16 whole Graham Cracker Squares (two Single Rectangular Pieces Still Stuck Together)
1 container (7 Ounce) Marshmallow Creme
1 whole Package Chocolate Almond Barn Or Other Melting Chocolate
Chopped Nuts, Sprinkles, Etc.

Steps:

  • Scoop a heaping tablespoon of marshmallow cream onto 8 crackers. Top with the other 8 crackers, pressing gently. Immediately put the sandwiches in the freezer---within a minute of putting the second cracker on top. Freeze for a minimum of 30 minutes to set the marshmallow creme as much as possible. Meanwhile, melt the chocolate in a glass bowl, then set aside to cool, stirring occasionally to keep the chocolate melted. When the chocolate is room temperature, remove the sandwiches from the freezer. One by one, dip the sandwiches in chocolate, allowing excess to drip off. Work quickly, then add on whatever sprinkles you'd like to use. Immediately put the sandwiches back into the freezer to set the chocolate and keep the marshmallow from rebelling and oozing out. Freeze for at least 30 minutes, then you can store the s'mores at room temperature or in the fridge until you're ready to serve!

DARK CHOCOLATE S'MORES

8 Chocolate Graham Crackers, recipe follows
1/2 cup good quality raspberry preserves with seeds
Two 3.5-ounce bars bittersweet chocolate bars, halved crosswise
12 marshmallows (vanilla, dark chocolate or raspberry flavored or combination of all)
Nonstick cooking spray
1/2 cup (2 ounces) unbleached all-purpose flour, plus more for rolling
3/4 cup (3 3/4 ounces) whole-wheat flour
1/2 teaspoon kosher salt
1/2 cup good quality Dutch-process cocoa (recommended: Vahlrona)
1 1/4 cups confectioners' sugar
1 teaspoon baking powder
1/2 cup slightly cold unsalted butter, cut into small cubes
2 tablespoons clover honey
2 tablespoons cold milk, plus more if needed
3 tablespoons sugar in the raw

Steps:

  • Preheat a grill to medium.
  • Spread the bottom side of each graham cracker with 1 tablespoon of the raspberry preserves and arrange on a flat surface, preserve side up. Put half a bar of the chocolate on top of the preserves on 4 of the crackers.
  • Toast the marshmallows on sticks or hangers until golden brown on all sides and softened. Put 3 marshmallows on top of each of the crackers with the chocolate and top each with the remaining crackers, raspberry preserve side-down. Arrange them on sheets of foil and put them on the grill. Close the cover and grill until the chocolate just begins to melt, about 30 seconds. Serve immediately.
  • Preheat the oven to 325 degrees F. Line 2 cookie sheets with parchment paper and spray lightly with nonstick spray.
  • In a medium-sized bowl, whisk together the flours, salt, cocoa, sugar, and baking powder. Cut the butter into the flour mixture until small crumbs form. In a separate bowl, whisk together the honey and milk. Add the liquid to the dry ingredients and toss lightly with a fork until the dough comes together. Add additional milk, if necessary.
  • Turn the dough out onto a well-floured surface and gently knead until smooth. Divide the dough in half. Cover with plastic wrap and chill in the refrigerator for 30 minutes.
  • Work with half of the dough at a time, keeping the remaining dough covered. Transfer 1 piece of dough to a piece of parchment paper. Roll it out into a rectangle a bit larger than 10 by 14 inches and about 1/16-inch thick. Trim the edges and prick the dough evenly with a dough docker or fork. Transfer the dough to the baking sheet, sprinkle the top with half of the sugar and repeat with the remaining dough.
  • Bake until slightly firm to the touch, about 12 to 15 minutes. Remove them from the oven, and immediately cut them into rectangles. Transfer them to a rack to cool

CHOCOLATY S'MORES BARS

1 package (10 ounces) large marshmallows
1 package (12 ounces) Golden Grahams cereal
1/3 cup milk chocolate chips, melted

  • In a large saucepan, melt butter over low heat. Add marshmallows; cook and stir until blended. Remove from heat. Stir in cereal until coated., Press into a greased 13x9-in. pan using a buttered spatula. Drizzle with melted chocolate. Cool completely before cutting. Store in an airtight container.

