10 tablespoons (1 1/4 sticks) unsalted butter, melted
1 cup semisweet chocolate chips
2 1/2 cups half and half
1 cup sugar
6 large eggs
4 large egg yolks
2 tablespoons vanilla extract
1/8 teaspoon salt
2 tablespoons (packed) dark brown sugar
Cinnamon-Rum Sauce

Steps:

  • Preheat oven to 350°F. Butter 13x9x2-inch glass baking dish. Place bread in large bowl; pour 8 tablespoons melted butter over bread and toss to coat. Add chocolate chips and toss to combine. Transfer mixture to prepared dish.
  • Whisk half and half, 1 cup sugar, eggs, egg yolks, vanilla extract, and salt in large bowl to blend. Pour over bread cubes in dish. Let stand 30 minutes, occasionally pressing bread cubes into custard. (Can be prepared 1 day ahead. Cover and refrigerate.) Drizzle remaining 2 tablespoons melted butter over pudding; sprinkle with brown sugar. Bake bread pudding until puffed, brown, and set in center, about 1 hour. Serve warm with Cinnamon-Rum Sauce.

1 cup packed dark brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°F

  • Whisk in dark rum and vanilla extract.
  • Serve warm over the baked bread pudding.
  • (Cinnamon-Rum Sauce can be prepared 2 days ahead. Cover and refrigerate. Rewarm over low heat, whisking occasionally, before serving.)

6 cups cubed stale bread (about 1 lb)
1 cup chocolate chips
3 ripe bananas, sliced 1/2 thick
2 -2 1/4 cups almond milk or 2 -2 1/4 cups soymilk
3 tablespoons arrowroot or 3 tablespoons tapioca flour
1/2 cup maple syrup
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees and grease a 9 x 5 loaf pan with softened margarine. Place cubed bread in a large bowl.
  • In a small bowl whisk together ½ cup soy milk and the arrowroot powder till no lumps remain. Add 1½ cups soy milk, maple syrup, vanilla, cinnamon and nutmeg and whisk to combine.
  • Pour over cubed bread and stir to coat every piece. Allow to sit for at least 15 minutes for liquid to soak into bread. Depending on what kind of bread you use and how stale it is, add more soy milk (¼ cup at a time) and allow more soaking time till every piece of bread is saturated and there's a little bit of extra liquid. Mixture should look mushy and wet.
  • Fold in chocolate chips and bananas (using hands is the easiest for this), mashing up a little bit of the bananas.
  • Pour mixture into loaf pan, patting down to make an even top.
  • Bake 28-35 minutes till top is puffed, slightly browned and feels firm. Allow to cool slightly before slicing and serving. Also pudding can be scooped with an ice cream scoop when slightly cooled.

1 (1 1/4 lb) challah
3 large eggs
1 1/2 cups milk
3/4 cup half-and-half
3/4 cup banana, mashed
1 cup chocolate chips
1 1/2 cups maple syrup
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 teaspoon fresh nutmeg
2 cups caramel sauce (or see my other recipes for this)

Steps:

  • Cut the loaf onto 3/4" slices,trim off crust.
  • Cut bread to 3/4" cubes, making 8 cups (save additional for another use).
  • Place the brad cubed into large bowl.
  • In a medium bowl, whisk eggs well.
  • Whisk in milk, half-and-half, maple syrup, banana, cinnamon, nutmeg and vanilla extract. Pour mix over bread.
  • Add chocolate chips.
  • With rubber spatula, mix until bread in moistened well.
  • Let set for half hour.
  • Set rack in center of the oven, heating it to 350°F.
  • Lightly coat 8-inch round, nonstick cake pan (deep dish glass pie is ok) with Pam.
  • Scoop the soaked bread mixture into the pan, filling to the top.
  • Let bake until top has browned and puffed and knife in center comes out clean (around 50 minutes).
  • Let cool on rack.
  • When cooled, run knife around edge between pudding and pan.
  • Gently unmold pudding onto plate and then invert it back so brown side faces up.
  • When serving, cut lukewarm or room temperature pudding into 8 wedges.
  • Pour caramel sauce over.

  • Preheat the oven to 250 degrees F. Spread the bread on a baking sheet and bake until crisp, about 30 minutes; let cool. Meanwhile, butter a 9-by-13-inch baking dish; set aside.

I created this recipe as a combination of two other recipes as a response from a sermon my pastor preached where he mentioned eating this in a restaurant. I couldn't find one online and tried this. It's not a quick one to make but its not too difficult.

