Chocolate Coffee Truffles image

These deliciously rich and creamy chocolate truffles are infused with coffee, and sealed in a smooth chocolate shell!

Number Of Ingredients 6

12 oz (350g) chocolate (milk, dark or semi-sweet), coarsely chopped
2 tablespoons (27g) coconut oil
16 oz (450g) chocolate (milk, dark or semi-sweet), coarsely chopped
3/4 cup (180ml) heavy cream
1/4 cup (56g) unsalted butter, softened and cubed
2 tablespoons instant coffee granules or powder

Steps:

  • Add the chocolate and cream to a microwave-safe bowl, and heat in 30 second intervals, stirring after each one, until melted and smooth.
  • Stir in the butter and coffee granules until fully melted and combined.
  • Cover the bowl tightly and refrigerate overnight or until the ganache is completely set.
  • Line a large baking tray with parchment or wax paper.
  • Roll the mixture into 1oz balls, and place them onto the prepared baking tray. If the chocolate becomes too sticky to roll, coat your hands in cocoa powder to make the process easier.
  • Freeze the truffles for 30 minutes.
  • Add the chocolate and coconut oil to a microwave-safe bowl, and heat in 30 second intervals, stirring after each one, until melted and smooth.
  • Dip each truffle into the melted chocolate, place back onto the lined baking tray, and refrigerate until set.

This recipe has been passed down from my grandmother to my mother and to me - and it makes the yummiest easiest truffle you could wish for - these never last longer than 2 days in our house - they have a very subtle coffee flavour so they are a favourite of everyone who tries them!

60 g Copha
60 g plain sweet biscuits
4 tablespoons cocoa
2/3 cup icing sugar
1 tablespoon instant coffee powder
1 teaspoon vanilla essence
1/2 cup condensed milk
candy sprinkles or coconut

Steps:

  • Melt copha.
  • Crush biscuits finely and place in bowl with cocoa, coffee powder and icing sugar.
  • Mix in condensed milk and vanilla essence.
  • Add copha and stir quickly before mixture sets.
  • if too hot or wet - allow mixture to cool in the fridge before rolling into walnut size truffles and rolling in vermicelli.

2 1/4 cups half-and-half
1/4 cup sugar
1/4 teaspoon kosher salt
5 egg yolks
1 tablespoon cognac or flavored liqueur, such as Frangelico or Grand Marnier
1 teaspoon vanilla extract
Two 4-ounce bars semisweet chocolate, chopped
Whipped cream, cocoa powder, chopped toasted walnuts, chocolate curls, toasted coconut for garnish

Steps:

  • 1. Arrange eight 4-ounce ramekins or small coffee cups on a baking sheet. Heat the half-and-half, sugar and salt in a pot over medium heat until it just comes to a boil. Whisk the egg yolks with the cognac and vanilla in a medium bowl. Whisk about 1/2 cup of the hot half-and-half into the yolks until smooth and then whisk the egg mixture back into the pot. Continue to cook until the mixture thickens slightly, stirring constantly, 2 to 3 minutes. Place the chocolate in a large bowl and pour the hot cream mixture over the chocolate. Whisk until smooth and then lightly stir to remove any air bubbles.
  • 2. If the mixture is not completely smooth, pour through a strainer and then divide evenly between the ramekins. Chill until cold and set, at least 2 hours or overnight. Serve with a dusting of cocoa powder, whipped cream and/or a sprinkle of nuts, coconut or chocolate curls.

16 ounces chocolate
1/2 cup prepared strong coffee
6 eggs
1/2 cup sugar
1 cup whipping cream
1 tablespoon confectioners' sugar

Steps:

  • Preheat oven to 350 degrees.
  • Melt chocolate with coffee and stir until smooth. Set aside.
  • In separate bowl, beat eggs and sugar until light.
  • Fold in chocolate mixture until blended.
  • Whip cream until stiff.
  • Fold into chocolate mixture.
  • Pour into buttered and floured 10-inch springform pan.
  • Bake in preheated 350 degree oven approximately 50 minutes, just until center is no longer loose.
  • Refrigerate until cold.
  • Sprinkle powdered sugar over top.