1-1/2 cups graham cracker crumbs
1/4 cup sugar
1/3 cup butter, melted
FILLING:
10 ounces bittersweet chocolate, chopped
1/4 cup butter, cubed
1-1/2 cups heavy whipping cream
TOPPING:
5 large egg whites
1 cup sugar
1/4 teaspoon cream of tartar

Steps:

  • In a small bowl, mix cracker crumbs and sugar; stir in butter. Press onto bottom and 1/2 in. up sides of an ungreased 9-in. fluted tart pan with removable bottom. Refrigerate 30 minutes., Place chocolate and butter in a large bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate and butter; let stand 5 minutes. Stir with a whisk until smooth. Pour into prepared tart shell. Refrigerate 1 hour or until set. Place egg whites in a large bowl; let stand at room temperature for 30 minutes., In the top of a double boiler or in a metal bowl over simmering water, combine egg whites, sugar and cream of tartar. Beat on low speed 1 minute. Continue beating on low until a thermometer reads 160°, about 5 minutes longer. Transfer to a large bowl; beat on high until stiff glossy peaks form and mixture is slightly cooled, about 5 minutes., Spread meringue over tart. If desired, heat meringue with a kitchen torch or broil 2 in. from heat until meringue is lightly browned, 30-45 seconds. Refrigerate leftovers.

14 whole graham crackers, crushed
½ cup butter, melted
¼ cup white sugar
½ teaspoon ground cinnamon
9 ounces bittersweet chocolate chips
1 cup heavy cream
1 tablespoon dark rum
1 (10 ounce) package large marshmallows

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish with cooking spray.
  • Combine the graham cracker crumbs, melted butter, sugar, and cinnamon in a mixing bowl. Mix until evenly moistened, then press into the bottom of the prepared baking dish. Bake in the preheated oven until the crust is lightly browned and smells toasted, about 5 minutes.
  • Place the chocolate into a medium bowl. Heat the cream in a small sauce pan over medium heat. Bring just to a boil. When the cream has come to a boil, remove from the heat immediately and pour over the chocolate chips; whisk until smooth. Stir in the optional rum. Pour evenly over the graham cracker layer.
  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Place an even layer of marshmallows on top of the chocolate. Broil until the marshmallows are lightly toasted, about 1 minute. Refrigerate until chocolate has hardened, about 45 minutes. Cut into bars using a pizza cutter sprayed with non-stick cooking spray.

9 graham crackers
1/4 cup unbleached all-purpose flour
1/4 teaspoon kosher salt
6 tablespoons unsalted butter, room temperature
1/3 cup sugar
3 ounces milk chocolate
1 teaspoon gelatin
4 ounces semisweet chocolate
1/2 stick (4 tablespoons) unsalted butter
4 large eggs, separated
Pinch of kosher salt
1/2 cup heavy cream, whipped to soft peaks
3 large egg whites
3/4 cup sugar
Pinch of kosher salt
1 teaspoon cornstarch
1 teaspoon pure vanilla extract

Steps:

