The line at the dessert table convinced me this cake was a winner when I served it at a party. It makes a pretty presentation, baking up nice and high. The zippy lime and gingersnap flavors really come through.

2 cups crushed gingersnaps (about 38 cookies)
2 tablespoons sugar
1/3 cup butter, melted
FILLING:
1 envelope unflavored gelatin
6 tablespoons lime juice
9 ounces white baking chocolate, chopped
2-1/2 cups heavy whipping cream
3 packages (8 ounces each) cream cheese, softened
1 cup sugar
1 tablespoon grated lime zest

Steps:

  • In a large bowl, combine the gingersnaps, sugar and butter; press onto the bottom and 1 in. up the sides of a greased 9-in. springform pan. Set aside. , In a microwave-safe dish, sprinkle gelatin over lime juice. Let stand for 1 minute. Microwave on high for 10-20 seconds; stir until gelatin is dissolved. Set aside. , In a microwave, melt chocolate with 1/2 cup cream; stir until smooth. Cool slightly; stir in dissolved gelatin. , In a large bowl, beat cream cheese and sugar until smooth. Gradually add chocolate mixture and lime zest and mix well. , In another large bowl, beat remaining cream until stiff peaks form. Gently fold into cream cheese mixture. Spoon over the crust. Cover and chill overnight. Refrigerate leftovers.

This is another Paula Deen magazine recipe that we loved. I always have Key lime juice on hand, so when I saw the recipe I had to try it. The cake is light with a yummy white chocolate frosting.

3/4 cup butter, softened
1 3/4 cups sugar
2 tablespoons key lime zest
3 eggs
1/4 cup key lime juice, fresh
3 cups cake flour
1 teaspoon baking soda
1 1/2 cups buttermilk
6 (1 ounce) white chocolate baking squares
1/2 cup heavy whipping cream
3/4 cup butter, softened
1 teaspoon vanilla
5 cups confectioners' sugar

Steps:

  • Preheat oven to 340. Grease and flour 3 (9 inch) cake pans.
  • In large bowl, beat butter, sugar, and lime zest at medium speed with an electric mixer until creamy. Beat in eggs, one at a time, beating well after each addition. Beat in juice until combined.
  • In medium bowl, combine cake flour and baking soda; sift. Gradually add to butter mixture alternately with buttermilk, beginning and ending with flour mixture.
  • Pour evenly into prepared pans, and bake for 18-20 minutes, or until a wooden pick inserted in center comes clean. Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks. Spread white chocolate frosting in between layers, and on top and sides of cake. Garnish with Key lime wedges, if desired.
  • White Chocolate Frosting:.
  • In medium bowl, combine chocolate an dcream. Microwave on high in 30 second intervals, stirring between each, until chocolate is melted and smooth (about 1-1/2 minutes total); let cool completely.
  • In large bowl, combine white chocolate mixture, butter, and vanilla. Beat at medium speed with an electric mixer until smooth. Gradually beat in confectioners sugar until fluffy.

2 cups crushed graham crackers
1/2 cup butter, melted
1/4 cup sugar
Filling:
6 tablespoons fresh Key lime juice
1 envelope unflavored gelatin
2 1/2 cups heavy whipping cream, divided
10 (1-ounce) squares white chocolate, chopped
3 (8-ounce) packages cream cheese, softened
1 cup sugar
1 1/2 tablespoons lime zest
Garnish: white chocolate curls, Key lime wedges

Steps:

  • In a medium bowl, combine graham cracker crumbs, butter, and sugar. Press into bottom and 1 inch up sides of a 10-inch springform pan. Set aside. In a large bowl, combine lime juice and gelatin; let stand for 2 minutes. Bring 1/2 cup cream to a simmer in a small saucepan. Remove from heat, and add white chocolate, stirring until smooth. Stir in gelatin mixture, and allow to cool. In a large bowl, beat cream cheese, sugar, and lime zest at medium speed with an electric mixer until combined. Slowly beat cooled white chocolate mixture into cream cheese mixture. In a large bowl, beat remaining 2 cups cream at high speed with an electric mixer until soft peaks form. Fold into white chocolate mixture, and pour into pie crust. Cover, and freeze overnight. Remove from freezer, and gently run a knife around edges of pan to release crust from sides of pan. Garnish with white chocolate curls and Key lime wedges, if desired. Cut into wedges with a knife that has been dipped into hot water.

