1 packet instant chocolate pudding mix, about 3.7 to 3.9 ounces (not sugar-free and not 'cook & serve')
1/4 cup unsweetened natural cocoa powder
1 teaspoon instant espresso granules (optional, but recommended; brings out the chocolate flavor and does not make cookies taste like coffee)
2 cups all-purpose flour
1 teaspoon baking soda
pinch salt, optional and to taste
one 10-ounce bag Andes Creme de Menthe Baking Chips (try Walmart, Target, Amazon, regular grocery stores; mint baking chips may be substituted)
2.5 to 3 ounces dark chocolate, chopped (I used Trader Joe's 72% Pound Plus Bar)

Steps:

  • To the bowl of a stand mixer fitted with the paddle attachment (or large mixing bowl and electric mixer) combine the butter, sugars, eggs, vanilla, and beat on medium-high speed until creamed and well combined, about 4 minutes. Stop, scrape down the sides of the bowl, and add the pudding mix, cocoa, espresso granules, and beat on low speed until just combined, about 1 minute. Stop, scrape down the sides of the bowl, and add the flour, baking soda, optional salt, and beat on low speed until just combined, about 1 minute. Stop, scrape down the sides of the bowl, and add the Andes chips, chopped chocolate, and beat on low speed until just combined, about 30 seconds. Using a large cookie scoop, 1/4-cup measure, or your hands, form approximately 14 equal-sized mounds of dough. Roll into balls, and flatten slightly. Place mounds on a large plate or tray, cover with plasticwrap, and refrigerate for at least 2 hours, up to 5 days. Do not bake with unchilled dough because cookies will bake thinner, flatter, and be more prone to spreading. Preheat oven to 350F, line a baking sheet with a Silpat or spray with cooking spray. Alternatively, unbaked cookie dough can be stored airtight in the refrigerator for up to 5 days or in the freezer for up to 6 months, so consider baking only as many cookies as desired and save the remaining dough to be baked in the future when desired.

125g light brown soft sugar
100g caster sugar
1 large egg
225g plain flour
½ tsp baking powder
2 drops peppermint extract
100g dark chocolate chips
100g dark chocolate, roughly chopped
3 peppermint candy canes, finely chopped or crushed

Steps:

  • Melt the butter in a pan, leave to cool for a few minutes, then pour into a large bowl. Whisk in both sugars and the egg until combined.
  • Use a wooden spoon to mix in the flour and baking powder until the mixture comes together into a dough. Beat in the peppermint extract, then fold in the chocolate chips. Wrap well and chill for 1 hr.
  • Heat the oven to 180C/160C fan/gas 4. Divide the cookie dough into 16 pieces (about 45g each), and roll each piece into a ball using your hands. Arrange the dough balls on two baking trays lined with baking parchment, well spaced apart, and press them down slightly. Bake for 10 mins, then remove the trays from the oven and tap sharply on a work surface to flatten the cookies. Return to the oven and repeat this after 2 mins, then again after another 2 mins (they should bake for 14 mins in total). Leave to cool completely on the trays.
  • Melt the chopped chocolate in a heatproof bowl over a pan of simmering water, or in 15-second bursts in the microwave, stirring between each burst. Line a baking tray with baking parchment. 1/2 cup rolled oats
scant 1/2 cup applesauce (can sub mashed banana)
1/4 cup roasted cashew butter (can sub another nut butter)
1/2 tsp pure vanilla extract
1/16 tsp salt
1-2 tbsp mini chocolate chips or chunks
2 1/2 tbsp freeze-dried raspberries or other fruit
1 tablespoon sugar if using applesauce

Steps:

  • Preheat the oven to 350 degrees. Mash the applesauce or banana with the nut butter, then add all other ingredients and mix until well-combined. Shape into cookies (I used a mini cookie scoop) and bake on a greased cookie sheet for around 14-16 minutes, then let cool 10 minutes before removing from sheet. This makes 18 mini cookies or 10-12 bigger cookies.

1 1/3 cups sugar
3/4 cup margarine or 3/4 cup butter, soft
1/4 teaspoon mint extract or 1 tablespoon finely chopped fresh mint leaves
1 egg
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
10 ounces mint chocolate chips

Steps:

  • Preheat oven to 350 (F).
  • Mix sugar, margarine, mint extract, and egg in large bowl.
  • Stir in flour, baking soda, and salt.
  • Stir in mint chocolate chips.
  • Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
  • Bake 11-13 minutes, or until light golden brown.
  • Cool slightly; remove from cookie sheet and cool completely.

1 package store bought chocolate chip cookie mix (dry ingredients), available on baking aisle of market (recommended: Duncan Heinz or Betty Crocker)- check label to see what the mix-in ingredients are, i.e. butter and egg
Green vegetable food coloring
1 teaspoon mint extract
2 pints peppermint stick flavor or mint chocolate chip ice cream

Steps:

  • Preheat oven according to the cookie mix package directions. Prepare the cookie mix according to directions with the addition of a few drops of green food coloring and the mint extract. Adjust deepness of the color to your liking, 3 drops is enough to make it a medium color green. Scoop heaping tablespoons of the cookie batter between 2 cookie sheets, you should get about 2 dozen scoops. Bake cookies until just lightly golden at the edges, remove and cool slightly. Serve with peppermint stick or mint chocolate chip ice cream.
  • For a fun, tasty and minty ice cream sammy, place small scoops of ice cream between 2 cookies. Push the ice cream to the edge and coat in mini dark chocolate chips or chocolate shavings. Place in freezer individually wrapped.

2 sticks (1 cup) unsalted butter softened
1/2 cup granulated sugar
1 1/2 cups packed light brown sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 good-quality unsweetened cocoa
3/4 tsp salt
1 tsp baking powder
1 tsp baking soda
1 12 oz bag (2 cups) mint chips

Steps:

  • 1. Preheat oven to 350 degrees. Line three 13X17 inch baking sheets with Silpat liners or parchment paper. 2. In a large mixing bowl, place the butter, sugars, eggs, and vanilla. 3. Cream together in a stand mixer until fluffy. 4. In a medium bowl,whisk together the flour, cocoa, salt, baking powder, and baking soda. 5. Mix the wet and dry ingredients together. 6. Stir in the mint chips. 7. Using a small ice cream scoop, place one dozen cookies on each cookie sheet. 8. Bake each sheet for 11-13 minutes. 9. Take cookies out of oven and allow to rest for 2-5 minutes until firm. 10. Place on wire rack and allow to cool

Since my two teenage children and I have gone gluten free we have been craving Girlscout Thin Mint cookies. I spotted some Andes mint chips and came up with this recipe. They taste pretty close - without the chocolate coating. For all of my recipes I use either Bette Hagman's Featherlite Blend, Gluten Free Flour Blend, or a combination of both.

1 cup gluten-free flour (featherlite blend)
1 1/4 cups gluten-free flour (GF blend)
2 1/4 teaspoons xanthan gum
1 teaspoon baking soda
3/4 teaspoon salt
1/4 cup cocoa powder
1/2 cup butter (softened)
1/2 cup Crisco
3/4 cup brown sugar
3/4 cup sugar
1 teaspoon vanilla
2 eggs
1 (10 ounce) package andes creme de menthe mint chips

Steps:

  • Preheat oven to 350.
  • Mix all dry ingredients.
  • In a large bowl cream butter, crisco, brown sugar & sugar.
  • Add eggs and vanilla. Mix in dry ingredients. After thoroughly mixed add mint chips.
  • Bake 8-10 minutes. Do not overbake.
  • These cookies freeze very well.
