CHOCOLATE-HAZELNUT FRENCH TOAST WITH RASPBERRY SYRUP



Chocolate-Hazelnut French Toast With Raspberry Syrup image

2 cups raspberries
1/4 cup sugar
2/3 cup chocolate-hazelnut spread (such as Nutella)
3 large eggs
1 cup whole milk
8 slices country white bread
2 tablespoons unsalted butter
Chopped toasted hazelnuts, for topping

Steps:

  • Preheat the oven to 250 degrees F. Combine the raspberries, sugar and 3 tablespoons water in a small saucepan over medium-high heat; cook until the raspberries are broken down and the mixture is syrupy, about 5 minutes. Strain through a fine-mesh sieve into a bowl, pressing the berries with a rubber spatula.
  • Whisk the chocolate-hazelnut spread and eggs in a medium bowl until smooth, then transfer to a large baking dish and whisk in the milk. Working in batches, add the bread and soak, turning once, 1 to 2 minutes. (Remove before the bread is soggy.)
  • Melt 1/2 tablespoon butter in a large nonstick skillet over medium heat. Add 2 pieces bread and cook until browned, 3 to 4 minutes per side. Transfer to a baking sheet and keep warm in the oven; repeat with the remaining bread, adding 1/2 tablespoon more butter to the skillet with each batch. Top with the raspberry sauce and hazelnuts.

S'mores are the quintessential campfire treat: a marshmallow roasted over the fire, sandwiched between two graham crackers and a chocolate square. Some people don't want to stray from the traditional s'more, but I ask "Why not?" Maybe we can make it tastier and healthier! So this version was born. And did I mention these mouthwatering treats contain no added sugar and are dairy-free?

1 cup raw hazelnuts
1/3 cup dairy-free dark chocolate chips
2 teaspoons melted coconut oil
1/8 teaspoon salt
1 1/2 cups (about 1/2 pint) raspberries
1/2 cup coconut cream, whipped, See Cook's Note
16 graham cracker squares

Steps:

  • For the chocolate-hazelnut spread: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Place hazelnuts on the baking sheet and roast for 10 to 15 minutes, or until lightly browned. Let cool. With a kitchen towel, roll hazelnuts around on the baking sheet to remove the skins. Discard skins and transfer hazelnuts to a food processor. Blend for about 5 minutes, until the nuts form a butter.
  • In a small saucepan over low heat, melt the chocolate chips and coconut oil. Transfer to the food processor, add the salt, and pulse to combine. (If the spread isn't sweet enough for your taste, try adding 1 tablespoon of agave nectar.) Let cool about 5 minutes in the refrigerator while you prep the other ingredients.
  • For the s'mores: Assemble s'mores by layering approximately 1/2 tablespoon chocolate-hazelnut spread, 4 raspberries and 1 tablespoon whipped coconut cream between 2 graham cracker squares. (You will have chocolate-hazelnut spread leftover.)

This indulgent brunch loaf requires good bread and kneading skills- prepare the dough ahead then pop it in the oven to serve warm

2 x 7g sachets fast-action dried yeast
600g '00' flour , sponge flour or plain flour, plus extra for dusting
50g golden caster sugar
400ml warm milk
50g melted salted butter , plus extra for greasing and to serve
1 large egg , beaten
200g jar Nutella , plus extra to serve (optional)
200g raspberries
1-2 tbsp chopped hazelnut
1 tbsp granulated sugar
raspberry jam , to serve

Steps:

  • Up to 3 days before you want to bake (and best if at least 1 day), mix the yeast, 400g of the flour, the sugar and 1 tsp salt in a big bowl. Whisk together the milk, melted butter and egg, then tip into the dry ingredients and mix with a wooden spoon. Cover tightly with greased cling film and chill at least overnight or up to 3 days.
  • When you're ready to finish the bread, heat oven to 180C/160C fan/gas 4. Add the remaining flour to the dough and use your hands to mix in. Tip onto a lightly floured surface and lightly knead to completely bring together. Roll out with a little more flour to a 50 x 30cm rectangle. Spread the Nutella all over the dough. Scatter the raspberries evenly over, then press lightly with your hands so they stick into the dough a bit.
  • With a long side facing you, roll up as tightly as you can (like a Swiss roll). Use a sharp knife, dusted with a little flour, to cut the roll in half down the length - but not quite through at one end, so the 2 strips are still joined. Twist the 2 strips together, then bring the ends together to make a wreath, pinching the ends together to stick. Lift onto a baking sheet, scatter with the hazelnuts and granulated sugar, and bake for 30-40 mins until browned and crusty.
  • Cool until just warm. Serve with butter, raspberry jam and extra Nutella, if you like.

