Freshly brewed coffee gives this dessert a subtle mocha flavor, but water can be substituted. The cake will crack slightly, but not break, as you roll it.

- Preheat oven to 350 degrees. Line a 13-by-17-inch rimmed baking sheet with parchment paper. Melt chocolate with coffee or water in a heatproof bowl set over a saucepan of simmering water, stirring until smooth. Let cool completely. Whisk together yolks and granulated sugar with a mixer on medium speed until pale and thick, about 3 minutes. Reduce speed to low, and slowly add chocolate mixture, whisking until incorporated.
- Whisk whites in a medium bowl until soft peaks form. Gently fold whites into chocolate mixture, using a rubber spatula, until combined, being careful not to deflate whites.
- Spread batter evenly on lined baking sheet. Bake until cake is cooked through, about 20 minutes. Transfer sheet to a wire rack, and let cool slightly, about 10 minutes.
- Loosen edges of cake from pan using a knife or an offset spatula. Dust top with cocoa powder, and turn out onto wire rack. Remove parchment, and let cool at least 1 hour. Beat cream and confectioners' sugar until soft peaks form. Spread evenly over top of cake, leaving a 1-inch border around the edges, and tightly roll, starting at 1 short side. Transfer to a baking sheet, and refrigerate for at least 1 hour or overnight. Lightly dust cake with cocoa powder.

- Preheat oven to 350 degrees with rack in center. Butter an 11-by-17-inch jelly-roll pan or a 12-by-17 1/2-inch sheet pan, and line with parchment paper.
- In a small saucepan, heat 1 cup cream to a simmer. Add chocolate, reduce heat, and whisk until chocolate is melted. As soon as mixture is a uniform dark color, remove from heat and let cool for a few minutes.
- In a large bowl and using a hand mixer, whip egg whites and 2 tablespoons sugar to stiff, glossy peaks, about 1 1/2 minutes. Whisk one-quarter of the egg-white mixture into the chocolate mixture. Gently fold chocolate mixture back into the original egg-white mixture, and mix until smooth and well combined.
- Pour batter into the prepared pan, and spread it in an even layer with a rubber spatula. Bake until cake is set and puffy, 10 to 12 minutes. Transfer to a wire rack, and cool to room temperature. - Make the creme chantilly: Whip the remaining 1 cup cream with the remaining 1 1/2 tablespoons sugar, the vanilla, and cognac. Spread evenly over entire surface of cake.
- Roll the cake lengthwise, starting at a point 2 to 3 inches over the creme chantilly. Roll cake another few inches, pressing against parchment paper to make a tight spiral. Gently peel parchment paper off as cake layer rolls away. Complete the roll, stopping at the far edge of the parchment paper. Tuck the loose parchment paper around and underneath the cylinder so it is well wrapped and can be moved easily. Serve immediately, or refrigerate for up to 4 hours.
- When ready to serve, transfer roulade to serving platter. Remove parchment paper, gently rolling cake into center of platter, with seam on bottom. - Preheat oven to 375 degrees. Butter a rimmed baking sheet and line with parchment, leaving a slight overhang on short ends. Butter parchment and dust with flour.
- Whisk flour, ginger, cinnamon, nutmeg, baking soda, baking powder and salt in a medium bowl until thoroughly combined. Set aside. Lay a clean kitchen towel on a flat surface and dust with 1/4 cup confectioners' sugar.
- In the bowl of an electric mixer fitted with paddle attachment, cream eggs and sugar on medium-high speed until pale and fluffy and tripled in volume, about 10 minutes. Reduce speed to low and add pumpkin puree. Mix until combined, about 2 minutes. Turn mixer off and sift half of flour mixture over the top. Gently fold into the batter than repeat with remaining dry mixture. Spread evenly onto prepared baking sheet with an offset spatula and bake until the cake springs back in the center and begins to pull away from edges, about 12 minutes. Let cool 10 minutes then invert onto sugar-dusted towel. Fold the sides of the towel over the cake and gently roll the cake lengthwise. Let cool completely, about 20 minutes.

