65 vanilla wafers cookies, finely crushed
1 stick butter, melted, plus more for pan
3 ripe bananas, peeled, thinly sliced on a diagonal
2 tablespoons fresh orange juice
1/2 cup peanut brittle, ground into crumbs
Chocolate Pudding, recipe follows
Peanut Butter Cream, recipe follows
2 cups heavy cream
1 teaspoons almond extract
1/4 cup confectioners' sugar
1/2 cup peanut brittle, broken into bite-size pieces
3/4 cup sugar
1/2 cup cocoa powder
1/3 cup all-purpose flour
2 eggs
4 egg yolks
2 cups milk, divided
4 ounces cream cheese, at room temperature
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
1/2 cup creamy peanut butter (do not use old-fashioned or freshly ground)
2/3 cup chilled heavy whipping cream

Steps:

  • Preheat the oven to 350 degrees F. Butter a deep 9 by 2-inch pie plate.
  • Drizzle the crushed vanilla wafers with the melted butter and stir until blended. Press on the bottom and up the sides of the pie plate. Pop in the oven and bake until lightly browned, 20 to 25 minutes. Cool on a wire rack for about 30 minutes.
  • Toss the banana slices with the orange juice, making sure all the slices get coated. (This helps keep the bananas from browning.) Place the slices on a paper towel-lined plate and pat any excess juices dry.
  • Arrange half the banana slices in a single layer over the cooled crust. Cover completely with the Chocolate Pudding, spreading it with an offset spatula or butter knife. Top with the rest of the bananas. Sprinkle the peanut brittle crumbs over the bananas. Place dollops of the Peanut Butter Cream on top, spreading it out evenly. Chill the pie in the refrigerator for at least 3 hours.
  • Whip the cream until stiff peaks are just about to form. Whip in the almond extract and sugar until stiff peaks form.
  • Take the pie out of the refrigerator. Place dollops of the whipped cream on top and spread it out evenly. Scatter pieces of peanut brittle on top and serve.
  • Whisk the sugar, cocoa powder and flour in a bowl until there are no lumps. Crack the eggs into the bowl, add the yolks and whisk into a paste. Slowly whisk in 1 cup milk until it is fully incorporated, and then whisk in the remaining 1 cup milk. Put the milk mixture into a saucepan and put over medium heat. Cook, whisking constantly, until it starts to look like pudding, 10 to 15 minutes. It will begin to bubble and it will hold soft peaks when you lift the whisk out. Take off the heat and cool to room temperature.
  • Beat the cream cheese and confectioners'sugar with an electric mixer until completely smooth. Add the vanilla and peanut butter, beating until fully incorporated. In a separate bowl, beat the heavy cream until stiff peaks form. Working in batches, taking care not to deflate the whipped cream, fold a large spoonful of whipped cream into the peanut butter mixture. Fold in the remaining cream in 2 additions.

15 ounces all-purpose flour
5 ounces cocoa powder

8 ounces creamy peanut butter
2 cups granulated sugar

Steps:

  • For the crust: Preheat the oven to 325 degrees F. Line muffin pans with 36 muffin liners. Combine the graham cracker crumbs, granulated sugar and butter in a bowl. Mix with your hands until well combined. Press 2 tablespoons of the mixture into the cupcake liners and bake for 7 minutes. Remove and let cool.
  • For the chocolate cake: Preheat the oven to 325 degrees F. In the bowl of an electric mixer with the whisk attachment, whisk the flour, cocoa powder, granulated sugar, baking soda, baking powder and salt until well combined. Add the eggs, one at a time, scraping the bowl as needed. Add the buttermilk, vegetable oil, vanilla and coffee and mix for about a minute until well combined. Fill the 36 muffin pans with the pre-baked graham cracker crust three-quarters full with batter and bake until a toothpick inserted comes out clean, about 20 minutes.
  • For the peanut butter cream cheese filling: Whip the cream cheese and butter in an electric mixer with the paddle attachment until fully incorporated. With the mixer on low, gradually add the powdered sugar until combined. Add the vanilla and mix until combined. Finally, add the peanut butter and mix until fully incorporated.
  • For the marshmallow frosting: In small saucepan, combine the granulated sugar, 5 ounces water and the cream of tarter and boil until the sugar dissolves, stirring occasionally.
  • In the bowl of an electric mixer with the whisk attachment, beat the egg whites and vanilla until firm peaks form. With mixer on high, slowly stream the hot sugar mixture into the egg whites and mix for about 3 minutes.
  • To assemble: Use a knife to cut a hole out of the center of the cupcakes. Fill with peanut butter cream cheese filling with a spoon and frost with marshmallow frosting.