1 (3 ounce) package instant white chocolate pudding mix
¾ cup milk
½ cup vegetable oil
5 tablespoons Key lime juice

¼ cup grated white chocolate
1 tablespoon Key lime zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking dish.
  • Mix cake mix and pudding mix together in a bowl. Beat milk, vegetable oil, 5 tablespoons Key lime juice, and 1 tablespoon Key lime zest into cake mix mixture just until batter is smooth. Beat eggs, 1 at a time, into batter, beating until each egg is incorporated before adding the next. Pour batter into the prepared baking dish.

Give chocolate cake a zesty lift with lime buttercream filling, chocolate and lime icing and candied zest to decorate - an irresistible flavour pairing

225g butter , softened at room temperature, plus extra for greasing
225g light brown soft sugar
4 large eggs , at room temperature, lightly beaten
170g self-raising flour
½ tsp baking powder
50g cocoa powder
2 tbsp milk
50ml lime juice (about 4 limes)
25g caster sugar
3 limes
100g granulated sugar
100g unsalted butter
200g icing sugar
2 limes , finely zested
50ml double cream , plus 1 tbsp
100g 70% dark chocolate , cut into small pieces
2 ½ tbsp lime marmalade

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter and line the base of 2 x 20cm cake tins with baking parchment. Beat the butter and light brown sugar together until pale and fluffy. Add the eggs gradually, beating well between each addition. Fold in the flour, baking powder and cocoa powder. If the mixture is very stiff, stir in the milk.
  • Spoon into the cake tins and bake for 20-25 mins or until a skewer inserted into the centre comes out clean. Turn the cakes out onto a wire rack and peel off the parchment. Gently heat the lime juice and caster sugar together, stirring to help the sugar dissolve. While the cakes and the syrup are still warm, pierce the cakes all over using a skewer and spoon over the syrup. Leave to cool completely.
  • Next, make the candied lime zest. Pare the zest from the limes, cutting it into broad strips. Cut away the white pith and discard, then slice the zest into matchstick-sized strips. Put them in a pan and cover with water, then bring to the boil. Cook for 1 min, then drain and rinse. Dry and set aside. Juice the limes and add enough water to make 225ml. Heat gently with the sugar until the sugar has melted. Add the strips of zest and simmer until the liquid has almost evaporated and turned syrupy - about 30 mins. Scoop the strips of zest out with a slotted spoon, then place them on parchment to dry.
  • To make the buttercream, beat the butter and icing sugar together using an electric mixer or by hand (start off gently or the icing sugar will fly everywhere), until pale and light, but don't beat for so long that it gets too fluffy. Add the lime zest and beat again until smooth. Chill in the fridge until the buttercream is firm, but spreadable.
  • To make the icing, heat the cream gently (don't let it boil), then take it off the heat. Add the chocolate and let it melt, stirring to help it along. Put the marmalade in a small pan with the extra 1 tbsp cream and heat slowly to dissolve. Add to the chocolate and cream and stir until everything is blended. Leave to cool a little, but not so long that it becomes firm. Pour over one of the layers of sponge and leave to cool and set - it will run down the sides and drip off.
  • Spread the buttercream over the other layer, then put the chocolate coated layer on top. Decorate with the candied lime zest.

2 stick(s) butter, unsalted
8 ounce(s) semi-sweet chocolate
7 - egg yolks, save 5 egg whites
1/2 cup(s) sugar
1 1/2 ounce(s) kahlua (coffee liqueur)
5 - egg whites
CAJETA:
1/2 cup(s) water
1 cup(s) sugar
1/2 cup(s) heavy cream (approx.)
2 tablespoon(s) butter
STRAWBERRY-LIME SALSA:
1 1/2 pint(s) strawberries
2 - key limes or 1 large lime, juiced
2 tablespoon(s) sugar
1 1/2 tablespoon(s) mint, chiffonade
1 cup(s) sliced almonds, toasted

Steps:

