- Season the meat with the salt and pepper. In a large skillet, heat 2 teaspoons of the oil over medium-high heat until good and hot, then add the meat and sear until well browned on all sides, about 10 minutes total.
- Transfer the meat to a rack set on a baking sheet. Roast until an instant-read thermometer inserted in the thickest part registers 140 degrees F for medium-rare, about 30 minutes, or to your desired degree of doneness. DARK CHOCOLATE RED WINE TRUFFLES
PURE HEAVEN. That's all you really need to know. I suggest using a metal cookie scoop to form the truffles. I tried a melon baller, tablespoon, and plastic cookie scoop and they were all somewhat difficult to use. Coat your hands in the cocoa powder before hand rolling the truffles. I suggest making these at least a day before eating so that the wine flavor intensifies. Best consumed on day three for maximum wine flavor. You should be able to keep them for a week but they never last that long!

- Preheat the oven to 325 degrees F. Line cupcake tins with 24 cupcake liners.
- Whisk together the buttermilk, oil, vanilla and eggs. Combine the sugar, flour, cocoa powder, baking soda, baking powder and salt and add into the wet mixture. Whisk the batter together until almost all the lumps are gone. Scrape the bowl, then mix again briefly. Add in a small amount of the port wine to help thin the batter. RICH DARK CHOCOLATE CAKE WITH RED WINE CHOCOLATE FROSTING
I was looking for a light, rich chocolate cake that wasn't too sweet and was easy to make. I couldn't find one, so I took a couple of different recipes and doctored them to make this. It came out just as I wanted; light and fluffy without being too sweet. The red wine frosting makes it for grown ups only (at least that's what you can tell any kids that are after some!). If you prefer a more traditional sweetness, simply add more sugar - I'd suggest increasing by a third (ie to 400g). The frosting should be enough to put a layer between the two cakes and some on top. You may also like to slice each cake in two to add two more layers of frosting if you're feeling decadent - just increase the quantities.

- Pre-heat the oven to 180°C Line two cake tins with parchment paper and grease.
- In a large bowl, mix together the flour, sugar, cocoa powder, bicarbonate of soda, baking powder, salt and coffee granules (ie all the dry ingredients).

- Use a whisk to mix together until completely blended. Don't be alarmed at how runny it is - it's much thinner than a normal cake mix!

I found 30 minutes to be fine for a light, moist cake, but it will depend on your oven. Use a skewer inserted into the middle to make sure the cake is cooked through. If it comes out clean, you should be fine.
- Turn the cooked cakes out onto a cooling rack and place to one side.
- While they cool, make the frosting: Put the butter, icing sugar and cocoa powder in a bowl and cream together until light and fluffy. Add the cream cheese and mix well. Then, add the red wine a little at a time until it gets a little runnier. Give it a taste; you want to just be able to taste the wine without it being overpowering. Place in the fridge for a few minutes to let it stiffen up slightly.
- When the cake has cooled, spread the frosting on the top of one layer and place the other on top.

- In the top of a double boiler, melt unsweetened chocolate and 3/4 cup butter, stirring occasionally, until smooth. Set aside to cool to room temperature. Preheat oven to 350 degrees F (175 degrees C). Grease a 10 inch Bundt or tube pan.
- In a large bowl, beat egg yolks and 3/4 cup sugar together with an electric mixer on High speed until light and fluffy, about 5 minutes. Gradually stir in the 3/4 cup of port wine and flour. Fold in the cooled chocolate mixture.
- In a clean bowl, whip egg whites with cream of tartar until frothy. Gradually whisk in 3 tablespoons sugar, and continue to whip until stiff peaks form. Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain. Quickly fold in walnuts. Pour batter into prepared pan.
- Bake in the preheated oven for about 45 minutes, or until tested done with a toothpick. Cool in pan 10 minutes. Invert onto serving plate. Cool completely.
- To make the glaze: In the top of a double boiler, over lightly simmering water, combine chocolate chips, 1/2 cup butter and corn syrup. Stir frequently until chocolate is melted. Stir in the remaining 1/2 cup port wine and vanilla until mixture is smooth. Set aside to cool for about 30 minutes. Pour glaze over the cooled cake.

