1-1/2 cups dried cranberries (about 8 ounces)
1-1/2 cups sliced almonds
1 cup raisins
1 cup coarsely chopped walnuts
1/2 cup pistachios

Steps:

  • Toss together all ingredients. Store in airtight containers.

1 cup peanut butter
½ cup honey
½ cup coconut oil
2 cups old-fashioned oats
1 ¼ cups dark chocolate chips
½ cup chopped mixed nuts
1 teaspoon vanilla extract
1 cup chopped mixed dried fruit

Steps:

  • Stir peanut butter, honey, and coconut oil in a saucepan over medium-low heat in a saucepan, cooking and stirring until the peanut butter melts and the mixture is smooth, about 5 minutes; remove from heat.
  • Stir oats, chocolate chips, mixed nuts, and vanilla into the peanut butter mixture; stir until the chocolate melts completely. Fold fruit into the mixture.
  • Grease a 13x9-inch baking dish. Pour the mixture into the prepared dish and spread into an even layer.
  • Cover baking dish with plastic wrap and refrigerate until hard, at least 1 hour. Cut into bars and store in the refrigerator.

Many years ago my sister's friend's mom used to make this for us. I thought it was a much more complicated recipe that it really is. I made individual bags of it for the holidays and took some to work. Everyone loved it and it's been named "Kelly's Candy". I saw a similiar recipe in Taste of Home. I make in in two batches.

2 cups small pretzels
5 cups Cheerios toasted oat cereal
5 cups Rice Chex
12 1/16 ounces , plain m&ms (medium bag)
2 (12 ounce) bags white chocolate chips

Steps:

  • Mix 1 cup pretzels, 2.5 cups Cheerios, 2.5 cups Chex, and half a bag of M&M's in large bowl.
  • Melt 1 bag of white chocolate chips in microwave safe bowl according to package.
  • Stir until smooth.
  • Pour over trail mix and combine thoroughly until white chocolate is completely mixed with trail mix.
  • Pour onto waxed paper and let cool.
  • Break apart pieces and store in container.
  • Repeat steps for the second batch.

I love this trail mix as a post-workout snack, or when I get a sugar craving that won't quit. SO easy to make. It's almost paleo, with the exception of pistachios, which are legumes (but I love them), and of course the sugar from the chocolate. WARNING, this stuff is addictive.

1 cup almonds, toasted
1 cup walnuts, toasted
1/2 cup brazil nut, halved
1/2 cup pistachios
1/2 cup dried cherries
1 cup dark chocolate chips

Steps:

  • If you have raw almonds and walnuts, toast them in a pan on the stove. Just cover the bottom of a pan with the nuts (no oil necessary) and toast on medium heat for 3-5 minutes, stirring constantly to avoid burning. I like the flavor of these two nuts better when they're toasted, but the brazil nuts I leave raw and just cut them in half with a knife.
  • Combine nuts and cherries in a bowl.
  • Melt chocolate chips in the microwave or using a double boiler (I like the microwave, it's quick and easy).
  • Pour or spoon half of chocolate over nut mixture and stir. Pour or spoon the other half and stir again until mixture is coated.
  • If you like, you can spoon clumps of the stuff onto a wax paper-lined baking sheet and put in the fridge for nice snack-sized bites. Personally I put the whole bowl in the fridge then break it apart into chunks with a knife after it has hardened. Keeps well in a sealed container in the fridge.

  • You need to put the chocolate to a boil for about 5 minutes or more. Then, you let the chocolate cool a bit so it isn`t burning. Then you take the nuts and dip them into the chocolate and put them onto the wax paper to harden.

Variety of cereal, Chex, Cherrios, no flakes
Nuts-pecans, walnuts, peanuts
Dried fruits-cherries, cranberries, pineapple, dates
Mini marshmallows
Almond Bark-chocolate or almond
Pick and choose ingredients. I often use whatever is in the pantry on hand.

Steps:

  • Assemble your choice of ingredients except the bark and mix in a very large heat proof container. In another microwave container, melt your choice of almond bark. Can mix the flavors. Depending on the amount of cereal mix, I usually melt a 1 1/2 lb. block of bark. Melt bark, stirring every 30 seconds to prevent scorching the bark. When melted, pour over cereal mix and stir, completely covering the dry ingredients. Work quickly, so that bark will not begin to cool before turning out on sheets of waxed paper. Spread out evenly and let the bark harden. Store in plastic bags or air tight containers.
