8 graham crackers, crushed
3 tablespoons unsalted butter, melted
2 cups dark chocolate chip, melted
1 ½ cups whipped cream
1 ½ cups milk chocolate chips, melted
2 cups whipped cream
1 thick chocolate bar
2 tablespoons cocoa powder

Steps:

  • Make the crust: In a medium bowl, use a fork to combine the graham cracker crumbs and the butter until they are the texture of wet sand.
  • Transfer the crust to an 8-inch (20 cm) springform pan and use the bottom of a wine glass or other flat instrument to press against the bottom.
  • Make the dark chocolate mousse: In a medium bowl, let the melted dark chocolate chips cool to room temperature, then use a spatula to gently fold in whipped cream.
  • Pour the dark chocolate mousse over the crust and smooth out the top as much as possible, then freeze for 15 minutes.
  • Make the milk chocolate mousse: In a medium bowl, let the melted milk chocolate chips cool to room temperature, then use a spatula to gently fold in whipped cream.
  • Pour the milk chocolate mousse over the dark chocolate layer and smooth the top with a spatula.
  • Freeze for 2 hours, or until the mousse is set.
  • Take a vegetable peeler and press it down along the edge of the chocolate bar to create mini chocolate spirals. Make at least 2 tablespoons worth.
  • Remove from the cake from the freezer and gently take the cake out of the springform pan.
  • Sift the cocoa powder over the top of the cake, then sprinkle with the chocolate shavings.
  • Pairs well with Cabernet Sauvignon.

Mousse
6 ounces good-quality white chocolate (such as Lindt or Baker's), chopped
1 1/4 cups chilled whipping cream
1/2 teaspoon vanilla extract
2 large egg whites
1/8 teaspoon cream of tartar
1/3 cup seedless strawberry jam
1 tablespoon fresh lemon juice
1 16-ounce basket strawberries, hulled, thinly sliced lengthwise

Steps:

  • For crust:
  • Blend flour, sugar, and salt in processor. Add butter and cut in using on/off turns until mixture resembles coarse meal. Whisk egg yolk and 1 tablespoon ice water in small bowl to blend; add to processor and process until moist clumps form, adding more ice water by teaspoonfuls if dough is dry. Gather dough into ball; flatten into disk. Roll out dough on floured surface to 13-inch round. Transfer dough to 9-inch-diameter tart pan with removable bottom. Trim overhang to 1/2 inch. Fold overhang in and press onto sides, forming double-thick sides. Pierce crust all over with fork. Freeze crust 30 minutes.
  • Preheat oven to 375°F. Line crust with foil; fill with dried beans or pie weights. Bake until crust sides are light brown, about 25 minutes. Remove foil and beans; bake until crust is cooked through and golden brown, about 20 minutes longer. Cool crust completely in pan on rack.
  • For mousse:
  • Combine white chocolate and 1/4 cup whipping cream in large metal bowl. Set bowl over saucepan of simmering water (do not allow bottom of bowl to touch water) and stir until chocolate is melted and smooth. Remove bowl from over water; cool chocolate mixture until lukewarm, about 15 minutes.
  • Beat remaining 1 cup whipping cream and vanilla in large bowl until peaks form. Using clean dry beaters, beat egg whites with cream of tartar in medium bowl until stiff but not dry. Fold whites into chocolate mixture, then fold in whipped cream. Transfer mixture to cooled crust; smooth top. Chill overnight.
  • Combine jam and lemon juice in small saucepan; bring to simmer, stirring over medium heat until jam melts. Remove from heat. Arrange sliced strawberries in concentric circles atop tart. Brush berries with melted jam mixture. Chill tart up to 2 hours and serve.

1 sleeve graham crackers

8 ounces bacon, diced, cooked and drained plus 2 teaspoons reserved grease
1/2 cup maple syrup
1 cup chopped hazelnuts

3/4 cup heavy cream
3/4 cup confectioners' sugar
1/4 cup cocoa powder
3 tablespoons bourbon
1 teaspoon vanilla bean paste
Pinch salt
1 small block semisweet chocolate, shaved into curls
Mint leaves, for garnish

Steps:

