Ingredients
15-20 strawberries (the larger the better)
1 bag of Milk Chocolate chips (I use the 11.5 oz Guittard milk chocolate chips)

Steps:

  • Directions 1. Cut the stems off your clean strawberries and carefully scoop out the top of the berry. The deeper you scoop the more chocolate it will hold. I used large strawberries so I scooped about an inch down. 2. Pour the entire bag of chocolate chips in a glass bowl and heat in the microwave for 30 second intervals. Make sure to take your bowl out every 30 seconds to stir the chips. Continue until all chips are melted. 3. Place your strawberries in an egg carton so they sit straight up. You could also use little Dixie cups. Now you can either spoon your melted chocolate into the berries or use a funnel or piping bag. I used a little baby spoon and it worked fine. Your choice. 4. Place in the refrigerator for about 10 minutes until they harden a bit. Enjoy! Note: As someone noted there is a small chance that salmonella could be found in an empty egg carton so if this concerns you it is safer to use an ice cube tray or mini muffin tin to hold the berries while the chocolate hardens. I like to make these chocolate covered strawberries before dinner and put them in the fridge, so they're ready when we're finished eating. 1 pint large strawberries
4 ounces semisweet chocolate, chopped
1 tablespoon plus 1/2 teaspoon shortening, divided
1 ounce white baking chocolate
4 drops food coloring, optional

Steps:

  • Wash strawberries and gently pat with paper towels until completely dry. In a microwave-safe bowl, melt semisweet chocolate and 1 tablespoon shortening at 50% power; stir until smooth. Dip each strawberry and place on a waxed paper-lined baking sheet. Freeze strawberries for 5 minutes., Meanwhile, microwave white chocolate and remaining shortening at 30% power until melted; stir until smooth. Stir in food coloring if desired. Drizzle over strawberries. Refrigerate until serving.

8 ounces semisweet chocolate
1 mandarin orange, zest and segments
2 ounces unsalted butter
16 ounces fresh strawberries, washed, dried and a small slice at the tip
1 -2 ounce almond paste, cut into the same amount of strawberries
almonds, toasted (optional)

Steps:

  • Melt chocolate zest and butter in microwave oven for 1 minute, stir till melted.
  • Place parchment paper sprayed with a nonstick spray, on a chilled cookie sheet pan.
  • Flatten the past a little and push into the dried strawberry.
  • Dip the berries into the chocolate holing by the leaves, place on prepared pan. Repeat till all are coated.
  • Dip the segments of the mandarin into chocolate.
  • If any remaining chocolate dip almond into coat and place on prepared pan.
  • Chill to harden.

Raise a glass to this bubbly dessert! Soak fresh strawberries in champagne, dip them in white chocolate, then decorate with edible gold. These make a sweet surprise for someone special, or the perfect addition to a festive gathering.

12 large strawberries
2 cups champagne
8 oz white chocolate
½ teaspoon canola oil
gold luster dust, for decorating
gold sprinkle, for decorating
12 miniature culinary pipettes

Steps:

  • In a large bowl, combine the strawberries and champagne. Cover the bowl with plastic wrap and refrigerate for 12-36 hours. The longer the strawberries soak, the more prominent the champagne flavor will be.
  • Remove the strawberries from the champagne and dry well with a paper towel. Reserve the champagne.
  • Line a baking sheet with parchment paper.
  • Fill a small saucepan with 2 inches of water and bring to a boil over medium-high heat. Set a medium heatproof bowl over the pot, making sure the water is not touching the bottom, and add the white chocolate. Melt, stirring occasionally, about 5 minutes. Stir in the canola oil until well combined. Transfer the melted chocolate to a mug or measuring cup.
  • Hold the top of each strawberry and dip into the melted white chocolate, coating almost completely. Lift out and shake off any excess chocolate, then place on the prepared baking sheet. If the chocolate is still very thin and runny, wait until it cools slightly and coats the strawberry without creating a puddle of chocolate on the pan beneath the strawberry.
  • While the chocolate is still melted, decorate each strawberry with gold luster dust and gold sprinkles.
  • Transfer to the refrigerator to set for 30 minutes, up to overnight.
  • Just before serving, fill 12 mini culinary pipettes with the reserved champagne (or use fresh champagne, if desired). Insert a pipette into each strawberry.
  • Enjoy!