3/4 cup butter
4 ounces cream cheese, softened
1 1/2 cups sugar
3 eggs (2 whole eggs plus one egg white)
1/2 teaspoon vanilla extract
1 1/2 cups flour
1/8 cup milk

6 eggs
3 cups milk
1 cup sugar

Steps:

  • First, make the pound cake.
  • Preheat the oven to 325 degrees. Grease and flour a 9x13 or 2 loaf-sized metal pans.
  • Combine the softened butter and cream cheese in a mixing bowl. Beat with mixer until blended well.
  • Add the sugar and continue to beat until smooth.
  • Add the eggs beating with each additional egg.
  • Add vanilla.
  • Add the flour alternating with milk (start and end with flour).

1 loaf day-old challah or Italian bread, 16-18 oz. per loaf
2 bananas large
3 large eggs
2 1/2 cups half and half
1/4 cup brown sugar firmly packed
1/4 cup granulated sugar

1 1/2 teaspoons vanilla extract
3/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/2 cup chocolate chips
powdered sugar optional

Steps:

  • Preheat the oven to 350°F.
  • Spray a 9-inch square baking dish liberally with nonstick cooking spray. Set aside.
  • Cut the bread into 1-inch cubes. Slice one of the bananas into 1/4-inch thick coins and set aside.
  • In a large mixing bowl, thoroughly mash the remaining unsliced banana. 3 cup(s) bread cubes (about 4 slices)
1/4 cup(s) butter
1 tablespoon(s) lemon juice
3/4 cup(s) semi sweet chocolate mini chips

1/2 teaspoon(s) vanilla or almond extract

Steps:

  • Spread pie filling in shallow 1 1/2 quart micro proof tube pan. Sprinkle bread crumbs evenly over pie filling. Microwave butter in micro proof cup or bowl on high (full power) for 45-60 seconds or until melted; drizzle evenly over bread. Sprinkle with lemon juice; spread mini chips evenly over top.

5 tablespoons unsalted butter, room temperature
1 pint strawberry
1 cup sugar
2 tablespoons sugar
1/3 cup blanched slivered almond
1/3 cup mini chocolate chip
1 quart half-and-half or 1 quart light cream
4 whole eggs
5 egg yolks
1 tablespoon vanilla

Steps:

  • Heat oven to 350 degrees with rack in the middle of oven. Lightly butter one side of all the bread with 4T of softened butter. Set the bread, buttered side up, on a large baking sheet and bake for 15 minutes or until lightly toasted.
  • Meanwhile, hull and thickly slice strawberries. Put them in a bowl and sprinkle with 2 T sugar. Toss and set aside.
  • When bread is toasted, reduce oven temperature to 325 and set a large roasting pan half filled with water on the middle rack to act like a water bath. Trim the crusts off the bread and slice diagonally in half to form triangles.
  • Use the remaining 1 T butter to grease a 9x12 inch baking dish. Line the sides of the dish with pieces of bread, points up. Line the bottom of the dish with more bread. Stand the remaining bread, points up, wedged between the bottom slices. (Don't worry if there are some spaces in between the slices or if the pieces standing up are a bit leaned over).
  • Scatter almonds and chocolate chips over the bread and between the slices. Lift the strawberries with a slotted spoon, leaving the juices behind, scatter them around the dish.
  • In a large saucepan heat the half and half and the remaining 1 Cup of sugar over moderate heat, stirring to dissolve the sugar, until the mixture is hot but not boiling.
  • In a medium bowl, beat the whole eggs and egg yolks to blend. Whisk in vanilla. Remove the hot half and half from heat and immediately whisk into the eggs. Pour custard through a sieve into the baking dish. Set the dish in the rasting pan and bake for 35-40 minutes or until custard is set.
  • Remove from water bath and serve warm, room temp or chilled.

1 loaf rhodes frozen bread dough, baked and cooled
4 eggs
1 1/2 cups half-and-half
2/3 cup sugar
3/4 cup canned pumpkin
1 teaspoon vanilla extract
1/8 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1/3 cup milk chocolate chips
3 tablespoons brown sugar
whipped cream, for garnish

Steps:

  • Remove crusts from baked bread and cut into cubes.
  • In a large bowl, combine eggs, half and half, sugar, pumpkin, vanilla, salt and spices. Mix well. Add the bread cubes and chocolate chips and toss gently.
  • Pour into a sprayed 8-inch square baking pan. Let sit for 20-30 minutes.
  • Sprinkle top with brown sugar and bake at 350°F for 40-45 minutes. Serve warm with a dollop of whipped cream.