  • Preheat the oven to 350 degrees F. Spray the tart shells with cooking spray and set aside.
  • For the crust: Place the hazelnuts, granulated sugar and graham crackers in a food processor and pulse until it looks like cornmeal. Add the butter, a little at a time, pulsing until the mixture comes together. Divide among the tart shells and press up the sides, making sure the crust is tightly packed.
  • For the filling: In a large bowl, mix together the brown sugar, vanilla bean paste, salt and eggs. Add the bacon grease and maple syrup; mix to combine. Stir in the hazelnuts and pecans.
  • Sprinkle the hazelnuts and pecans onto the bottoms of the crusts. Pour the syrup mixture over the nuts. Sprinkle the tops with bacon. Bake until set, about 25 minutes. Let cool.
  • For the mousse: In the bowl of a stand mixer fitted with the whip attachment, whip the cream cheese for 30 seconds to aerate it. Add the cream, confectioners' sugar, cocoa powder, bourbon, vanilla bean paste and salt and whip until light and fluffy. Taste and add more cocoa powder if desired.
  • Pop the cooled tarts out of the pan and place on individual plates. Spoon the mousse into small dishes, garnish with chocolate curls and mint leaves, and serve on the side.

1/2 teaspoon baking soda
1 pinch salt
1/4 cup firmly packed light brown sugar

1/2 cup creamy peanut butter
1/2 large egg
1/4 teaspoon vanilla extract
7 tablespoons cream cheese
1/2 cup creamy peanut butter
1/4 cup granulated sugar

3/4 cup heavy cream, slightly whipped,divided
3 ounces milk chocolate
1 1/2 ounces bittersweet chocolate
1/3 cup heavy cream

Steps:

  • Make Crust: In a small bowl, sift together flour, baking soda, and salt, then whisk to mix evenly.
  • In a food processor, pulse the sugars until very fine.
  • With the motor running, add the butter, then the peanut butter, and process until smooth and creamy.
  • Add the egg and vanilla until incorporated.
  • Add the flour mixture until mixed together.
  • Scrape the dough into a bowl.
  • Cover and refrigerate at least 1 hour or overnight.
  • Heat oven to 375.
  • Press the dough evenly into a 9 inch tart pan.

  • Cool.
  • Make Peanut Butter Mousse: In a mixer bowl on medium speed beat cream cheese, peanut butter and sugar until uniform in color.
  • On low speed, add vanilla.

  • With a rubber spatula, fold in remaining cream.
  • Scrape the mousse into the tart shell and smooth the surface so that it is level.
  • Refrigerate.
  • Make ganache: Meanwhile, break up chocolates into the bowl of a food processor.
  • Pulse until finely ground.
  • In a small saucepan, bring cream to a boil.
  • With the motor running, immediately pour hot cream through the feed tube onto the chocolate.
  • Process until smooth.
  • Add vanilla and pulse a few times to incorporate.
  • Pour the ganache into a bowl and let cool to room temperature.
  • Pour the ganache over peanut butter mousse in a circular motion.
  • Spread to the edges.

Steps:

  • For Crust:
  • Combine flour, sugar and salt in large bowl. Add butter and cut in using fingertips or pastry blender until mixture resembles coarse meal. Beat egg yolks to blend in small bowl. Pour yolks over flour mixture and stir with fork to combine. Gather dough into ball; flatten into disk. Wrap dough in plastic and refrigerate 30 minutes. (Dough can be prepared 3 days ahead. Keep refrigerated. Let dough soften slightly at room temperature before continuing.)
  • Preheat oven to 375°F. Roll out dough between sheets of waxed paper to 14-inch round (scant 1/4 inch thick). Peel off top sheet of waxed paper. Refrigerate until cool but not set, stirring occasionally, about 30 minutes.
  • Whip remaining 1/2 cup whipping cream in medium bowl until soft peaks form. Add remaining 2 tablespoons crème de cassis and whip until stiff peaks form. Fold whipped cream into white chocolate mixture. Fold in raspberries. Spoon filling into crust. Refrigerate until beginning to set, about 30 minutes. MOUSSE AND TOPPING
6 ounces bittersweet chocolate, roughly chopped
2 tablespoons sugar
2 large eggs, separated; or use pasteurized egg whites* for both whites and yolks
1/2 cup whipping cream
2 tablespoons hazelnut liqueur such as Frangelico
1/2 cup very roughly chopped roasted hazelnuts*

Steps:

