1 cup all-purpose flour (spooned and leveled)
1 1/4 cups rolled oats (not quick-cooking)
1/2 teaspoon coarse salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1 cup light-brown sugar
1 teaspoon pure vanilla extract
1 large egg
1 cup chopped toasted pecans
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees, with racks in upper and lower thirds. In a medium bowl, whisk together flour, oats, salt, baking powder, and baking soda. In a large bowl, using an electric mixer, beat butter and brown sugar on high until light and fluffy, about 4 minutes, scraping down bowl as needed. Add vanilla and egg and beat to combine. With mixer on low, gradually add flour mixture and beat just until combined. Fold in pecans and chocolate chips.
  • Drop dough by tablespoonfuls, 2 inches apart, onto parchment-lined baking sheets. Bake cookies until puffed and golden around edges, about 15 minutes, rotating sheets halfway through. Transfer cookies to wire racks to cool.

1 cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine flour, baking soda, baking powder, and salt in a medium bowl.

½ cup butter-flavored shortening

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine flour, baking soda, and salt in a bowl. Beat shortening, butter, brown sugar, and white sugar in another bowl until smooth. Beat eggs into butter mixture one at a time, adding coconut extract and vanilla extract with the last egg. 1 stick (8 tablespoons) unsalted butter, at room temperature
1/3 cup packed light brown sugar
1/3 cup granulated sugar
1 teaspoon pure vanilla extract
1 large egg
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda

1 cup milk chocolate chips
1/2 cup roughly chopped pecans

Steps:

  • Line 2 baking sheets with parchment paper.

Absolutely the best cookies ever! I made enough to fill two gallon-size plastic bags and they were gone within a day. This recipe was a runner-up in a contest that was in the Paula Deen magazine. (Her recipe says this makes three dozen, but I came out with about eight dozen) I used chocolate covered toffee bits instead of the plain toffee bits and it was fantastic so don't worry if you can't find the plain ones. The cooking time is cumulative for all batches (and is approximate).

1 cup chopped pecans
2 teaspoons baking soda
2 teaspoons cream of tartar
1/2 teaspoon table salt

1 cup firmly packed dark brown sugar
1/4 cup molasses
2 large eggs
2 teaspoons vanilla extract

1 cup turbinado sugar

Steps:

  • Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  • In the work bowl of a food processor, add flour, pecans, baking soda, cream of tartar, and salt: process until nuts are finely ground into flour.
  • In a large bowl, beat butter, shortening, white and dark brown sugars at medium-high speed with an electric mixer until fluffy, about 3 minutes.
  • Add molasses, eggs, and vanilla; beat on low speed just until blended.
  • Gradually add flour mixture, beathing just until dough forms.
  • Stir in chocolate morsels and toffee bits.
  • Roll dough into 1-inch balls; then roll balls in turbinado sugar. Do not flatten. NOTE: You may need more turbinado sugar - just use more if you need more. I ended up with probably closer to 2 cups.
  • Place 2 inches apart on prepared baking sheets. Bake 10-12 minutes, or until lightly browned and slightly flattened.
  • Let cool on pans for 15 minutes. Remove from pans, and cool completely on wire racks.
  • NOTE: you may find it useful to rinse and dry hands every so often, as that helps the dough roll into a ball more easily.

From Cooking Light - These easy drop cookies are crisp on the outside and slightly chewy on the inside. Chocolate minichips disperse better in the batter, but you can use regular chips. Directions say to line baking sheets with parchment paper, but I bake mine on a baking stone and they always come out great. After 24 hours or so they become hard, but if you put two cookies in the microwave for about 10 seconds, they're soft, warm, and taste fresh-baked.

3 teaspoons maple extract (can use a teaspoon less)

  • Set oven to 375°.
  • Line 2 cookie sheets with parchment or wax paper.
  • In a small bowl whisk together flour, baking soda and salt.
  • In a large bowl using an electric mixer beat melted butter with both sugars on high speed until fluffy (about 5 minutes).

  • Reduce the speed to low and add in the flour mixture until JUST blended.

