Roasted red pepper hummus is a delicious twist on the classic, thanks to sweet roasted red peppers, garlic, jalapeno and a hint of sumac and smoked paprika! Grab the tips and notes below and be sure to watch the video!

1 red bell pepper, seeded, and cut in 1" strips
1 jalapeno pepper, sliced in half length wise (optional)
2 cups/453 g cooked chickpeas (canned chickpeas are fine, drained and rinsed)
2 to 4 garlic cloves, chopped (start with less garlic if not sure)
5 tbsp/85 g tahini paste
1 to 2 tsp/ 2 to 4 g sumac
1/2 tsp to 1 tsp smoked paprika (adjust to your liking)
1 lemon, juice of
2 tbsp toasted pine nuts, optional.
Extra virgin olive oil (I used Private Reserve)
Salt

Steps:

  • Preheat oven to 450 degrees F (skip this part if using jarred roasted red peppers and jalapeno. see note below)
  • Place the red bell pepper strips and jalapeno in a small baking dish or cast iron pan. Drizzle generously with olive oil. Bake in heated oven for 15 to 20 minutes or until tender and well-charred (check part-way and turn peppers over as needed.) Remove from oven and let cool. Drain from oil.
  • In the large bowl of a food processor fitted with a blade, add the roasted bell peppers and jalapeno along with the chickpeas, garlic, tahini, sumac, smoked paprika, and lemon juice (do not add pine nuts yet.) Drizzle a little extra virgin olive oil. Run the processor until you reach the desired creamy paste consistency. Test and adjust seasoning,if needed. Run the processor again to combine.
  • Transfer to a serving bowl. Cover and chill.
  • When ready to serve, top roasted red pepper hummus with a little more extra virgin olive oil and the toasted pine nuts. Add a pinch of paprika or sumac for garnish, if you like. Serve with warm pita bread and sliced veggies for dipping! Enjoy!

1 (29-ounce) can chickpeas, drained (3 cups)
1/2 cup freshly squeezed lemon juice (3 lemons)
1/2 cup sesame tahini
2 tablespoons chopped garlic (6 cloves)
1 1/2 teaspoons Sriracha
1/2 cup roasted red bell peppers
Kosher salt and freshly ground black pepper
Good olive oil
2 tablespoons toasted pine nuts, for serving
Toasted pita triangles and fresh vegetables, for serving

Steps:

  • Place the chickpeas, lemon juice, tahini, garlic, Sriracha, roasted red peppers, 4 teaspoons salt, and 2 teaspoons pepper in the bowl of a food processor fitted with the steel blade. Process until the mixture is coarsely pureed. Taste for seasonings, and transfer to a serving bowl. Drizzle with olive oil, sprinkle with toasted pine nuts, and serve cold or at room temperature with pita triangles and vegetables.

1/2 cup roasted red peppers (jarred in water or oil both work)
3 tablespoons tahini
1 clove garlic, chopped
3 to 4 tablespoons lemon juice

100g cooking chorizo
2 roasted red peppers from a jar
1 tbsp flaked almonds
½ tbsp olive oil
pinch of smoked paprika
1 garlic clove , crushed
splash of sherry vinegar
200g tub plain hummus
parsley , chopped, to garnish

Steps:

  • Peel and slice the cooking chorizo and chop the roasted red peppers. In a dry frying pan, toast the flaked almonds, then tip into a bowl. Heat the olive oil in the same pan and add the chorizo and smoked paprika. Fry until the chorizo has released its oil, then stir in the peppers, crushed garlic and sherry vinegar. Cook for 1 min, then take off the heat. Spread the plain hummus onto a plate. Tip the chorizo mix on top, then sprinkle over the almonds and some parsley.

1 bell pepper (yellow)
2 to 3 garlic cloves
1/2 pound/1/4 kg sausages (fresh chorizo)
4 to 5 tablespoons olive oil
Pinch salt (or to taste)

Steps:

  • Gather the ingredients.
  • Rinse green and yellow peppers, then remove stems and seeds.
  • Cut peppers into lengthwise slices, about 1/3-inch wide.
  • Peel and finely chop garlic and set aside.
  • Cut the chorizo into 1-inch lengths.
  • Pour 4 to 5 tablespoons olive oil into a heavy-bottomed frying pan and heat.
  • When the oil is hot, fry chorizo pieces and pepper strips, stirring often.
  • When peppers are browned and almost cooked, add minced garlic and continue to fry. Stir often, to prevent burning, for another minute or so.
  • When chorizo and peppers are completely cooked, serve on a platter with rustic bread.

400g can chickpeas
2 tbsp olive oil
¼ lemon , juiced
1-2 small cooking chorizo , chopped
2 handfuls chopped kale
flatbread , to serve

Steps:

  • Warm the chickpeas in a microwave or frying pan in their liquid. Drain and reserve the liquid. Tip half the chickpeas into a small food processor with 1 tbsp oil, the lemon juice and a splash of the liquid from the tin and whizz to a paste. Season.
  • Put the chorizo in a small frying pan and cook over a low heat until it starts to release its oils, then turn up the heat and continue cooking until the chorizo starts to crisp. Add the remaining chickpeas and stir for a couple of mins. Stir in the kale and cook until it wilts.
  • Spoon the warm hummus into a bowl and tip the chorizo, chickpeas and kale on top. Drizzle over the remaining oil, season well and serve with flatbread for scooping up.

410g can chickpeas
1 large garlic clove
2 roasted red peppers from a jar
1 tbsp lemon juice
2 tbsp olive oil , plus a bit extra for drizzling
½ tsp chilli powder
Italian breadsticks , celery sticks and radishes with the leaves on, to serve

Steps:

  • Rinse and drain the chickpeas, then tip them into a food processor. Peel the garlic and crush in with the chickpeas, along with plenty of salt and pepper. Whizz briefly.
  • Remove any stray seeds from the peppers, then add them to the processor with the lemon juice, olive oil and chilli. Blitz again until really smooth. Taste and add extra seasoning and chilli for more of a kick, if you like.
  • Spoon into a bowl, drizzle with olive oil and serve with celery sticks, radishes and a stack of breadsticks for dipping.

JALAPENO & ROASTED RED PEPPER HUMMUS

Another nice hummus recipe that makes use of my garden's peppers by way of The Wichita Eagle who got it from the North American Olive Oil Association. This one is a little lighter on the lemon & tahini - adjust to your taste of course. Use a potato masher to crush the garbanzos if you do not have food processor or blender - did it that way myself for years & now I prefer a chunkier hummus to the ultra-smooth, go figure. Serve with baked pita bread or pita chips or stuff into tomatoes (big cherries piped with smooth spicy hummus are great heavy hors d'oeuvres).
