This is one of my favorite banana breads. I love bananas, but the ones available in the US are not as tasty as the Brazilians, so banana bread is my way of enjoying this fruit. I am not criticizing, it is just that bananas grow all over Brazil, from North to South, so it is just obvious we have better ones there! ;-)

1/2 cup butter or 1/2 cup margarine, softened
1 cup sugar
2 eggs
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 1/4 cups ripe bananas, mashed (about 3 medium)
1/2 cup walnuts, chopped
1/2 cup semi-sweet chocolate chips
1/4 cup maraschino cherry, cut in half (or dried apricots, cranberries, pineapple, etc.)

Steps:

  • Cream butter and sugar in large mixing bowl.
  • Add eggs one at a time, beating well after each addition.
  • Sift together flour, baking soda, baking powder and salt. Gradually addo to creamed butter.
  • MIx in bananas; fold in walnuts, chocolate and cherries.
  • Pour into greased 9" x 5" x 3" loaf pan. Bake at 350 F for 60 minutes, until toothpick inserted in center of loaf comes out clean.
  • Cool 10 minutes before removing from pan to wire rack.

Exceptionally moist and not too "cakey", this is lightly spiced with Indian spices - cinnamon, mace and ground ginger. Serve warm with vanilla ice cream and candied walnuts. Number of servings is an estimate - makes 1 loaf.

1/2 cup unsalted butter, softened
1 cup sugar
2 large eggs, well beaten
3 ripe bananas, broken into bits
1 1/4 cups all-purpose flour
1/4 teaspoon ground cinnamon
1/8 teaspoon ground mace
1/8 teaspoon ground ginger
1/2 teaspoon salt
1 teaspoon baking soda

Steps:

  • Preheat the oven to 350°F Butter and flour one 8 ½ x 4 ½" loaf pan.
  • Cream the butter with the sugar until light and fluffy.
  • Add the eggs and beat until combined. Beat in the bananas.
  • Combine the flour, spices, salt and baking soda in another bowl, then fold in the dry ingredients into the creamed mixture just until combined; do not over mix.
  • Pour into the pan and bake until a tester stuck in the middle of the banana bread comes out clean, 50-60 minutes.
  • Let cool on a rack before removing from the pan.

This dish is similar to one I ate at Shoney's. It makes a great holiday dish. Minimal prep time and no cooking time, but it does need to marinate overnight to taste best. Bananas shouldn't be overly ripe. you can add more bananas to the juice as you eat them .

1/2 cup grenadine

Steps:

  • Layout bananas in presentation dish.
  • Mix liquid ingredients. Pour over bananas.

These cookies were voted an all-time favorite in our family. They can be made any time of the year-bring them to parties, keep them for your family, save one for yourself, save 10 for yourself, whatever you want! I promise everyone will love this delicious balance of sweet but not too sweet. Eat hot, eat cold, eat these whenever. They can be stored in the freezer or in a container.

4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 cup mashed ripe banana
½ cup sour cream
1 teaspoon vanilla extract
1 cup margarine
1 cup white sugar
2 large eggs
1 teaspoon baking soda
1 cup chopped walnuts
½ cup unsalted butter
1 cup brown sugar
¼ cup milk, or more as needed
2 ½ cups powdered sugar, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a cookie sheet.
  • Combine flour, baking powder, and salt in a large bowl. Stir mashed banana, sour cream, and vanilla together in another bowl.
  • Cream margarine and sugar in a large bowl with an electric mixer. Beat in eggs. Mix in banana-sour cream mixture until incorporated. Add dry ingredients until well combined. Stir in nuts.
  • Drop small spoonfuls of batter onto the prepared cookie sheet; cookies do not expand much in the oven.
  • Bake in the preheated oven, checking occasionally, until bottoms are light golden brown and cookies are set but still a tad soft, 10 to 12 minutes. Remove cookies to a rack to cool.
  • While the cookies are cooling, prepare frosting: Melt butter in a saucepan over medium-low heat. Stir in brown sugar and reduce heat to low. Stir and bring to a boil. Boil, stirring constantly, for 2 minutes. Remove from heat.
  • Stir in 1/4 cup milk and bring to a boil again. Remove from heat and let cool, 10 to 15 minutes.
  • Gradually stir in powdered sugar until frosting is desired consistency. If frosting hardens while working, stir in a little bit of milk.
  • Spread frosting on cooled cookies.
