This cream cheese-stuffed cinnamon roll monkey bread recipe is easy to whip up over the weekend and will add a sweet touch to any brunch. Instead of using biscuit dough, this recipe uses premade cinnamon rolls; not only do they taste great, but they also come with their own glaze, which saves time and money.

nonstick cooking spray, for greasing
½ cup granulated sugar
1 teaspoon ground cinnamon
2 cans refrigerated cinnamon rolls
4 oz cream cheese, cut in 1 teaspoon pieces
½ cup brown sugar
½ cup unsalted butter, melted, 1 stick

Steps:

  • Preheat the oven to 350°F (180°C). Grease 12-cup fluted bundt pan with nonstick spray.
  • In a small bowl, mix together the sugar and cinnamon.
  • Open the cans of cinnamon rolls. Cut each roll in half, then flatten each piece into a circle with your fingers. Place a piece of cream cheese in the center of the dough round. Fold the dough over the cream cheese to seal and roll into a ball. Toss in the cinnamon sugar. Place in the prepared bundt pan. Repeat with remaining dough pieces.
  • In a small bowl, whisk together the brown sugar and melted butter until smooth. Pour the mixture over the filled cinnamon roll balls.
  • Bake the monkey bread for 35-40 minutes, or until golden brown. Let cool in the pan for 5-10 minutes, until cool to the touch, then invert onto a serving platter.
  • Add the frosting from the cans of cinnamon rolls into a small microwave-safe bowl. Warm in the microwave for 30 seconds to loosen.
  • Drizzle the icing over the monkey bread. Serve warm.

2 16 oz containers of biscuit dough
12 - 12 oz cream cheese
chocolate chips
1 c sugar
2 tsp cinnamon
1/2 c butter
1 c brown sugar
1/2 c walnuts or pecans (optional)

Steps:

  • 1. preheat oven to 350 degrees Cut biscuits in half and cube the cream cheese (32 pieces).
  • 2. Flatten each biscuit and place one cube of cream cheese and a few chocolate chips in the center of each. Fold the biscuit dough around the cream cheese and chocolate and form into a ball.
  • 3. In a 1 gallon plastic bag combine 1 cup white sugar and the 2 tsp. of cinnamon. Add 6 - 8 dough balls to the bag, and shake until well coated. Repeat for the remainder of the stuffed dough pieces.
  • 4. in a microwave safe bowl add the cup of brown sugar and the 1/2 cup butter. Microwave on high for 70 seconds - stopping halfway to stir. Remove from microwave and stir until it reaches a caramel consistency.
  • 5. To a greased Bundt pan sprinkle half the the walnuts, half the dough pieces, and drizzle half the caramel glaze. Repeat with remaining walnuts, dough and glaze.
  • 6. Bake in preheated oven for 30 - 35 minutes. Remove from oven and turn unside down onto a plate to cool for 10 minutes before lifting off the pan (this way the warm glaze runs back through and fully coats all the bread. Lift off the bundt pan, pull apart, and enjoy.

2 tubes biscuit dough
32 milk chocolate nuggets
1 ½ sticks unsalted butter, melted
2 cups graham cracker crumbs
½ cup semisweet chocolate chunks
1 cup mini marshmallows

Steps:

  • Preheat the oven to 350°F (180°C).
  • Cut each biscuit in half. Flatten a biscuit half slightly with your fingers and place a milk chocolate nugget in the center. Gather the edges of the biscuit dough around the chocolate and pinch to seal. 3. Gently roll between your hands to form a ball. Repeat with the remaining biscuit halves and chocolate.
  • Add the graham cracker crumbs to a shallow bowl. Dip a biscuit ball in the melted butter to coat, then toss in the graham cracker crumbs until fully coated, shaking off any excess.
  • Lightly grease a 12-inch cast iron skillet with a bit of the melted butter. Starting at the outer edge, arrange the biscuit balls seam-side down in the prepared skillet.
  • Transfer the pan to the oven and bake for 20 minutes, or until the biscuits are puffed and golden brown.
  • Scatter the chocolate chunks and marshmallows all over the monkey bread. Return to the oven for another 5 minutes, or until the marshmallows are golden.
  • Let the monkey bread cool for 5 minutes before serving.

2 cans (16.3 ounces each) large refrigerated buttermilk biscuits
64 milk chocolate kisses
1/2 cup sugar
2 teaspoons ground cinnamon

  • In a small saucepan, combine brown sugar and butter. Cook and stir over medium-low heat for 10-12 minutes or until sugar is melted; set aside., Cut each biscuit into quarters. 1 cup packed brown sugar
1/2 cup butter, cubed
2 tubes (12 ounces each) refrigerated flaky buttermilk biscuits
1/2 cup sugar
1 tablespoon ground cinnamon
8 ounces cream cheese, cut into 20 cubes
1-1/2 cups chopped walnuts

Steps:

  • In a small microwave-safe bowl, heat brown sugar and butter on high for 1 minute or until sugar is dissolved; set aside. , Flatten each biscuit into a 3-in. circle. Combine sugar and cinnamon; sprinkle 1/2 teaspoon in the center of each biscuit. Top with a cream cheese cube.