- Have ready meringue and cake roll. In a small bowl stir together yogurt, vanilla, and 1 tablespoon sugar.
- In a large bowl with a whisk or an electric mixer beat cream and 2 teaspoons sugar until cream just holds stiff peaks. Crumble meringue into 1/2-inch pieces and gently fold into whipped cream. - To make chocolate-covered meringue:
- Preheat oven to 325°F.
- In a bowl with an electric mixer beat whites on high speed until foamy. Add cream of tartar and continue beating until whites hold soft peaks. Add sugar and beat until meringue holds stiff, glossy peaks.
- Line a baking sheet with parchment paper or foil and on it spread meringue about 1/2 inch thick (shape does not matter). Bake meringue in middle of oven 45 minutes, or until crisp. Turn off oven and let meringue stand 1 hour. Remove meringue from oven and cool completely on baking sheet on a rack.
- Carefully peel parchment paper or foil and put meringue, flat side up, on a work surface. In a small heavy saucepan melt chocolate over low heat, stirring occasionally, and spread on meringue in a thin layer. Chill meringue until chocolate is set, about 10 minutes. (Meringue may be made 1 week ahead and kept in a sealed plastic bag in a cool place.)
- To make cocoa cake roll:
- Preheat oven to 425°F. and line a greased 17- by 10 1/2-inch jelly-roll pan with wax paper or parchment paper. Butter paper and dust with flour, shaking off excess flour.
- In a small saucepan bring water to a boil over moderate heat. Remove pan from heat and stir in cocoa powder and vanilla until smooth.
- In a large bowl with an electric mixer beat yolks and 1/3 cup sugar on high speed until pale and thick, about 5 minutes. Add cocoa mixture and beat until mixture is thick again, 3 to 5 minutes. Add flour and salt and beat 1 minute. (If using a standing electric mixer, transfer mixture to a large shallow bowl better suited to folding.)
- In a medium bowl with cleaned beaters beat whites on high speed until foamy. Add cream of tartar and continue beating until whites hold soft peaks. Add remaining 1/3 cup sugar and beat until meringue holds stiff, glossy peaks.
- Stir about one fourth whites into cocoa mixture to lighten and fold in remaining whites gently but thoroughly. Spoon batter into a large pastry bag fitted with a 1/2-inch plain tip and, holding bag with tip about 1/2 inch from surface of pan, pipe lengthwise in side-by-side strips, filling pan. (Alternatively, batter may be gently spread into pan.) Bake cake 8 minutes, or until it springs back when touched lightly in center with finger. Cool cake in pan, covered with a damp kitchen towel, on a rack.
- Invert cake onto towel and gently peel off wax paper or parchment paper. Beginning with a long side, roll up cake in towel jelly-roll fashion.

- Prepare oven and baking sheet: Heat oven to 450 degrees, with rack in bottom half. Coat a 12 1/2-by-17 1/2-inch rimmed baking sheet with cooking spray. Line with parchment paper; coat with cooking spray. Dust with cocoa powder and tap out excess.
- Whisk together cocoa powder, flour, and salt in a bowl.
- Bring about 2 inches of water to a simmer in a medium saucepan. In the heatproof bowl of an electric mixer set over (not in) simmering water, whisk eggs, yolks, and sugar until sugar has dissolved and mixture is warm to the touch. Attach bowl to mixer fitted with whisk attachment; beat on medium-high speed for 2 minutes. Raise speed to high; beat until mixture is pale and thick, about 4 minutes more.
- Sift cocoa mixture over egg mixture; using a large rubber spatula, carefully fold. When almost incorporated, pour melted butter down side of bowl; gently fold to combine.
- Using an offset spatula, spread batter evenly into prepared sheet. Bake cake until springy to the touch, 6 to 7 minutes. Dust top of cake with cocoa powder. Run a knife around sides of cake. Invert onto a clean kitchen towel, and remove parchment.
- While the sheet cake is still warm, gently roll, starting from one short side, into a log, incorporating the kitchen towel. Let the cake cool completely, rolled. (This will give the cake a "shape memory," so it will be easier to roll again with filling.)
- Meanwhile, make rum syrup: In a small saucepan, combine the water and ¼ cup sugar. Bring to a boil; reduce heat and simmer until sugar has dissolved, about 3 minutes. Remove from heat; add rum, then let cool completely.
- Fill cake and reroll: Unroll cake. Brush entire surface with cooled rum syrup. Whip cream and remaining sugar until soft peaks form; spread over cake leaving a 1/2-inch border all around. Roll cake to enclose filling (without towel) starting at a short end. Wrap the towel around rolled cake, securing with clips or clothespins to help retain the shape.
- Chill and serve: Refrigerate 30 minutes (or up to 3 hours). Dust with cocoa powder, cut into slices with a serrated knife, and serve.

