepper
2 teaspoons Worcestershire sauce
1 dash hot sauce
3 cups whole milk
½ cup butter, melted
1 cup crushed corn flakes cereal

Steps:

  • Butter a 9x13-inch baking dish. Cut and fit 8 slices of bread to fit over entire bottom of dish. Cover bread with slices of Canadian bacon and sharp Cheddar cheese. Cut and fit remaining 8 slices of bread to completely cover bacon and cheese.
  • Whisk eggs with salt and black pepper in a bowl. Whisk dry mustard, onion, diced green and red bell pepper, Worcestershire sauce, and hot sauce into eggs. Whisk in milk until egg mixture is smoothly combined. Pour egg mixture evenly over the casserole. Cover the dish and refrigerate overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour melted butter evenly over the casserole and sprinkle corn flake crumbs over the top.
  • Bake in the preheated oven until set and lightly browned, about 1 hour. Let casserole stand for 10 minutes before serving.

1 (5.5 ounce) box Idahoan® Steakhouse Cheesy Hashbrowns
½ cup buttermilk
1 cup sliced bacon, diced
1 small onion, diced
3 large eggs eggs, beaten
½ cup Swiss cheese, shredded

Steps:

  • Preheat oven to 450 degrees F.
  • Prepare Idahoan Steakhouse Cheesy Hashbrown Potatoes, following packaging directions, replacing the 1/2 cup milk with 1/2 cup buttermilk.
  • In a medium size skillet, cook bacon and onion until bacon is crisp. Drain and set aside to cool slightly.
  • Stir in eggs, Swiss cheese, and bacon-onion mixture.
  • Bake uncovered for 25 minutes.
  • Sprinkle crunchy onion topping on top of potatoes. Let stand 5 minutes then serve.

1 lb ground breakfast sausage, any flavor
1 red bell pepper, chopped
2 cups cremini or white mushrooms, sliced
2 teaspoons salt
pepper to taste
1 loaf (8 cups, 1-inch cubes) Italian bread, Ciabatta or Baguette (crusty bread)
1 1/2 dozen (18) large eggs
1 cup whole milk
1 1/2 cups cheddar cheese, shredded

Steps:

  • Heat oven to 375°F. Brown the sausage in a saute pan over medium heat for 3 minutes, breaking it into bite size pieces. Add the mushrooms, bell peppers, 1 tsp salt and pepper. Cook an additional 5 minutes. Let cool. Drain.
  • In a bowl, beat the eggs and milk. Add remaining salt and cheese; stir to combine.
  • Add the bread cubes and cooled sausage mixture to a greased 13×9-inch baking dish. Toss to combine.
  • Pour the egg mixture over the bread and sausage: press the bread mixture down gently to soak up some of the egg mixture.
  • Cover the dish with foil and bake for 30 minutes; uncover and bake an additional 20 minutes. Serve immediately.

1 dozen egg
2 cups cheddar cheese
1 onion, finely chopped
1/4 cup butter
1 cup milk
1 teaspoon dry mustard
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon black pepper
2 teaspoons salt
1 (24 ounce) frozen hash brown potatoes
1 lb bacon
2 cups cubed ham

Steps:

  • Grease a 9x13 deep dish casserole with butter.
  • Cut bacon in one inch strips and fry till crisp, drain on paper towels to remove excess grease.
  • Add chopped onion to bacon drippings in pan and sauté until clear.
  • In a large bowl beat together eggs, milk, seasonings.
  • Add to the bowl the frozen hash browns, sautéed onion, cheese, bacon, cubed ham and mix well.
  • Pour into greased 9x13 pan.
  • Cover tightly with plastic wrap and refrigerate over night.
  • When ready to bake, preheat oven to 350 degrees.
  • Remove casserole from refrigerator and remove plastic wrap.
  • Bake at 350 degrees for 45-1 hour just until center is set (no wiggle but don't over bake!).
  • Let set for 5-10 minutes and serve in slices.
