CHOCOLATE COOKIE PIZZA

We are convinced almost anything is better in pizza-form, including dessert! This chocolate cookie pizza is one of our favorite ways to enjoy dessert-style pizza. Start with a homemade cookie crust, spread on a melted chocolate sauce, and top with your favorite sweet toppings, such as candy, shredded coconut and pecans. Customize your cookie pizza further by adding more of your favorite sweet treats to make your own decadent dessert masterpiece, or just stick to the basics and keep it simple. Start a new tradition and add this delicious cookie pizza to you next family pizza night.

1/2 cup butter or margarine, softened
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 teaspoon vanilla
1 egg
1 1/4 cups Gold Medal™ all-purpose flour
1/2 teaspoon baking soda
1 bag (6 oz) semisweet chocolate chips (1 cup)
2 tablespoons butter or margarine
3 tablespoons milk
1 cup powdered sugar
1/2 cup pecan halves
1/2 cup M&M's® chocolate candies
1/4 cup shredded coconut, toasted, if desired
2 oz white chocolate baking bars (from 6-oz package), melted

Steps:

  • Heat oven to 350° F. In large bowl, mix 1/2 cup butter, the brown sugar, granulated sugar, vanilla and egg until well blended. Stir in flour and baking soda (dough will be stiff).
  • Pat dough in ungreased 12-inch pizza pan or into 12-inch round on ungreased cookie sheet. Bake about 15 minutes or until golden brown. Cool about 30 minutes.
  • In 2-quart saucepan, heat chocolate chips, 2 tablespoons butter and milk over low heat, stirring occasionally, just until chocolate is melted; remove from heat. Stir in powdered sugar. Beat with wire whisk until smooth, glossy and spreadable. (If not glossy, stir in a few drops hot water).
  • Spread chocolate mixture over baked layer. Immediately sprinkle with pecans, candies and coconut; press lightly. Drizzle with melted baking bars. Let stand until set. Remove from pan if desired. Cut into wedges.

Easier than rolling individual cookies and no cookie dough chilling. Chocolate chip cookie pizza is perfect for sharing!

2 cups (250g) all-purpose flour (spoon & leveled)
2 teaspoons cornstarch (aka cornflour)
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup (1.5 sticks or 170g) unsalted butter, softened to room temperature
3/4 cup (150g) packed light or dark brown sugar
1/4 cup (50g) granulated sugar
1 large egg, at room temperature
2 teaspoons pure vanilla extract
1 and 1/4 cup (225g) semi-sweet chocolate chips

Steps:

  • Preheat oven to 350°F (177°C). Lightly grease your pizza pan.
  • Whisk the flour, cornstarch, baking soda, and salt together in a medium bowl. Set aside.
  • Using a hand mixer or a stand mixer fitted with a paddle attachment, cream the butter and both sugars together on medium speed until smooth, about 2 minutes. Add the egg and beat on high until combined, about 1 minute. Scrape down the sides and bottom of the bowl as needed. Add the vanilla extract, then mix on high until combined.
  • Add the dry ingredients to the wet ingredients and mix on low until combined. With the mixer running on low speed, add the chocolate chips. Dough will be thick and soft.
  • Transfer the cookie dough to the pizza pan and flatten out with your fingers or a rubber spatula until the edges reach the sides (or just about to the sides).
  • Bake for 22-25 minutes or until puffed and lightly browned on top. If you want the cookie pizza a little crispier on the edges, bake for a couple extra minutes. Allow the cookie pizza to cool on the pan set on a wire rack before slicing. Cover leftovers and store at room temperature for 2-3 days or in the refrigerator for up to 5 days.