- Filling: Bring cream just to a boil in a small saucepan over medium heat; pour over chocolate in a medium bowl. Let stand until softened, about 3 minutes; using a rubber spatula, stir until emulsified. Cover with plastic and refrigerate overnight.
- Cake: Butter a rimmed baking sheet; line with parchment, then butter parchment. Preheat oven to 350 degrees. In a medium bowl, whisk together flour, 1/4 cup sugar, baking powder, oil, egg yolks, and milk. In the bowl of a mixer fitted with the whisk attachment, combine egg whites, salt, cream of tartar, and vanilla. Whisk on medium speed until foamy, about 1 minute. Slowly add remaining 1/2 cup sugar. Increase mixer speed to high and continue whisking until stiff, glossy peaks form, about 5 minutes more.
- Stir about one-third of egg-white mixture into flour mixture to lighten, then gently fold in remaining egg-white mixture in three additions. Transfer about 1 cup batter to a small bowl and gently fold in cocoa. - Unroll cake. Whisk chilled chocolate filling to soft peaks. Evenly spread on top of cake, leaving a 1/2-inch border. Starting at a short end, carefully roll up cake without parchment. CHOCOLATE ROULADE WITH MASCARPONE FILLING
We made this for Rosh Hashonah this year. It is a wonderful and very pretty chocolate roulade. This recipe is also wheat-free(uses potato flour), so it is suitable for coeliacs. Diana's Desserts, have had this since 2006 and I felt that, this, was the dessert for the High Holy Days. It was scrumptious and decadent!

- Preheat oven to 350º F/180ºC.
- Line a 15 x 10-inch jelly roll pan (swiss roll tin) with parchment paper.

- Combine with mascarpone in a bowl and whisk until thick.
- Stir in pistachios.
- Gently unroll cake and spread with filling, leaving a half inch (2 cm) border.
- Re-roll cake (it may crack a little), then wrap in foil and refrigerate for 30 minutes or until filling is firm.
- Cake will keep, refrigerated, for up to 3 days.
- Serve topped with raspberries, edible flowers or mint sprigs.
- *The cream filling may be made without the marmalade and pistachio's. If desired, you may make a cream filling with just the mascarpone cheese and orange liqueur.
- **Tips:
- Grease the jelly roll pan before lining it. This will make the paper sit flat and adhere to the corners.
- To fold egg whites into a batter, always use a large metal spoon and a light hand to preserve the air. Start by stirring 1/4 of the egg whites into the batter to lighten it, then gently fold in remaining egg white.

- Using a rubber spatula, fold the egg white mixture, one-third at a time, into the yolk mixture, taking care not to deflate the mix. Add the sifted flour into the mixture as you add the last third of the egg whites. Fold as before until all the elements are well-combined with no pockets of flour left.
- Pour the batter into the center of the jelly roll pan and tilt it to spread the batter evenly all over the pan, making sure it goes all the way into the corners. Do not pat or knock on the pan, as this will deflate the batter. Bake for 10 minutes.
- While the cake is baking, make the filling. Using a handheld or standing mixer, beat the heavy cream for about 30 seconds. Add the confectioners' sugar and vanilla extract, and continue to beat until you get stiff peaks. Once ready, refrigerate until needed.
- To assemble the cake, lay a clean kitchen towel on a flat, even surface and place a piece of parchment paper the size of the cake on top of the towel. Once the cake is cooked, working quickly, remove it from the oven and run a paring knife along the edges of the jelly roll pan to help unmold the cake. Take the cake from the edges and flip it onto the parchment paper set on top of the kitchen towel. Peel off the parchment paper.
- Starting at one end of the towel, roll the cake into a cigar shape, rolling it tightly into a classic jelly roll shape. Continue rolling until the cake is rolled and tucked inside the kitchen towel. Let it stand for 15 to 20 minutes to cool and semi-set in a snail shape while you make the raspberry sauce.
- To make the raspberry sauce: Add the raspberries, confectioners' sugar and water to a nonstick saute pan, and cook over medium heat until the raspberries begin to break down and become liquid. Let simmer for about 5 minutes, then strain through a sieve into a small saucepan and reduce until thick and syrupy.
- Once the cake has cooled, unroll it from the kitchen towel and remove the parchment paper. Spread the whipped cream evenly over the interior of the cake and sprinkle the raspberries. Roll the roulade snugly once again, making sure to tuck in the raspberries as you go along. It may seem like not all of them will fit, but continue to tuck the fruits in generously as you go and they will. Place the roulade on a tray or platter and sprinkle some confectioners' sugar over it. Refrigerate until ready to serve, at least 30 minutes.
- To serve, cut the roll into nine slices and serve with some raspberry sauce.

