Cheesecake Caramel Toffee Chocolate Chip Cookie Bars image

This recipe combines my love of cookies with my love of cheesecake. Plus, it has some toffee bits and caramel bits thrown in for my pleasure good measure. If you're not familiar with caramel bits, they can be found right in the chocolate chip section in your supermarket. They are made by Kraft. They come in an eleven-ounce bag and cost around three dollars. They are super adorable (well, as adorable as little balls of caramel can be). They are just like Kraft wrapped caramel candies, but in little ball form - perfect for baking.

Number Of Ingredients 15

1 cup unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
2 teaspoons vanilla extract
3/4 teaspoon salt
1 egg
1 teaspoon baking soda
2 cups all-purpose flour
2/3 cup chocolate chips (mine were mini chips)
1/3 cup caramel, bits
1/3 cup toffee pieces
8 ounces cream cheese, room temperature
1/2 cup sugar
1 egg
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees.
  • Prep a 9 x 13 pan by lining it with parchment paper. Set aside.
  • Cream together the butter, sugars, salt and vanilla. Beat in the egg, then the baking soda and flour.
  • Stir in the chocolate chips, caramel bits and toffee pieces.
  • Divide mixture in half. Spread half of the dough evenly into the prepared pan. I use my fingers to do this. Set aside.
  • In a medium bowl, cream together the cream cheese and white sugar until fully blended. Beat in the egg and vanilla. Mix until completely smooth.
  • Pour and spread cheesecake layer over the pressed cookie dough layer.
  • Using your hands, press pieces of the remaining dough into flat discs. Lay on top of the cheesecake layer. You don't have to have the entire cheesecake layer totally covered. In fact, leaving a bit of the cheesecake layer peeking through in spots looks good once the bars bake and cool.
  • Bake for 20 - 30 minutes or until the bars are cooked through and top is lightly brown.
  • Allow to cool completely before removing from pan by way of the parchment paper.
  • Once cooled and removed from pan, cut into twelve equal bars.
  • Store in refrigerator.
  • NOTE: If you use the caramel bits in this recipe, allow the bars to come almost to room temperature (after refrigerating) prior to serving. The caramel bits harden up a bit in the fridge.

1 (18 1/4 ounce) package butter recipe cake mix or 1 (18 1/4 ounce) package yellow cake mix with pudding
1/3 cup vegetable oil
2 large eggs, beaten
1 (12 ounce) package semi-sweet chocolate chips
1 cup white vanilla chip
3 (1 1/2 ounce) chocolate-covered english toffee bars, chopped into pieces
1/2 cup margarine or 1/2 cup butter
32 vanilla caramels, unwrapped
1 (14 ounce) can sweetened condensed milk

Steps:

  • In a mixing bowl, add the cake mix, oil, and eggs; stir to combine.
  • Add in the chocolate chips, vanilla chips, and candy bar pieces (mixture will be thick).
  • Press half the mixture into a greased 13x9 inch baking dish.
  • Bake at 350° for 10 minutes.
  • In a saucepan, add the margarine, caramels, and condensed milk.
  • Cook over med-low heat until the caramels melt and mixture is smooth, stir frequently.
  • Pour caramel mixture over baked crust; spread evenly.
  • Crumble remaining cake mix mixture over the caramel layer.
  • Place back in the oven; bake 25-30 minutes or until the top is set and edges are deep golden brown.
  • Cool for 20 minutes.
  • Run a knife around sides of pan to loosen bars.
  • Cool 40 minutes.
  • Refrigerate 1 hour.
  • Cut into bars.
  • Store in refrigerator.

Shortbread layer:
3/4 cup very cold unsalted butter (I cut it in sugar cube-size cubes and throw it in the freezer for at least 10 minutes while preparing other ingredients)
3/4 cup packed brown sugar (I prefer Demerara)
1-1/2 cups all-purpose flour
Pinch of salt
Caramel filling:
1 can sweetened condensed milk
1/4 cup unsalted butter
Topping:
1 300g package Chipits milk chocolate chips
1 225g package Chipits Skor or Heath toffee bits

Steps:

  • Preheat oven to 350F. Line a heavy 9 X 13 baking pan with parchment paper. Leave extra at ends to lift out squares when baked. BASE: Pulse sugar, flour and salt in food processor. Add 3/4 cup cold butter and pulse until butter is in small bits but not completely blended - as you would with pastry. Press into prepared pan. Bake at 350F for 12-15 minutes, or until evenly golden. Cool pan on wire rack while preparing filling. FILLING: Melt 1/4 cup butter in heavy saucepan over medium heat. Add condensed milk and cook, stirring constantly, for 5 to 10 minutes, or until thickened, turning golden and starting to have a drier texture (like homemade glue or sticky oatmeal). Spread over baked base. Return pan to oven and bake 8 to 10 minutes longer, or until evenly golden and starting to bubble. TOPPING: Melt milk chocolate over double boiler or in microwave. With knife or spatula and a light touch (to avoid mixing the layers), spread chocolate evenly over filling. Immediately sprinkle Skor bits evenly on top of chocolate layer, while it's still hot, pressing gently but firmly into chocolate. Cool completely before removing from pan. To remove from pan, loosen edges with knife or spatula, and lift out by ends of paper. Cut with sharp knife on board. Makes about 32 bars. Store at room temperature. They freeze beautifully. 1/4 cup vegetable oil
1 cup strong coffee, divided
1 (10 ounce) bag chocolate chips, Nestle Swirled Milk Chocolate-Caramel chips
2 large eggs
1/4 cup butter
1 (10 ounce) bag chocolate-covered caramel candies, unwrapped (such as Riesen)
1 (14 ounce) can sweetened condensed milk
1 cup pecans, chopped and divided
4 chocolate-covered english toffee bars, crushed (such as Skor or Heath)

Steps:

  • Preheat oven to 350°F.
  • Grease a 9 x 13 pan.
  • Beat together the cake mix, oil, ½ cup coffee and eggs.
  • Add Swirled Chocolate-Caramel chips in the mix with a wooden spoon.
  • Spoon approximately ¾ of the mixture into the bottom of prepared pan. Press with spatula to spread it to cover the bottom.
  • Bake this layer for 10 minutes.
  • In a double boiler or saucepan on low heat, warm the butter, chocolate covered caramels, ½ cup coffee, and condensed milk until all items are blended together and smooth. Continually swirl with a wooden spoon to prevent burning.
  • Pour the filling over the partially baked crust.
  • Sprinkle with 1/2 cup pecans.
  • Spoon the remaining ¼ batter mix over the pecans.
  • Finish by sprinkling with chopped toffee bars and remaining 1/2 cup pecans.
  • Bake an additional 30 minutes.
  • Allow the pan to cool completely and cut into square bars.

1 c pecans, chopped
1 c caramel topping
1 c chocolate toffee pieces

Steps:

  • 1. Heat the oven to 375 degrees.
  • 2. Press cookie dough into a 9" x 13" baking pan sprayed lightly with cooking oil.
  • 3. Bake for 25-30 minutes. Remove pan from oven.
  • 4. Pour caramel topping over cookies.
  • 5. Sprinkle with pecan and toffee pieces. Refrigerate until set.