  • Crust: Preheat oven to 350 degrees. On a parchment-lined rimmed baking sheet, arrange eight 3-by-3-inch round ring molds. In a food processor, pulse graham crackers until finely ground. Add flour, salt, butter, and sugar; pulse to combine. Transfer mixture to another rimmed baking sheet and bake 10 minutes. Using a bench scraper or metal spatula, coarsely chop until no large clumps remain. Bake 10 minutes more. Remove and chop again; set aside to cool.
  • Meanwhile, melt milk chocolate in a small heatproof bowl set over (not in) a pot of simmering water. Transfer graham cracker mixture to a large bowl. Add melted milk chocolate and stir to combine. Add 1/4 cup to each ring mold and press with a small spoon to pack tightly. Refrigerate until set.
  • Mousse Filling: In a small bowl, sprinkle gelatin over 1 tablespoon cold water; let stand until softened, about 5 minutes. Melt semisweet chocolate and butter in a heatproof bowl set over (not in) a pot of simmering water, stirring occasionally, until smooth. Add gelatin mixture, stirring until dissolved. Remove from heat; add egg yolks and whisk until well combined. Let cool to room temperature.
  • In a large bowl, whisk together egg whites and salt until stiff peaks form. Whisk one-third of egg-white mixture into semisweet-chocolate mixture; gently fold in remaining egg-white mixture. Gently fold in whipped cream. Divide mousse evenly among ring molds (about 1/4 cup each). Refrigerate until set, at least 2 hours.
  • Meringue Topping: Combine egg whites, sugar, and salt in the heatproof bowl of a mixer set over (not in) a pot of simmering water. Whisk constantly until sugar is dissolved, and mixture is warm to the touch and feels completely smooth when rubbed between fingertips. Transfer bowl to mixer fitted with the whisk attachment. Starting on low speed and gradually increasing to medium-high, whisk until stiff (but not dry) peaks form. Add cornstarch and vanilla. Continue whisking until meringue is fluffy and glossy, and completely cool (test by touching the bottom of the bowl), 6 to 8 minutes.
  • Transfer meringue to a pastry bag fitted with a 1/2-inch round tip; pipe on top of mousse to fill mold. Using a small offset spatula, smooth meringue to make it flush with top of mold.
  • Refrigerate until set, about 1 hour. Let stand at room temperature 5 minutes. To unmold, place ring mold on top of a narrow glass or spice jar; gently pull mold down. If necessary, briefly torch sides of molds with a kitchen torch to loosen (be careful not to overheat). Transfer to a heatproof plate. Repeat process with remaining molds. Use kitchen torch to brown tops of meringues. Serve immediately.

S'MORES HOT CHOCOLATE



S'mores Hot Chocolate image

The hot chocolate is perfectly creamy and sweet. The graham cracker crumbs meet the lips with a sweet surprise at every sip. And the toasty marshmallows absolutely MAKE it. If you prefer mix hot chocolates, simply skip the hot cocoa part and add your favorite mix to the mug. The graham cracker rim and toasty marshmallows are what really sets this recipe apart. Hope you love it! I changed the recipe just a bit to use dark chocolate. Your choose.

3 cups milk, any kind
1/4 cup cocoa powder (I like dark chocolate)
2 tablespoons dark chocolate syrup (or light)
2 tablespoons sugar
1/4 teaspoon non-bitter stevia (or add 1-2 Tbsp more sugar to taste)
1 pinch salt
graham cracker, crushed (for lining rim)
1/2 cup mini marshmallows

Steps:

  • Preheat oven to low broil and move oven rack to the second from the top (high enough up to broil your marshmallows). Place baking sheet on rack.
  • Heat milk and water in a saucepan over medium heat until warmed through - about 5 minutes. Be careful not to overheat or scald.
  • Add cocoa powder, chocolate syrup, sugar, stevia and salt and whisk vigorously until thoroughly combined.
  • Meanwhile, take a few marshmallows and rub them around the top of your mugs so the graham crackers will stick. Then, dip mug in graham cracker crumbs until well lined. You could also add some graham cracker crumbs to the bottom of your mug for extra graham flavor.
  • Pour in hot chocolate and top with 1/4 cup marshmallows each. Carefully set mugs on the baking sheet in the oven and broil marshmallows until browned, watching carefully as to not let them burn.
  • Carefully remove from the oven with a towel and serve with holders or a small towel to protect hand from heat (they should cool quickly for handling). Top with a drizzle of chocolate syrup and extra graham cracker crumbs for serving (optional).
  • Notes.
  • Adjust flavors before serving, adding more chocolate or sugar if you prefer.