CHRISTINA'S STUFFED-CRUST PEPPERONI AND MUSHROOM PIZZA

1/4 cup warm water
4 tablespoons sugar
1 package dry yeast
3/4 cup milk
4 tablespoons unsalted butter
2 1/2 cups all-purpose flour, plus more for kneading
3 tablespoons cornmeal, plus more for the pan
1 egg, beaten
1 teaspoon salt
8 ounces mozzarella
Olive oil, for coating bowl
1 tablespoon sugar
3/4 cup prepared marinara sauce
1/2 cup canned stewed tomatoes, strained and coarsely chopped
1 1/2 cups grated mozzarella
1 medium onion, finely chopped
1/2 cup sliced mushrooms
1/4 pound sliced pepperoni
1 teaspoon dried basil
1 teaspoon dried oregano

Steps:

  • Preheat the oven to 450 degrees F
  • To make the crust: Stir the water, 1 tablespoon of the sugar, and the yeast together in a small bowl. Let stand until foamy, about 10 minutes. Meanwhile, heat the milk in a small saucepan. Remove from heat, add the butter, and stir until melted.
  • In a large bowl, stir together the flour, cornmeal, remaining sugar, egg, milk mixture, yeast mixture, and salt until a soft dough forms. Turn dough out onto a floured surface and knead until smooth, adding flour as needed if dough is sticky, about 10 minutes. Clean the bowl and coat it generously with olive oil. Form the dough into a ball, put it in the bowl and cover with a kitchen towel. Let rise in a warm place until doubled in size, about 1 hour.
  • Punch the dough down and let rest for 10 minutes.
  • Cut the mozzarella into sticks about 3 by 3/4 by 3/4-inches. Sprinkle a large baking sheet with cornmeal. Place the dough on the baking sheet and stretch it into a 15-inch circle.
  • Arrange the mozzarella sticks around the dough about 1-inch in from the edge, then roll the dough over the cheese to form the stuffed rim.
  • To make the topping: Stir the sugar into the marinara sauce and spread onto the pizza dough. Scatter with the stewed tomatoes, then the mozzarella. Add the onions, mushrooms, and pepperoni. Sprinkle with basil and oregano.
  • Bake until crust is golden brown, 15 to 20 minutes. Cut into wedges and serve immediately.

We've seen pizza in all sorts of varieties, but this has to be our favourite. Top your cookie dough pizza base with any treats that take your fancy

185g butter , softened
185g golden caster sugar
150g soft light brown sugar
2 medium eggs , beaten
2 tsp vanilla extract
335g self raising flour
1 tsp salt
200g chocolate chips
200g dark chocolate , melted
25g giant white chocolate buttons
25g mini marshmallows
25g strawberries , hulled and sliced

Steps:

  • Heat the oven to 180C/160 fan/ gas 4. Beat the butter and sugars together in a large bowl using an electric whisk or table top mixer. Pour in the beaten eggs and vanilla, beating well until combined.
  • Sift in the flour and salt and fold until evenly combined. Scatter over the chocolate chips and stir until they are rippled throughout the dough.
  • Roll into a big round cookie and place onto a large baking sheet covered with parchment. If the dough feels very soft at this stage pop it in the fridge for 30 mins to firm up. Bake in the preheated oven for 25 mins until golden at the edges and still a little wobbly in the middle. Leave to cool for a couple of mins before topping. Spread the melted chocolate over the cookie, sprinkle with giant chocolate buttons, mini marshmallows and strawberries. Cut into about 15 slices and serve while it is still a little warm.

1 pizza crust dough, homemade or store bought (for these, prepared pizza crust located in the refrigerated area works well.)
1 can of pizza sauce, or your own homemade
1 bag of shredded mozzarella
assorted pizza toppings, such as sausage, pepperoni, green and red pepper, red onion, olives, mushrooms, yellow banana pepper rings, etc. chopped fairly small

Steps:

  • 1. Roll out your dough, as for pizza, on a lightly floured surface. Cut into desired Christmas cookie cutter shapes. If serving as appetizers, don't make them too large. If you want to make these for a cute lunch, larger is fine.
  • 2. Transfer to prepared cookie sheet. Add sauce, then cheese, then toppings, as for pizza.
  • 3. Bake at 350 degrees until crust is golden and cheese has melted and is bubbly. Make enough... they will go very quickly!