  • Preheat oven to 350 degrees and grease a 9-inch round pie pan. Line the pan with greased parchment paper.
  • In the top of a double boiler, melt the butter and chocolate, stir until smooth.
  • Whip the egg yolks and the sugar until fluffy and pale in color.
  • Fold butter and chocolate mixture into the egg yolk and sugar mixture, adding the kahlua.
  • Whip the egg whites until soft peaks form and gently fold into the chocolate mixture.
  • Pour the batter into the pie pan and bake for 25 to 35 minutes then allow to cool completely.
  • CAJETA:
  • In a medium saucepan, bring water and sugar to a boil, do not stir.
  • Remove from heat when the sugar is amber in color and add enough cream to thin the caramel to a fairly liquid consistency, stir in the butter.
  • To test consistency, dip a spoon into the caramel mixture and allow to cool.
  • If the cajeta is gooey but holds its shape, it is ready. If it hardens too much, add a little more cream and test once again.
  • Drizzle the cajeta over the top of the cake.
  • STRAWBERRY-LIME SALSA:
  • In a blender, puree half the strawberries with the lime juice and the sugar. Strain and reserve.
  • Cut the remaining strawberries in quarters and mix with the puree.
  • Add chiffonade of mint when the cajeta has cooled a little, but is still warm.
  • Place the cake over a wire rack with a pan to catch the drippings. Pour the strawberry-lime salsa over the top.
  • Using your hands, pat the almonds around the sides of the cake.
  • Refrigerate for at least 2 hours. Serve chilled.

Mix almond meal with cocoa. Gently fold into egg mixture, then chocolate mixture. Fold in zest and juice. Pour into pan, bake 40 min. Cake will be firm on top and wobble underneath. Remove from oven, cool. Once slightly cool put towel over to prevent getting too crusty. Serve with cream. * 1/4 cup lime juice (2-3 limes, or from a bottle) * 1 Tbsp. tequila * 1 Tbsp. triple sec or Cointreau * 3/4 cup confectioner's sugar * 1 cup heavy cream Directions 1. Stir the lime juice, tequila, and triple sec together in a large bowl. Whisk in the confectioner's sugar and let it dissolve in the liquid. 2. Whip cream in a separate bowl until it holds its shape. I'll never make chocolate cake with flour again. This was moist, rich and delish. The almond meal makes it more healthy even if you don't need to go flourless. This is based on BH&G recipe.

6 ounces bittersweet chocolate, chopped (1 cup)
5/8 cup unsalted butter, softened
6 eggs
1 1/4 cups superfine sugar
1 cup almond meal
4 teaspoons unsweetened cocoa powder, sifted
1 lime, zest and juice

Steps:

  • Preheat oven to 350 F, line bottom of a 9 inch springform pan with parchment paper and butter or spray sides of pan.
  • Melt chocolate and butter together either in double boiler or in microwave 30 seconds at a time until melted. Set aside to cool slightly.
  • Beat eggs and sugar together until triple in volume, pale and mousselike.
  • Mix almond meal with cocoa powder. Gently fold into egg mixture. Follow with chocolate mixture, then lime zest and juice.
  • Pour into prepared pan. Bake 40-45 minutes. Will be just firm on top but have a bit of wobble underneath.
  • Cool in pan on a wire rack. When slightly cool, drape a clean kitchen towel over cake to stop from getting too crusty (some cracking/cratering is to be expected).
  • When completely cool, loosen edges from pan, release springform edge, remove. Dust with confectioner's sugar if desired.

75 ml cocoa powder

Steps:

  • Preheat oven to 200°C.
  • Grease and flour a 22 - 24 cm round cake pan (with a removable bottom).
  • Beat eggs and sugar with an electric mixer until thick and cream-coloured.
  • Combine flour, baking powder, cocoa powder, vanilla sugar and salt; add to the egg and sugar mixture, mixing carefully.
  • Add quark and lime zest, stir to combine.
  • Pour batter into the prepared pan and bake in the preheated oven for 15-20 minutes (depending on how soft you want the cake to be).
  • Let the cake cool before removing it from the pan.
  • Dust the cake with powdered sugar, decorate with thin lime slices and serve with whipped cream.