- Combine wine and sugar in a non-reactive saucepan and reduce over medium heat for 10 minutes.

- In a food processor, blend all the ingredients until very smooth. Strain, if necessary.
ALOUETTE BABY BRIE TOASTS WITH PEAR AND CHOCOLATE WINE SAUCE

- Preparation:.
- Combine wine and sugar in saucepan and reduce over medium heat for 10 minutes.
- Remove from heat and stir in the chocolate chips.
- Cut baguette into 40 thin slices. Brush both sides with olive oil and broil until golden on both sides. Cool.
- Cut brie into 4 quarters. Cut each quarter into 10 slices. Lay slices on chilled plate.
- In small skillet, toss almonds until golden brown. Remove from heat and toss with allspice.
- Assembly:.
- Place baguette rounds on cookie sheet.
- Spread 1/2 teaspoon of chocolate wine sauce on each slice.
- Divide minced pear evenly among the slices.
- Lay a slice of brie on top of each "crouton.".
- Sprinkle with toasted almonds.
- Heat in 350 degree oven for five minutes.
CHOCOLATE WINE TRUFFLES
I referred to these in a post as Raspberry Wine Truffles, because I had used raspberry wine. I've also used black cherry. So the name is up to the wine you use. You can also make White Wine Truffles by using white instead of red. These DO improve with age. At least a few weeks of aging and the flavor is so good.

- Heat the chocolate chips and honey in a 3 qt.
- saucepan on low heat, and stir constantly until chocolate is melted.
- Remove from the heat.
- Stir in wafers, nuts and wine.
- Shape mixture into 1 inch balls and roll in sugar. An easy way to do this: Put your sugar (or cocoa if you are ever doing truffles that are rolled in cocoa)in a shallow pan with sides, then add some rolled truffles, and just kind of shake the pan gently back and forth, and from side to side. They roll around and coat themselves.
- Store truffles in tightly covered cookie jar or metal can.
- Let stand for several days to blend the flavors.
- Flavor improves with age up to 4 weeks.
- You can also do this with white wine: Omit the chocolate and do not heat the honey.
- Use dry white wine instead of the red.
- Mix all ingredients except sugar.
- Continue to shape balls and roll in sugar.
- This way makes 2 1/2 dozen truffles.

- Preheat oven to 350°F Line 2 muffin pans with muffin cups or coat with nonstick spray.
- In a medium, heatproof bowl, combine cocoa powder with chocolate pieces. Whisk in the boiling water until chocolate is melted and mixture is combined.
- In a large bowl, cream butter and granulated sugar together. Beat in the eggs one at a time, until fully blended. Sift in flour, baking powder, and salt, and mix until just combined.
- Alternating, add the chocolate mixture and wine in batches, mixing well between each addition. Repeat this until batter is smooth. Divide mixture among muffin cups, filling each about 3/4 of the way full.
- Bake until a toothpick inserted in the center comes out clean, about 20 minutes. Let cool in the pan.
- Lightly beat the mascarpone, then add the confectioners' sugar and beat until creamy. Remove the cooled cupcakes from the pan, spread each with icing, and top with a grape half, if desired.
BOTTLE OF WINE CHOCOLATE PIE
We managed to fit a whole bottle of wine in this decadent dark chocolate pie. Perfect for a grown-up dinner party, it offers the best of both worlds.

- For the crust: Position a rack in the center of the oven and preheat to 325 degrees F.
- Toss together the cookie crumbs, butter, sugar and salt in a medium bowl. Press into the bottom and sides of a 9-inch deep-dish pie pan. Bake until dry and set, 15 to 18 minutes. Let cool completely on a wire rack.
- For the filling: Combine the cornstarch and 1 1/4 cups of the sugar in a medium saucepan and very slowly whisk in the wine to prevent lumps from forming. Cook over medium heat, stirring constantly, until it has come to a simmer and is very thick, about 8 minutes. Remove from the heat and stir in the chocolate, butter and salt until smooth. Pour the filling into the cooled crust and refrigerate until chilled and set, about 4 hours and up to overnight.
- Right before serving, whip the cream with the remaining 3 tablespoons sugar in a large bowl with an electric mixer until soft peaks form. Top the pie with the whipped cream. Scatter the chocolate curls or sprinkles over the top, if using.