CHOCOLATE TANGERINE ROULADE

- Make cake:
- Preheat oven to 400° F. Butter a 15- by 10 1/2-inch jelly-roll pan and line with wax paper or parchment paper. Butter and flour paper, knocking out excess flour.
- In a double boiler or a metal bowl set over a saucepan of barely simmering water melt chocolate, stirring until smooth, and remove double boiler or pan from heat.
- In a bowl with an electric mixer beat yolks, sugar, zest, and salt until thick, pale, and mixture forms a ribbon when beaters are lifted. Beat in melted chocolate until just combined. In another bowl with cleaned beaters beat whites until they just hold soft peaks. Stir one fourth whites into chocolate mixture to lighten and fold in remaining whites gently but thoroughly. Pour batter into jelly-roll pan, spreading evenly with a spatula, and bake in middle of oven 10 minutes, or until cake is springy to the touch. Cool cake in pan, covered with a dampened kitchen towel.
- With a sharp knife cut peel and pith from tangerines or oranges and cut sections free from membranes. In a bowl with an electric mixer beat cream with liqueur until it just holds stiff peaks and fold in fruit sections until just combined.
- Assemble roulade:
- Put a large sheet of foil (about 20 by 15 inches) on a work surface and lightly dust with cocoa powder. Invert cake onto foil and gently peel off paper. Spoon cream mixture evenly onto cake. Beginning with a short side and using foil as a guide, roll up roulade jelly-roll fashion and transfer to a platter, seam side down.
- Lightly dust roulade with cocoa powder. Roulade may be made 1 day ahead and chilled, loosely covered.

- Heat oven to 180C/160C fan/gas 4. Grease a 33 x 23cm Swiss roll tin and line with baking parchment, then grease the parchment too. Tip the chocolate into a heatproof bowl and place it over a pan of gently simmering water. Leave to melt, stirring occasionally, then remove from the heat and allow to cool a little (alternatively, melt it in short bursts in the microwave).
- Put the egg whites in a large, clean bowl, and the yolks and sugar in another. With very clean beaters, whisk the whites until they are just holding soft peaks. Transfer the beaters to the yolks bowl (no need to wash them) and beat until the sugar has dissolved and the mixture is thick and pale.
- Add a large spoonful of whites to the yolks and mix with a large metal spoon to loosen the yolks a little. Add the remaining whites and gently fold into the yolks, avoiding knocking out too much air.
- When nearly all incorporated, sieve the cocoa over the surface, scatter over the almonds and pour in the melted chocolate. Continue folding until the mixture is well combined, then scrape into your tin. Spread the mixture to the edges and level the surface. Bake for 15-18 mins on the middle shelf of the oven until the surface is crisp and the cake feels springy.
- While still warm, turn the roulade out onto a large piece of baking parchment, removing the parchment you used to bake the roulade on. With a small serrated knife, make a shallow incision about 1cm in from one of the shorter edges, making sure that you don't cut all the way thorough. Starting from this end, roll up as tightly as you can, bending the cut piece inwards to get the centre of the roll tight, using the baking parchment to help you and stop the layers sticking. Leave to set and cool.
- Tip the mascarpone, cream, Malibu (if using) and icing sugar into a bowl and whisk until softly whipped. Carefully unroll the roulade - it will crack in places, but don't worry. Spread a third of the cream all over the surface, leaving a border of about 1.5cm all the way around. Drizzle the passion fruit curd all over the surface and top evenly with the passion fruit flesh.
- Starting from the end that you used before, re-roll the roulade as tightly as you can, bending the cut piece into the cream to get the centre of the roll tight. Place the roulade, seam-side down, on a serving plate or board and spread the remaining cream all over the outside. Press the coconut flakes all over the top and sides, and dust with a little gold glitter, if you like. Chill and serve within a few hours. Leftovers will keep in the fridge for 2 days.