Steps:

  • For the crust: Pulse the pretzels in a food processor until finely ground. In a large bowl, combine the pretzel crumbs, butter and brown sugar. Mix with your hands. Press the mixture into the bottom and up the sides of a 9-inch pie plate. Cover and refrigerate.
  • For the filling: Combine the cream cheese, peanut butter and brown sugar in a medium bowl and beat with a mixer until smooth. Fold in the whipped cream. Spoon the filling into the pie shell, cover and return to the refrigerator.

1/2 cup dry-roasted unsalted peanuts
1/4 cup butter, melted
3 pints chocolate ice cream, softened

1 (8 ounce) jar fudge sauce
1/4 cup strong brewed coffee
2 tablespoons coffee liqueur (optional)

Shortcut: You can substitute a prepared Nilla Pie Crust for the Nilla wafers and butter. Cooking time is actually refrigeration time.

We made this in a 9 inch pan (since that's what the ingredients were for). You can easily prepare this in a 9x13 dish by doubling the recipe. And I would suggest doing that ... it is that good!

121 g (1/2 cup) heavy cream
113 g (4 ounces) unsweetened chocolate, finely chopped
198 g (1 cup) granulated sugar

Steps:

  • Make the filling: In a medium saucepan, heat the milk, cream, and chocolate over medium-low heat, stirring constantly, until the chocolate has fully melted. Turn the heat up to medium and bring the mixture to a gentle simmer.
  • Meanwhile, whisk the sugar, cornstarch, and espresso powder together in a medium heatproof bowl. Whisk in the egg yolks until well combined.
  • When the chocolate mixture has come to a simmer, pour about half of it into the egg yolk mixture in a slow, steady stream, whisking constantly. Then pour the egg yolk mixture into the saucepan and cook the pudding over low heat, whisking constantly, until it gets very thick and comes to a first boil (a single large bubble comes up to the surface in the center of the pudding), 3 to 4 minutes. Remove the pan from the heat. Stir in the butter and vanilla until well combined with a silicone spatula.
  • Strain the warm pudding into the cooled piecrust and cover with plastic wrap pressed directly against the surface of the pudding. Let cool at room temperature until the filling is completely set, 35 to 45 minutes.
  • Make the peanut butter cream: In the bowl of a stand mixer fitted with the whisk attachment (or in a large bowl, using a hand mixer), whip the peanut butter and sugar on medium-high speed until light and fluffy, 2 to 3 minutes. Add the cream and continue whipping until the mixture reaches medium peaks. Add the vanilla and mix to combine.
  • Finish the pie: Dollop the peanut butter cream on top of the cooled pie and swirl it around with an offset spatula (easier), or transfer it to a pastry bag and pipe it on (fancier-see Pro Tip). Refrigerate until ready to serve.
  • To mix the dough by hand: In a large bowl, whisk together the flour and salt. Add the butter cubes, tossing them through the flour until each piece is well coated. Cut the butter into the flour by pressing the pieces between your palms or your fingers, flattening the cubes into big shards and continuing to toss them through the flour, recoating the shingled pieces.
  • For a flaky crust, continue cutting the butter into the flour just until the pieces of butter are about the size of walnut halves. Or, for a mealy crust, continue to work the mixture together until the pieces of butter are about the size of peas. To mix the dough in a food processor: See Pro Tip.
  • Make a well in the center of the flour mixture. Add 3 tablespoons ice water for a single crust or 6 tablespoons for a double crust and mix to incorporate. Then add more ice water 1 tablespoon at a time and continue mixing just until the dough comes together. As it begins to come together, you can knead it a few times to make sure it's fully combined. It's important not to add too much water to the dough, which should never be sticky- it should hold together easily in a ball but still feel almost dry to the touch.
  • Form the dough into an even disk if making a single crust; or divide in half and shape into 2 equal disks if making a double crust. Wrap tightly in plastic wrap and chill for at least 30 minutes or up to overnight.
  • For a single-crust pie: Lightly flour the work surface. Roll out the dough to a circle 1/4-inch thick: Start in the center of the disk of dough and push away from you using even pressure. Return to the center and repeat, this time moving toward you. Continue, rotating the dough occasionally and reflouring as needed to prevent the dough from sticking. This produces a more even result than just rolling back and forth, which can often yield thin edges and a thick center.
  • To transfer the dough to the pie pan, roll the dough up onto the rolling pin, starting at the far edge of the round. With the pie pan in front of you, start at the edge closest to you and gently unfurl the dough into the pan. Press gently to make sure the crust settles all the way to the bottom, but be careful not to poke any holes in the dough. Trim away the excess dough, leaving a 1/2-inch overhang all around. Chill in the refrigerator for 15 to 30 minutes or freeze for 5 to 10 minutes.
  • Tuck the excess dough under at the edges, pressing lightly to help seal the dough to the outer rim of the pie pan. Crimp the edges of the piecrust as desired. Return the dough to the refrigerator for 20 to 30 minutes or to the freezer for 5 to 10 minutes.
  • Mix the egg with about 1 tablespoon water and whisk. Brush the crimped edges of the dough with a thin layer of the egg wash. The crust is now ready to be blind-baked.
  • Peanut Butter Pie Dough: Cut a piece of parchment about 5 inches square. Spread 68 g (1/4 cup creamy peanut butter) in a 1/2-inch-thick layer on the paper and freeze until fairly firm, about 1 hour. Cut into cubes and use in place of 57 g (2 oz) (4 tablespoons) of the butter.
  • To Blind Bake A Single Pie: Preheat the oven to 425 degrees F (218 degrees C), preferably with a baking stone on the bottom rack. Cut a square of parchment paper slightly larger than the pie pan.
  • Prick the chilled dough all over with a fork. Place the parchment over the crust and fill with pie weights or dried beans.
  • Bake the crust on the stone or bottom rack just until the edges barely begin to turn golden, 15 to 20 minutes.
  • Take the pan out of the oven and remove the parchment and weights.
  • Return the pie pan to the oven and bake for another 12 to 17 minutes, until the dough is evenly golden brown. Cool the crust completely before filling it.