1 box white cake mix or 1 box butter pecan cake mix
2 eggs
1/3 cup oil
2 tablespoons water
1 tablespoon sugar
1 cup chopped pecans
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • In mixing bowl, combine cake mix, eggs, oil, water, and sugar.
  • Mix Well.
  • Add in pecans and chocolate chips.
  • Mix Well.
  • Drop by teaspoonfuls on slightly greased cookie sheet.
  • Bake at 350 degrees for approximately 15 minutes or til lightly browned.

1 cup I Can't Believe It's Not Butter!® spread
3/4 cup packed brown sugar
1/4 cup granulated sugar
1 teaspoon vanilla
1 egg
2 cups Gold Medal™ all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups chopped pecans, toasted and cooled completely
1 cup white baking chips
1 bag (12 ounces) semisweet chocolate chips (2 cups)

Steps:

  • Heat oven to 375°F.
  • Beat spread and sugars in large bowl with electric mixer on medium speed 4 minutes. Beat in vanilla and egg. Beat in flour, baking soda and salt on low speed. Stir in pecans and chips.
  • Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 8 to 10 minutes or until edges are golden (do not overbake). Immediately remove from cookie sheet to wire rack.

3 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon salt
1 cup solid Crisco shortening
1 1/2 cups firmly packed brown sugar (half light-brown sugar and half dark-brown sugar)
2 large eggs
3 -4 drops texas pete hot sauce
1 teaspoon vanilla extract
24 ounces nestle toll house semisweet chocolate morsels
1 cup chopped pecans, toasted and broken by hand

Steps:

  • Preheat oven to 375 degrees.
  • In a small bowl, combine flour, baking soda and salt. Set aside.
  • In another bowl, combine Crisco and brown sugar; beat until light and creamy. Add eggs, hot sauce and vanilla extract; beat until light and fluffy.
  • Gradually blend in flour mixture.
  • Stir in morsels and pecans; drop by well-rounded teaspoons onto ungreased cookie sheets.

1/2 cup room temperature butter (1 stick I use sweet cream unsalted butter)
3/4 cup packed light brown sugar
1/2 cup granulated sugar
1 tablespoon vanilla extract
2 eggs (at room temperature)
1 teaspoon baking soda
2 cups flour
1 cup chopped pecans
1 cup dark chocolate chips
1 tablespoon coarse sea salt

  • Grease or spray your cookie sheet or tray. Spoon your dough onto the sheet in heaping tablespoons. Make sure you leave an inch and a half to two inches between each cookie so they don't turn into one big glob in the oven.

I love Toll House Chocolate Chip Cookies. The only thing they don't tell you that will make these cookies any better is to add "toasted" pecans. And while I didn't add to the batch, I love adding pretzel pieces. I love the crunch and the salt. Toast the pecans for a nuttier flavor! If you like nuts, you will love em toasted...

2 1/4 c all purpose flour
1 tsp salt
1 tsp baking soda
3/4 c sugar
3/4 c brown sugar
1 c (2 stks) butter
2 large eggs
1 tsp vanilla
2 c chocolate chips
1 c toasted pecans
1/2 c broken pretzel pieces, optional

Steps:

  • 1. Preheat oven to 375 degrees. Line cookie sheets with parchment paper if desired. NOTE: lining sheets is not necessary but some people do like parchment paper and it is nice for quicker clean up.
  • 2. Combine flour, salt and baking soda; set aside.
  • 3. In large mixing bowl; cream together butter, sugar, brown sugar and vanilla. Add eggs one at a time, mixing well after each addition.
  • 4. Slowly add flour adding about 1/4 of a cup at a time; mix well.
  • 5. Stir in chocolate chips and cooled toasted pecans. NOTE: If adding pretzel pieces, add now.
  • 6. Using a cookie scoop; drop cookies onto cookie sheets about 2-inches apart.
  • 7. Bake 10 to 12 minutes or until edges of cookies begin to lightly brown.
  • 8. Removed from oven; cool on cookie sheets 2 minutes and then remove to wire rack to completely cool.