CORDON BLEU CHOCOLATE ROULADE
If you're looking for a wonderfully rich chocolate dessert, look no further. This recipe comes from Cordon Bleu Minibooks Souffle Recipes Booklet published way back in 1970. Cooking time includes refrigeration time.

- Line a 12" x 8" swiss roll tin with oiled greaseproof paper or brush a paper case with oil or melted shortening (instructions for making a paper case will follow).
- Preheat oven to 350°F.
- Separate the eggs.
- Beat yolks and add sugar gradually until mixture is lemon coloured.
- Melt chocolate in the water using a double boiler.
- When the chocolate is a thick cream, remove from heat.
- Whip the egg whites until they form a firm snow.
- Add chocolate to egg yolk mixture.
- Gently cut and fold the egg whites into the mixture and turn it into the prepared tin or case.
- Bake in preheated oven for 10 to 15 minutes or until firm when touched.
- Wet a clean cloth in cold water and wring out.
- Remove roulade from oven, allow to cool slightly, then cover with cloth (this will prevent any sugary crust from forming).
- Leave in a cool place for 12 hours or in a fridge overnight.
- Whip the cream and flavour to taste with the essence.
- Lay a piece of greaseproof paper on a flat surface.
- Dust well with icing sugar.
- Remove cloth and turn roulade upside down on the prepared paper.
- Carefully remove paper from roulade.
- Spread with the whipped cream.
- Roll up like a swiss roll.
- Place on a serving dish and dust well with icing sugar.
- How to make a roulade case:.
- Use thick greaseproof paper or nonstick kitchen paper.
- It should be 1 1/2 inches longer and wider than the pan you are using.
- Fold a 1 1/2 inch border on all 4 sides.
- Cut a slit at each corner and fold one cut piece over the other to miter the corners.
- Use paperclips to secure the corners.
- Slide the case onto a baking sheet.
- Lightly brush with oil, melted butter or melted shortening before use.

CHOCOLATE MOUSSE ROULADE RECIPE

- 1) Preheat oven to 375 degrees. Butter a jelly roll pan (10x15). Line bottom and sides with wax paper. Butter and flour the paper. Set aside. 2)In top of double boiler, melt chocolate with the coffee. Set aside to cool slightly. 3) Beat egg yolks for 4-5 minutes until light lemon coloured. Add half the sugar and continue to beat at high speed for an additional 5 minutes until very thick. On lowest speed add the melted chocolate and then the cocoa, beating only until smooth. 4)In large bowl, beat the whites with the salt until they begin to thicken. Add the remaining sugar and continue beating until the whites hold a shape and are stiff but not dry. Fold the whites and chocolate together. Turn into prepared pan, handling lightly. Spread level and place in the oven. 5) While the cake is baking (about 25-30 minutes) wet and wring out a smooth kitchen towel. When top of cake springs back when lightly touched, remove from oven. Working quickly, cut around sides of cake if sticking to sides of pan and turn out onto prepared towel. Carefully peel off wax paper and starting at long side, roll the cake and towel together. Place on a rack to cool. It must be completely cool to fill. 6) The mousse: While the cake is baking, prepare the mousse. In the top of a double boiler, melt the chocolate and coffee. Remove from heat and set aside to cool slightly. Then whisk in butter in bits, making sure the mixture is not too hot to melt the butter. Let it cool completely until it is the texture of thick cream. 7) When the mixture has cooled, stir in the yolks, one at a time until thoroughly blended. 8) Beat egg whites until thick and foamy. Add the 1 tb icing sugar and continue beating until they hold a shape and are stiff, but not dry. Fold the whites and chocolate mixture together and chill until mousse is quite thick yet spreadable. 9) Unroll the roulade. Spread generously with the mousse and roll up again. The roulade may be refrigerated at this time for a short while to solidify or for several hours. Remove at least 1/2 hour before serving. Sprinkle with confectioners sugar and slice on the angle for serving. *Serve with mocha whipped cream or coffee custard
TRIPLE CHOCOLATE FLOURLESS ROULADE CAKE