1 pkg. (16.5 oz.) NESTLÉ® TOLL HOUSE® Refrigerated Chocolate Chip Cookie Bar Dough, softened, divided
1/2 cup creamy peanut butter, divided
2 cups DREYER'S® or EDY'S SLOW-CHURNED® vanilla ice cream, softened
1/4 cup chopped peanuts
3 tablespoons NESTLÉ NESQUIK Chocolate Flavor Syrup
Chopped peanuts (optional)

Steps:

  • Directions: PREHEAT oven to 350° F. Grease 9-inch pie plate. PRESS 20 squares of cookie dough onto bottom and up side of prepared pie plate. BAKE for 18 to 22 minutes or until golden brown; flatten down with back of spoon to form pie shell. Cool completely on wire rack. SPREAD 1/4 cup peanut butter over crust. Mix ice cream, remaining 1/4 cup peanut butter and 1/4 cup peanuts in medium bowl. Spoon into cookie crust; spread evenly. Drizzle with Nesquik and additional chopped peanuts. Freeze for at least 2 hours or overnight. BAKE remaining cookie dough according to package directions. Cool completely on wire rack; crumble cookies. THAW pie for 5 to 10 minutes. 2 Tbsp. sugar
1/4 cup butter or margarine, melted
3/4 cup hot fudge ice cream topping, divided
1-1/2 cups milk
1/2 cup creamy peanut butter
2 pkg. (3.4 oz. each) JELL-O Vanilla Flavor Instant Pudding
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1 banana

Steps:

  • Mix wafer crumbs, sugar and butter until blended; press onto bottom and up side of 9-inch pie plate. Warm 1/2 cup fudge topping; drizzle onto bottom of crust. Freeze 10 min.
  • Whisk milk gradually into peanut butter in large bowl. Add dry pudding mixes; beat 2 min. (Pudding will be thick.) Stir in half the COOL WHIP. Spoon over chocolate layer in crust; cover with remaining COOL WHIP.
  • Refrigerate 3 hours or until firm.

Steps:

  • Heat oven to 350ºF.

2/3 cup Breakstone Unsalted Butter, softened
Chocolate filling
1 1/3 cups Baker's Semi-Sweet Chocolate Chips
3/4 cup Jet-Puffed Mini Marshmallows
1/2 cup sweetened condensed milk
1/4 teaspoon vanilla
1 cup heavy cream
Peanut butter filling
1/2 cup sweetened condensed milk
1/2 cup crunchy or smooth peanut butter
1 cup heavy cream
1/4 cup sugar
Garnish
Chocolate curls
Peanut butter cups

Steps:

  • For the crust: In a food processor, blend chocolate wafers and butter. Press into a 9 inch glass pie plate. Refrigerate at least 45 minutes.
  • For the chocolate filling: In a medium saucepan over low heat, stir in chocolate chips, marshmallows, and milk until smooth. Transfer into a bowl, Stir in vanilla and let cool. Beat in heavy cream with a electric mixer until blended. Chill for one hour.
  • Make the peanut butter filling. In a medium saucepan over low heat melt the milk and peanut butter, mixing well. Let cool. Whip the cream and sugar with electric mixer until almost stiff. Chill 1/2 of the whipped cream. Fold into the peanut butter mixture, then spread evenly onto crust. Chill until set.
  • Beat chocolate filling with electric mixer on high speed until almost stiff. Spread over the peanut butter filling. Wrap and chill 3 hours or overnight.
  • Serve with remaining whipped cream. Garnish with chocolate curls and peanut butter cups.