Filling
1 cup frozen unsweetened raspberries, thawed, drained
1 cup raspberry jam
Frosting
2 1/2 cups chilled whipping cream
10 ounces good-quality white chocolate (such as Lindt or Bakers), chopped
Cake
1 cup hazelnuts, toasted, husked
1 cup sifted all purpose flour
1 1/4 cups sugar
1 teaspoon instant coffee crystals
1/4 teaspoon salt
6 large eggs, separated
1/4 cup water
1 teaspoon vanilla extract
Fresh raspberries (optional)

Steps:

  • For filling:
  • Press raspberries through fine sieve into small bowl. Press jam through same sieve into raspberry puree; discard seeds. Stir to blend well. Cover and chill overnight.
  • For frosting:
  • Combine 3/4 cup cream, white chocolate and coffee crystals in heavy medium saucepan. Stir over low heat just until chocolate melts, coffee dissolves and mixture is smooth. Remove from heat. Let stand until cool and thick, whisking occasionally, about 1 1/2 hours.
  • Using electric mixer, beat 1 3/4 cups cream in large bowl until firm peaks form. Fold large spoonful of whipped cream into chocolate mixture to lighten. Fold chocolate mixture into whipped cream in 4 additions. Cover and refrigerate frosting until very firm, about 6 hours. (Can be prepared 1 day ahead; keep chilled.)
  • For cake:
  • Preheat oven to 350°F. Line three 9-inch diameter cake pans with 1 1/2-inch-high sides with parchment. Butter and flour parchment. Combine nuts, flour, 1/4 cup sugar, coffee crystals and salt in processor. Blend until nuts are finely ground.
  • Using electric mixer, beat yolks and 1/2 cup sugar in large bowl until very thick, about 5 minutes. Beat in water and vanilla. Stir in flour mixture. Using clean dry beaters, beat egg whites in large bowl until soft peaks form. Gradually add 1/2 cup sugar, beating until stiff but not dry. Fold into yolk mixture in 3 additions.
  • Transfer batter to prepared pans. Bake cakes until tester inserted into center comes out clean, about 18 minutes. Cool cakes in pans on racks. Cut around pan sides to loosen cakes. Turn cakes out; peel off parchment.
  • Place 1 cake on platter and second cake on piece of foil. Spread 1/3 cup filling over each; let stand 20 minutes to set up. Spread 1 cup frosting over each. Lift cake off foil; place atop cake on platter. Top with third cake. Spread remaining frosting over sides and top of torte. (Can be prepared 1 day ahead. Cover with cake dome and refrigerate.)
  • Garnish torte with fresh berries, if desired. Cut into wedges and serve.

1/2 cup hazelnuts, toasted, skinned, finely ground
1/2 cup sugar substitute
1/8 cup strong coffee or 1/8 cup espresso
4 ounces semisweet chocolate, chopped
1/4 cup unsalted butter, softened
1/2 teaspoon almond extract
2 teaspoons vanilla extract
1 tablespoon rice flour
2/3 cup raspberry spreadable fruit
4 ounces bittersweet chocolate, chopped
1/2 cup heavy cream
2 tablespoons .unsalted butter
1 teaspoon vanilla extract
20 hazelnuts, for garnish

Steps:

  • Preheat oven to 350°F Place hazelnuts on a baking sheet, and toast for 8-10 minutes. Be careful that they don't burn. Remove from oven and place on a towel. Take another towel, place over nuts and rub gently to remove skins. Allow to cool, then place in a food processor and pulse untl finely ground. Be careful not to grind into a paste. Set aside.
  • Heat sugar, coffee and chocolate in a double boiler. Stir until chocolate melts. Set aside.
  • Place butter in mixing bowl and beat until fluffy. Add egg yolks, one at a time, mixing after each addition. Stir in chocolate mixture, almond and vanilla extract, and rice flour.
  • In a separate bowl beat egg whites, until stiff enough to hold a peak. Fold half the egg whites into the chocolate batter. Gently fold in the rest of the egg whites. Pour batter into a greased 8-inch cake pan. Bake for 30 minutes, or until a knife inserted in the center comes out clean. Allow to cool.
  • Heat heavy cream, with butter, until just boiling. Turn off heat and add chocolate and vanilla, and allow to sit for 3-4 minutes, whisk until smooth.
  • Take cake out of refrigerator. Thinly spread two tablespoons of ganache over the cake, as a crumb coat. Spread raspberry jam over the top of the crumb coat. Refrigerate for 10 minutes. Place wire rack on a baking sheet. Place cake on rack and pour ganache over the cake. Evenly coat the cake using a spatula. Decorate the perimeter with whole hazelnuts, place on a plate, refrigerate until ready to serve.