- Preheat oven to 450. Separate 4 eggs. Put yolks and 1 whole egg in mixer, add 2 Tbsps sugar. Whisk on high 5 minutes, till creamy light yellow. Transfer to another bowl. Wash and dry mixer bowl and whisk. Whisk reserved egg whites in mixer on high 1 minute, till foamy. Add remaining sugar by Tbsps. Beat to stiff peaks. Add cocoa and yolks. Fold with rubber spatula. Line a 13-by-18-inch sheet pan with parchment. Pour on batter and smooth to edges of pan. Bake 4 minutes, and transfer parchment side down to work space. Lay damp towel on top of cake to cool. Meanwhile, combine orange juice, rum, and brown sugar in saucepan. Bring to boil, stir, and remove from the heat. Drizzle syrup onto cake all the way to the edges. Microwave chocolate for filling on high at 30-second intervals. Whip cream to soft peaks. Fold half of whipped cream into cooled chocolate. When blended, fold in rest of cream. Spread filling on cake. Roll from long end, peeling off parchment. Wrap rolled log snugly in parchment. Refrigerate 2 hours to set filling. Bring cream for icing to boil. Remove from heat, add chocolate, stir, and cool 20 minutes, stirring occasionally. Cover log with icing and decorate. Refrigerate, but allow to sit at room temperature for 1 hour before serving.
CHOCOLATE ROULADE
Dark and indulgent, this chocolate roulade oozing with its spiced berry filling is perfect for Christmas entertaining. It can be made ahead of time and frozen, simply defrost, dust with icing sugar and serve.

- Preheat oven to 180c, 350f, gas mark 4. Line a 34 x 24cm baking tray with greased baking paper.
- Break the chocolate into pieces, place in a small bowl, set over a pan of simmering water, stir until melted. Alternatively heat in a microwave for approx 1 minute, taking care not to overheat.
- Separate the eggs, placing in large bowls. Add the caster sugar to the yolks, beat with an electric whisk until light and creamy. Wash the beaters and whisk the egg whites until standing in soft peaks.
- Fold the chocolate into the egg yolk mixture then fold in the egg white. Pour into the tin, level and cook for 15-20 minutes. Remove from the oven, cover with a damp tea towel. Leave for several hours or overnight.
- To make the compote, place the berries in a saucepan, add the cordial and allow to cook gently for several minutes until softened. Cool.
- Whisk the cream and Cointreau until standing in soft peaks.
- Turn the roulade onto a sheet of baking paper dusted with icing sugar, peel off the paper. Spread the cream evenly over the surface then top with the compote, roll up like a swiss roll, donâÃÂÃÂt worry if it cracks a little. Place on a serving plate and chill until ready to serve.

- Preheat the oven to 375F. Line a jellyroll pan with waxed paper, aluminum foil, or parchment paper. Butter and flour it, then shake out the excess. In a med-lg. bowl, beat together the egg yolks and sugar. In a small bowl, sift together the flour, cocoa, and baking powder. Gradually stir them into the egg yolk mixture. In a lg. clean bowl, beat the egg whites until they form stiff peaks. Stir a spoonful of whites into the batter, then quickly fold in the remaining whites. Spread the batter into the prepared pan and smooth it out into the corners. Bake it in the preheated oven until the top is golden, about 15 mins. When you take the sponge cake out, loosen the edges. Let it cool 5 mins., then spread a tea towel over the cake, invert and remove the pan, and peel off the paper. While the cake is still warm, turn it so a long edge is before you, and roll up the cake in the towel, keeping the long edges uncurled. This may be done a day ahead. Keep the cake covered to stay moist, and let it cool completely. A few hours before serving, unroll the cake, trim the long edges with a serrated knife, and spread the apricot preserves over the sponge. Whip the cream until firm peaks form, sweeten it to taste with confectioners sugar, and spread the cream over the preserves, not quite to the edges. Roll up the cake again and set it seamside down on a serving plate. With a serrated knife, trim the two ends. Chill well. To serve the roulade, dust the top with confectioners sugar and slice it across into spiral rounds.