PLEASE DO NOT MAKE THIS UNTIL I CAN FIND THE ORIGINAL RECIPE I USED, AND MAKE CORRECTIONS - THANKS IN ADVANCE!!** I had the MOST decadent bread pudding dessert at a restaurant here in downtown Providence. The bread pudding was made using Portuguese Sweet Bread and was absolutely AMAZING. This is my attempt to recreate this fabulous dessert for my self at home!

3 1/2 cups whole milk
1 cup sugar
1 vanilla bean, split lengthwise
7 large eggs
5 large egg yolks
2 1/2 cups heavy cream
6 cups portuguese sweet bread, cut into 1 inch cubes
3/4 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350, and butter a 13x9 baking dish.
  • Whisk milk, heavy cream and sugar in a saucepan over medium heat.
  • Meanwhile scrape the seeds from the vanilla bean into milk mixture and add the pods.
  • Heat milk/cream mixture to just steaming, but not boiling!
  • Whisk eggs and yolks in a large bowl, and gradually add 2 cups of hot milk mixture to the eggs to temper.
  • Pour tempered egg mixture into the saucepan with the hot milk.
  • Strain mixture to remove any lumps and the vanilla pods.
  • Spread bread cubes in prepared dish and sprinkle with the chocolate chips.
  • Slowly pour custard over bread, being sure to saturate all of the bread. (If you can, it's nice to let it sit and soak evenly for 1/2 or so).
  • Bake in the center of the oven for about 1 hour or until a small knife inserted in the center of the pudding comes out clean.

7 cups cubed day old French bread (small cubes)
1 1/2 cups light brown sugar
1 cup shredded coconut
4 large eggs
3 1/2 cups milk
1 tablespoon vanilla extract
1 1/4 cups semi-sweet chocolate chips
1 cup chopped pecans

Steps:

  • Preheat oven to 300°F.
  • Place cubed bread in a well buttered 9x13 baking pan.
  • In large bowl combine all remaining ingredients until well mixed.
  • Pour liquid mixture over bread making sure all of bread is submerged.
  • Let sit for approximately 1 hour.
  • Place in oven and bake for approximately 1 1/2 hours.
  • Remove from oven and let cool.

- one large loaf french bread, about 1 to 1 1/2 pounds, cut into cubes.
- 1 cup sugar
- 2 cups milk
- 1 1/2 cups heavy cream
- four eggs, slightly beaten
- 2 tablespoons vanilla extract or one vanilla bean, scraped
- 2 tablespoons ground cinnamon
- 1 cup pecans
- 1 cup semi sweet chocolate chips
WHISKEY CREAM:
- 1 cup heavy cream
- 2 teaspoons vanilla extract
- 3 tablespoons powdered sugar
- 2 to 4 tablespoons bourbon

Steps:

  • preheat the oven to 350°. Butter or spray an 11 x 7" glass baking dish.
  • Place the bread cubes in a large mixing bowl.
  • In another bowl, mix the sugar, milk, cream, eggs, vanilla, cinnamon, pecans and chocolate chips. Whisk well.
  • Pour the egg mixture over the bread and let stand until well absorbed. Transfer the mixture to the prepared baking dish. Bake for 35 to 40 minutes, until a toothpick inserted into a bread cube comes out almost clean.
  • For the whiskey cream, mix all ingredients in a bowl. With electric mixer, beat the mixture for about 1 to 2 minutes until light and fluffy. Serve with a warm bread pudding. Serves 6 to 8.

1 (16 ounce) cinnamon-raisin bread
3/4 cup semisweet chocolate morsel
2 cups half-and-half
4 eggs
1/2 cup sugar
1 teaspoon vanilla extract
vanilla ice cream (optional)

Steps:

  • Preheat oven to 325 degrees.
  • Coat 8 inch square baking pan with cooking spray.
  • Diagonally cut bread slices in half to make triangles.
  • Arrange 1/3 of the bread in bottom of pan slightly overlapping.
  • Sprinkle with 1/4 cups semi sweet morsels.
  • Repeat layers with remaining bread and semi sweet morsels, ending with semi sweet morsels.
  • Whisk half and half with eggs, sugar and vanilla extract.
  • Evenly pour over bread.
  • cover with aluminun foil.
  • Let sit for 10 minutes.
  • Bake for 30 minutes.
  • Remove foil.
  • Bake for 25 minutes or golden brown.
  • Let stand 15 minutes before cutting.
  • Serve with vanilla ice cream.