  • 1. Preheat oven to 350°. Make crust: Roast hazelnuts on a rimmed baking sheet until light golden, about 18 minutes. Rub the warm nuts in a kitchen towel to remove skins. Reduce oven temperature to 325°. 2. Whirl cookies and hazelnuts in a food processor until finely ground. Add butter and whirl until crumbs start to clump together. 3 large egg yolks
3 tablespoons granulated sugar
1/4 teaspoon kosher salt (we use Diamond Crystal)
4 ounces semisweet chocolate, coarsely chopped (about 1 heaping cup)
3/4 cup heavy cream
12 ounces raspberries, golden raspberries, or blackberries (about 3 cups)
Confectioners' sugar, for dusting (optional)

Steps:

  • Crust: Preheat oven to 375°F. In a food processor, combine almonds, granulated sugar, cornstarch, and salt; process until almonds are finely ground. Add almond flour and pulse to combine. Add butter and process until evenly moistened.
  • Press mixture evenly into bottom and up sides of a 9-inch fluted tart pan with a removable bottom. Refrigerate until firm, about 15 minutes. For the Crust
6 graham cracker sheets (about 3 ounces)
1/2 cup toasted hazelnuts (see page 343)
1/4 teaspoon coarse salt
2 tablespoons granulated sugar
4 tablespoons unsalted butter, melted and cooled
For the Topping
1/3 cup toasted hazelnuts (see page 343)
1/4 cup granulated sugar
1/4 teaspoon coarse salt
1/4 cup water
For the Filling
1 3/4 cups heavy cream
5 ounces bittersweet chocolate (preferably 61 percent cacao), coarsely chopped
2 tablespoons confectioners' sugar

Steps:

  • Make the crust: Preheat oven to 350°F. In a food processor, combine graham crackers, hazelnuts, salt, and granulated sugar; process until fine crumbs form. With machine running, slowly pour butter through feed tube and process until combined. Press crumbs into bottom and up sides of a 9-inch fluted tart pan with a removable bottom. Bake until crust is golden brown and fragrant, 12 to 14 minutes. Let cool completely in pan on a wire rack.
  • Meanwhile, make the topping: In a small saucepan, combine hazelnuts, granulated sugar, salt, and water. Bring to a boil; cook 1 minute. Drain hazelnuts and spread in a single layer on a parchment-lined rimmed baking sheet. Bake until nuts are toasted and shiny, 15 minutes. Let cool completely.
  • Make the filling: In a medium saucepan, bring 3/4 cup cream to a simmer; remove from heat and add chocolate. Let stand 5 minutes; whisk to combine, then let cool to room temperature. In a large chilled bowl, whip remaining 1 cup cream with the confectioners' sugar until stiff peaks form. Gently fold in chocolate mixture until combined. Pour filling into baked, cooled crust and refrigerate until completely set, 2 hours or, wrapped tightly with plastic, up to 2 days. Top tart with candied hazelnuts before serving.

This is an old favorite that I used to make for special occasions. It is quite heavy and more like fudge, so serve small wedges, especially after a meal.

8 ounces semi-sweet chocolate chips
5 tablespoons unsalted butter, room temperature
5 large egg yolks
1/4 cup superfine sugar
1 1/4 cups heavy cream
1/4 cup orange liqueur
1 (9 inch) chocolate graham wafer pie crust
1 (15 ounce) can whipped cream
1/2 cup chocolate, shaved, for garnish
1/2 cup pecans (optional)
1/2 cup berries (optional)

Steps:

  • In double boiler or bowl set over hot water, melt chocolate and butter, stirring.
  • Remove from the heat and mix in sugar until smooth.
  • Return to low heat and add yolks, 1 at a time, beating well after each.
  • Remove from heat and transfer to a large bowl. You can also put all ingredients into a blender at this point, pulsing after each addition.
  • Add cream and orange liqueur and mix well.
  • Sprinkle gelatin over 1/4 cup warm liquid, stirring until mixed well. Let stand for 1 minute. Fold into mousse mixture.
  • Spoon mousse into graham cracker pie shell and smooth over with spatula. May also be spooned into individual tart shells.
  • Refrigerate 3 to 4 hours to overnight until well chilled and set. Pie will have the consistency of fudge rather than a traditional mousse.
  • Top with whipped cream, pecans or berries and chocolate shavings. Cut into small wedges and serve.
